    This beloved boutique hotel in the center of Tel Aviv is named after Norman Lourie, the South African-born renaissance man who became not only a “one-man film industry” in Israel, according to a 1948 issue of Variety, but also the nation’s first luxury hotelier. It comes courtesy of Lourie’s son, who bought two adjacent buildings off King Albert Square—both designed in the 1920s Eclectic style—and had them painstakingly transformed into a modern urban retreat. Guests of the hotel can look forward to a rooftop infinity pool, a Japanese tapas restaurant with gorgeous views, a lengthy menu of unique excursions, and, of course, the Norman Series—a monthly event at the Library Bar, during which you can catch various leaders (think diplomats, economists, artists, and scientists) in conversation. Rooms here are equally singular; no two are alike, though all feature Frette linens, beautiful bouquets, and homemade treats at turndown.

    Charleston is a relatively small city to sport a food court, and Workshop’s out-of-the-way location on the Peninsula’s Neck underscores that. Situated in a Silicon Valley-esque complex of start-up office spaces, you’ll need to drive to get there, and once at the modern, industrial food hall, you’ll be faced with some tough decisions. The rotating vendors have included Juan Luis, a Tex-Mex spin from BBQ master John Lewis, and seasonal booths where the city’s up-and-coming chefs test out their latest concepts, from Japanese sliders to shareable Indian small plates. Although the vendors change regularly, there’s always a coffee shop, a craft pizza or burger stand, and a variety of ethnic options, making Workshop a must on any dining tour of Charleston’s latest and greatest. It’s also directly adjacent to Edmund’s Oast Brewing Co., a popular hangout and generally regarded among the city’s best breweries.

The single sweeping deal (reputed to cost $300 million) included the exquisite Four Seasons Resort, overlooking a marine reserve. The resort’s dining experience par excellence is Nobu, where celebrity chef Nobuyuki Matsuhisa presides over the perfect marriage of Japanese dishes and Peruvian ingredients. Kick things off with crispy Brussels sprouts or scallops with jalapeño salsa, then move on to sushi, hand rolls, or Wagyu beef. Save room for the Bento Box dessert with green tea ice cream and chocolate flourless cake. Or go old-school, if it’s on the menu, and order the mochi pound cake backed by yuzu-cherry jelly and peanut butter ice cream.

    Named for the Japanese word for enlightenment, this boutique property marries classic Cycladic architecture (cube-shaped structures, whitewashed stone walls, arched entryways) with the clean lines of locally made furnishings in naked wood. None of the 25 rooms and 10 suites are the same, but most have private outdoor whirlpools or plunge pools, plus plush beds that make it impossible to leave. Nearly all of the public spaces, however, offer stunning views over Mykonos (about 1.5 miles away) and the bay, and make striking use of night-lighting, especially at the pool, which is built into the natural rock face. A grottolike spa features two treatment rooms, a futuristic-looking whirlpool area, and a hammam for stylish pampering sessions. The hotel offers complimentary transportation to Mykonos, but with its inviting Bar & Sunset Lounge and a restaurant that is garnering awards and accolades, you may decide to stay put for the duration of your vacation.

    Following a powerful earthquake in February 2011, the Christchurch Cathedral was severely damaged, and while there is an ongoing ideological and economic debate over whether or not the Gothic-style church can, or should be, repaired, the Anglican parishioners of New Zealand‘s second-largest city can now worship in this fascinating edifice made of, among other things, 96 giant cardboard tubes. Designed by Shigeru Ban, a Japanese architect who specializes in building temporary structures following natural disasters, the Cardboard Cathedral (formerly called Christchurch’s Transitional Cathedral), was erected in less than a year. Its excellent acoustics are also regularly utilized for concerts and events.

    Ideally situated on the cusp between major financial, retail, and historic districts is the Westin Chosun Seoul. Built during the Japanese occupation of Korea, the hotel survived through World War II and is the oldest in the country. Originally the Chosun Hotel, it was designed by German architectural firm Goetheland. Constructed in 1914, the European-style building was unique among its distinctly Asian counterparts. The Chosun was known for opulence and imported luxury goods from Europe and North America: a crystal chandelier from Tiffany’s in New York, silver dining utensils from Germany, and linens from Ireland. The hotel was also the first in Korea to build an elevator, host a ballroom dance, and serve ice cream. Most of the original building was demolished in 1970, and the modern hotel was rebuilt in its stead. Fortunately, the view hasn’t changed in a century. The hotel overlooks the picturesque Hwangudan Temple (“Temple of Heaven”).

    When Bouillon Bilk first opened in 2011, Montréal’s restaurant critics were intrigued. The chef, François Nadon, had worked at several of the city’s top restaurants but was largely unknown, and the restaurant was located on an undistinguished stretch of boulevard St-Laurent. But it soon became both a critical and popular favorite. The contemporary, minimal space is decidedly unstuffy compared with many of Montréal’s leading restaurants. Similarly, the menu may be gourmet but it’s also daring, with ingredients and preparations from Asia complementing French dishes and techniques. You can start with Japanese yellowtail, move on to a pasta dish, and end with a selection of Québecois cheeses, if you choose. There are also fresh oysters on the menu at both lunch and dinner.

The sleek, Instagram-friendly, stand-and-eat shop is in the trendy Nakameguro area along the Meguro River. Diners select a cut of marbled beef, ranging in price from 2,000 to 20,000 yen ($19–$190), which is then breaded, deep-fried, and served as a sandwich. Truffle fries and salads round out the menu. Drinks include an impressive selection of craft beers, wine, and champagne.

    In an area rife with traditional, minimalist ryokans, the Four Seasons Kyoto is a spectacle of grandeur. The opulence is subtle, however, camouflaged by clean, Zen-like style. At the hotel’s heart is a beautiful, 800-year-old pond garden, which features a picturesque teahouse surrounded by cherry, maple, and willow trees. Inside, luxurious details abound, from the seasonal floral arrangements, to the iPads and in-mirror TVs in the guest rooms, to the plush cabanas and atmospheric lighting at the underground pool. Though unfortunately not accessible to the public, the ruins of a once-massive Shinto shrine built by the Japanese during their World War II occupation of Singapore are hidden in the overgrown, off-trail jungle near the northwestern corner of the reservoir.     Night markets are a quintessential Taiwan experience. Young couples, families, retirees, and swarms of teenagers descend upon these markets to graze, gossip, flirt, play, and graze some more. Lately, the ones in Taipei have been over-run by camera-toting tourists. For a real local experience, head to the charming town of Tainan. Generally laid-back and filled with colonial relics left behind by the Dutch and Japanese, Tainan also has one of the liveliest--and most local--night markets I’ve been to in recent years. Plunge into the food stall section and try specialties like oyster omelets, hand-made mochi filled with peanut or black sesame, and sausages made with sticky rice. Then head over to the cacophonous games section and watch punters try their luck for an enormous stuffed animal. (The kiddie ping-pong version of pachinko is particularly amusing/perturbing.) Had enough? Push you way back through the crowds and if you’re in luck, you’ll find the vendor selling the most exquisite pink guava mixed with sour plum powder.

    One of Japan‘s most talented chefs, Yoshihiro Narisawa presents Japanese ingredients in a style he calls “innovative Satoyama cuisine,” which highlights the country’s natural bounty. Narisawa works directly with purveyors to get the freshest seafood and produce. Bread is cooked on the table, there is soup made from soil (yes, literally dirt, along with burdock roots), and a forest-inspired dish that has a live audio feed from a forest in Japan. The exquisite meal is not gimmicky and involves a dizzying array of ingredients, and the wine-pairing option includes some very interesting, untraditional sakes, a great education in the spirit. Knowledgeable staff explain the provenance of each dish—it’s like an edible tour through Japan.
