    Chile en nogada is a poblano chile pepper, stuffed with peccadillo (shredded meat, aromatic diced dried fruit and spices), topped with a walnut-cream sauce and pomegranate seeds. This dish from Puebla is not often found on menus of Mexican restaurants in the U.S. It’s not even that common south of the border, except during the August-September season surrounding Mexican Independence Day. If you’re in downtown Tucson, however, you can try it at Penca. In a repurposed space with exposed brick and hip cocktails, this restaurant is also a worthy destination for brunch or late afternoon tacos. Choose from carnitas, fish, lengua, cabeza, nopales, carne asada, and more. The corn-tortillas are handmade right after you place your order. (The tortillas alone are almost worth the trip.) Mexico City is the inspiration. The food is fresh, and the scene is full of optimism: downtown Tucson is reinventing itself with a new streetcar for a live-work-play vibe.     The Westin brand’s first foray into South America was, at least when it opened in 2011, the tallest building in all of Peru. That distinction has since been taken over by the Edificio Banco Continental (BBVA) nearby, but the glass-and-steel tower designed by Peruvian-born, Miami-based architect Bernardo Fort-Brescia stands over one of the busiest intersections in the city, and is still one of Lima’s most recognizable landmarks. While it was designed primarily to fit the needs of the growing number of high-end business travelers (the largest convention center in the city is attached to the hotel), the high-profile team, including interior designer Tony Chi, added on artfully modern touches. The striking interiors incorporate pre-Colombian motifs and gold, silver, and bronze finishes. The hotel is a hub of activity, with a full-service spa and high-end shopping, plus a lobby bar and lounges that serve as impromptu meeting spaces.

    Restaurateur Brooks Reitz built his name with this chicken-and-oyster joint that feels old-school despite its carefully crafted ambiance. On a first visit, it’s sinful not to order the perfectly salted, crispy/juicy fried chicken amalgam shellacked with a glaze of Old Bay and cayenne suspended in melted lard. That necessitates a second visit to gorge on the poached char-grilled lobster and sausage, or the Leon’s Fish Fry, a platter of shrimp, oysters and catfish. Leon’s was the first to open way-Upper King, now the restaurant hotbed, and it’s held onto its cool status thanks to its thoughtful buildout in a restored auto body shop, retaining the exposed rafters and a rollup garage door that opens to a patio out front.

    The beach may be the magnet that draws crowds to Trancoso but its the Quadrado that is the heart of the town. The town square sits atop a hilltop offering stunning views of the mangrove forest and sea below. The 1,050-feet-long green park is anchored by the town’s iconic white church and bordered by 50 or so Crayola-colored old fisherman houses. During the day most of the homes stay shuttered due to the heat. But by 5pm, particularly during the peak summer season, they open their doors to reveal chic boutiques and art galleries, restaurants, and pousadas like Uxua and El Gordo. At sunset wild horses graze in the square sometimes interrupt the local kids’ soccer game. The square is filled with crowds after sunset, and artists and artisans come out to sells their goods while musicians come to play music and capoiera dancers come entertain passersby.

    Known for being a bit boisterous and rowdy, Little India has a distinct personality from the rest of Singapore. It can start to feel a few degrees hotter than the rest of the city as you dodge shoppers, temple goers, and trinket sellers on Serangoon Road. The crowds and pungent smell of flowers, curries, and frying prata excite and assault the senses. The sidewalks are taken up by racks of DVDs, cases filled with phone cards, carts selling garlands of fresh flowers, and men working at sewing machines. It’s a uniquely South Asian crush of color and hum of activity. If you head there on a Sunday—the day most Indian and Bangladeshi construction workers have off—the streets might be even more crowded than usual.

    Travelers should visit Taronga Zoo as much for its harbor views as for the 4,000 resident animals (who get to see them all day long). Ferry 15 minutes from Circular Quay and take an optional Sky Safari cable car, included in the ticket price, and you’re in an exotic land of giraffes, elephants, and bongos as well as native echidnas, wombats, and Tasmanian devils. Wildlife tours, zookeeper talks (including impressive bird shows), and special events such as the Twilight at Taronga summer concert series are on the calendar, and a tented camp accommodates overnight guests who help feed select animals before a sunset dinner set against the Sydney Opera House and Harbour Bridge. Tent cabins feature decks that lure campers out of bed for sunrise.

    A short drive from the picturesque fishing village of Cadaques and Dalí’s House Museum in Port Lligat, Cap de Creus is one of my favorite places in Spain when it comes to natural beauty. Sweeping views of the ocean from atop the cliffs are even better after a lunch of fresh seafood paella, the catch of the day-baked, grilled or fried, or the restaurant’s surprisingly tasty Indian eats. Burn off lunch with a hike down the steep incline to the waterline, or just cop a squat and settle in to write, sketch or meditate.

    “Buongiorno, Signor Farley,” said Umberto, the head waiter at Hotel Missoni’s Cucina restaurant. By the beginning of the third day of my stay, the staff knew my name. And what I drank with breakfast. An espresso doppio was delivered to my table a minute later. “Prego,” the server said.

    You’d think I was in Italy. In fact, I was 2,500 miles southeast of the country’s heel, in the capital of diminutive, oil-rich Kuwait. Opened in spring 2011, Hotel Missoni, owned by the eponymous fashion and home furnishings house, is one of many designer-conceived hotels that have popped up around the globe.

    I have to confess: I have a complicated relationship with fashion. Maybe it’s related to my childhood. (Isn’t everything?) In the seventh grade, I wore a T-shirt to school that read, “My Son Is in the Navy.” My trend-conscious peers, who clearly had no sense of irony, laughed at me until the final bell rang. When I wore bowling shoes to high school, I was similarly mocked. How would I do in a hotel designed by a couturier?

    I was picked up at the airport in Kuwait City in a Maserati (a complimentary perk for all Missoni guests). Not a bad start.

    The property (like its sister hotel in Edinburgh, which opened in June 2009) is the brainchild of the Missoni family matriarch, Rosita. The hotel’s 169 rooms were designed to feel like her home. Compact Hans Wegner wishbone chairs and tuliplike Eero Saarinen–designed tables rest on hardwood floors, and everything—espresso cups, towels, even the swimming pool—displays the colorful striped patterns Missoni is known for. Generous helpings of turquoise, gold, and beige are splashed throughout the hotel to evoke the bayfront landscape outside, and every room looks out on the ever-expanding Kuwait City skyline. Like many things Italian, the hotel is simple and comfortable.

    The Missoni team, which is fine-tuning its approach before opening hotels in larger markets, learns fast. There are no design hotel clichés here: no faucets with the function designed out of them, no overly formal staff. “Are those Camper shoes?” a waiter asked me one day at breakfast. I nodded. “Like bowling shoes,” he said. “Very cool.” Here, it seemed, fashion and I got along great.

    Though Barcelona is hardly the epicenter of paella (that would be to the south, in Valencia), this hands-on culinary workshop/dining experience offers a fine introduction to what’s arguably Spain’s most famous dish. Set in an appealingly hip Raval-area space featuring soaring ceilings, exposed brick walls, and industrial lighting, the class starts with a welcome glass of cava along with a brief overview of paella from founder Alex Betolaz and chef Alex Villar. Don an apron at your cooking station, but don’t expect anything too labor-intensive; ingredients are, for the most part, already prepared, though you will do a bit of chopping, pouring, and stirring. (You can book your paella preferences ahead of time, and vegetarian options are available.) Then you’ll gather around a long wood table and sample various Catalan specialties along with your paella (and there’s usually plenty of sharing going on). Choose from three different paella-making experiences, starting at €50/per person for two courses and going up to €85 for multiple courses plus unlimited wine.

    Offering a bit of the South Pacific in the Caribbean, the Van der Valk Kontiki Beach Resort features thatched-roof cottages set amid gardens and green, saltwater pools. The deep, wood-paneled rooms have direct paths to the pools as well as the Cabana and Mood Beach clubs. For an extra $20 per night, you can even book a full-service room, which includes a lounging bed at the beach (reserve it a day in advance to ensure you get a spot), a minibar with drinks and snacks, and nightly turndown service. The beach clubs serve the standard international fare and host weekly theme nights like a Friday fresh fish market with live music. A range of additional dining and nightlife options exists along Mambo Beach Boulevard, adjacent to the resort, and the aquarium is a short walk away. While Kontiki does not have a full-service spa, guests can book massages and manicures right on the beach.

    In the 1920s and 1930s, this heritage-listed property on tree-lined St. Kilda Road was an automobile showroom that sold the ultimate status symbol—the Rolls-Royce. Now it peddles another sort of luxury good: the boutique hotel stay. In the lobby, the Royce Hotel honors its Art Deco past with an arched ceiling in imitation hammered gold and lovingly restored wrought-iron chandeliers, but a zebra rug and curved mirrored walls anchor the design in the present. Some of the property’s 100 rooms and suites feature two levels and soaring bay windows, while others have kitchenettes, spa baths, and balconies with views of the city skyline, but you’ll want to venture out for the contemporary Australian specialties, including grilled steaks prepared from a selection of local grass-fed beef, at the hotel’s chic 100-seat restaurant Dish. Central though it is, there’s no lack of green space nearby: The hotel is situated between the sprawling Royal Botanic Gardens and Fawkner Park, while buzzy South Yarra is just a 15-minute walk away.

    This sprawling 298-room property in Williams, Arizona, is most frequently booked by visitors taking the Grand Canyon Railway to the South Rim, about an hour’s drive north. But it’s also an excellent option for those who don’t necessarily need to stay inside the park—or who simply prefer less rustic accommodations and amenities (like an indoor pool and hot tub). All the rooms here were recently refurbished and are relatively spacious, including bathrooms; even the standard rooms have two double beds, as well as free internet, air-conditioning, and microwaves and mini-fridges. The impressive lobby was designed in keeping with the nearby historic Fray Marcos Hotel and Williams Depot buildings, lending a cozy frontier vibe, and a roaring fire in the large flagstone fireplace greets guests in the winter. There’s a restaurant and pub on the premises, but you’re just steps from Historic Route 66 as it runs through downtown, with plenty of restaurants and bars to choose from.

    Spread out over 45 acres of palm-lined grounds that wind down to Arossim Beach, this luxurious South Goa resort is an ideal base for every kind of traveler. Bon vivants will appreciate the 248 rooms and suites for their high ceilings, marble bathrooms, and views overlooking the pool or adjacent lagoon. Wellness seekers will love the Ayurvedic treatments and yoga and meditation classes. And epicures will delight in on-site cooking lessons that serve as a deep dive into Goan cuisine. For those who’d rather leave their culinary adventures to the experts, the resort offers five restaurants dishing out everything from grilled catch-of-the-day to wood-fired pizzas, plus a few fine-dining takes on classic North Indian and Goan specialties. In late autumn, voyeurs who arrive at the hotel, a popular venue for big fat Indian destination weddings, are rewarded with a parade of hundreds of chic Delhi and Mumbai twentysomethings dressed in their finest attire—definitely something to write home about.
