The official dish of the Azores is cozido das furnas, a Portuguese meat and vegetable concoction made by placing a pot in the ground to be heated by volcanic steam. The chef of Caldeiras e Vulcões leaves the pot untouched for six hours, allowing the ingredients to cook slowly in their own juices.
