The concept of a ‘new Moroccan cuisine’ has only been taken seriously in the motherland over the last couple of years, and only very recently in Fez. Chef Najat Kaanache, who counts former best in world restaurants El Bulli and Noma, among her educational stages opened Nur in September 2016. Designed by Stephen di Renza (creative director at the Jardin Majorelle boutique in Marrakech) it’s an ode to monochromatic design and stunning beautiful plates of food that include innovations like duck confit on herb ‘meringue’, cured shark on Moroccan corn bread, and grass fed beef with chilli adobo and potato hearts, as a bright new chapter in Fez’s culinary evolution. The 7-9 course, tasting menu costs 750 dirhams not incl. drinks.
