    In the heart of El Viejo San Juan, the Plaza Colón (Columbus Plaza) is so much more than a place honoring an important piece of San Juan’s history. Sure, snapping an Instagram photo in front of the bronze statue of Christopher Columbus, credited for the first discovery of the island, is definitely a “must-do.” Find a local and in your best Spanish accent say “Perdón, podría tomar una foto por favor?” Or play it safe and ask another tourist in English (they’re not hard to find!). Either way, stay and hang out. Explore the local artists’ tents (like this one, with rings and bracelets made from brightly colored ceramic beads and recycled aluminum, customized to fit). Pick out unique, inexpensive gifts for loved ones and, of course, something to remember the trip! And don’t ignore the ringing bell of the sorbet vendors selling “coco frio” for $1. Try a scoop of papaya y piña to help cool off in the heat of the Puerto Rican sun.

    Since it was built back in 1976, the CN Tower has topped the must-visit list of most Toronto tourists. Until recently, a visit was pretty standard; hop in elevator, shoot up to the observation deck, and ogle the city from a hawk’s vantage point. While this was certainly fine and enjoyable, the since-developed EdgeWalk experience has ramped up the Tower’s bucket-list potential. Thrill-seekers can now do a hands-free, breezy circumnavigation of the tower’s roof, up at 1,168 feet. And, yes, they do perform sky-high weddings complete with elasticized rings and special attire for the big day.

    Surely one of the most extraordinary imperial relics of Morocco, the Palais Bahia (“the brilliant”) doesn’t disappoint. Built at the start of the 19th century by architect El Mekki for Si Moussa, the then chamberlain of Sultan Hassan I, the palace showcases a wide range of architectural styles hinting at the chamberlain’s playful spirit, especially after his son inherited it and added his own brand of flamboyant glamour to the place. Women’s quarters bedecked with crimson-and-mustard–striped ceilings, a marble-tile courtyard the size of a soccer field, and extensive salons lined by stained-glass windows are just some of the features of the 20-acre space. In 1912, General Lyautey, the governor of French protectorate Morocco, moved in and added creature comforts such as fireplaces and central heating. In so doing, he attracted a number of illustrious guests, among them the writer Edith Wharton. She described the palace this way: “They came, they built the Bahia, and it remains the loveliest and most fantastic of Moroccan palaces. Court within court, garden beyond garden, reception halls, private apartments, slaves’ quarters, sunny prophets’ chambers on the roofs, and baths in vaulted crypts, the labyrinth of passages and rooms stretches away over several acres of ground.” Follow Wharton’s lead and don’t miss it.

    John Rutledge was an active player in early American politics, signing the Constitution and serving as South Carolina’s first governor. But his townhouse on Broad Street, now the John Rutledge Inn, was built before he even attended his first Continental Congress. The house was embellished and expanded over the years, including the addition of elaborate lacelike ironwork that still stops passersby in their tracks. The inn comprises the main building and two carriage houses. In the 1980s, a major renovation prepared it for its new life as an inn, restoring the parquet floors, marble fireplaces, and crown molding to fully honor the property’s past.

    Rooms in the main house evoke the property’s Colonial Era origins, with canopy beds and brass fireplace screens. All rooms have Tempur-Pedic mattresses, property-wide Wi-Fi, and flat-screen TVs help guests remember that they’re still in the 21st century. Around the property, visit the sumptuous ballroom for evening sherry, or stroll the lush, secluded courtyard.

    The bold color palette of this reimagined motel reflects the hues of 14 different desert wildflowers. Nearly every room has a balcony or patio and art installations and photography from local artists can be found throughout the hotel. The young crowd hangs by the pool, which has two hot tubs and a poolside bar. The Saguaro also has two restaurants: El Jefe offers small plates inspired by the street food of Mexico City, while Rocco’s Electric serves Mexican-inspired brunch every day.

    Atenas (whose name means Athens, as in Greece‘s capitol) is actually a quaint agricultural town in the province of Alajuela, about a 45 minute drive west of San Jose. With a population of only 27,000 people, and surrounded by coffee plantations and mountains, this is the absolute perfect place to experience Costa Rica as it truly is. The village has cute shops, some eateries, and stores that will carry any items you may need during your stay. The town square is adorable, and the various restaurants (all very casual) have excellent food based on local fresh catches and fresh-from-the-farm fruits and vegetables. The particular view above is from a lookout point on a private gated property. However, there are three housing developments in the area, and various owners rent out their places for very reasonable rates, and plenty have a view like this. Another fast fact about Atenas: it’s claimed to have one of the best climates in the world according to National Geographic, and you will come to know the phrase ‘El Mejor Clima del Mundo’ because it is proclaimed everywhere - and it’s true.

    The Cayo District is home to many of Belize’s ancient Maya sites, including one of the largest, Xunantunich. Located atop a ridge near the Mopan River and the Guatemala border, Xunantunich’s “El Castillo,” the main pyramid, is certainly the most impressive. Visitors who brave the steep steps to the top are rewarded with unsurpassed views into Guatemala and neighboring areas of Belize. While the climb up can be pretty steep and rough, there are other routes to get down along the backside that make the descent a little easier. It took me multiple visits to finally gather the courage to climb to the top, but I’m grateful I did, as the views were absolutely worth it! Organized tours to Xunantunich often combine with other activities like zip-lining, cave tubing, or even trips to the Belize Zoo. Travelers who wish to explore all of Xunantunich’s six plazas, which contain more than 26 temples and palaces, should plan to book a private tour or visit on their own.

    The Review:
    What started as a humble motel is now one of Boise’s hottest places to stay. At the Modern Hotel & Bar, mid-century furnishings and a rowdy atmosphere make the property a must for anyone who values good design and even better entertainment. Here, 39 courtyard-facing rooms surround a fire pit that serves as a hangout on summer evenings. Inside, bartenders mix classic cocktails with a twist, like the El Mundano with tequila, lemon juice, Cynar, smoked pineapple, and habanero.

    The food is exciting, too. A semifinalist for a James Beard Award, chef Nate Whitley experiments with local ingredients to create novel—and delicious—dishes. Delicata squash comes drizzled with chili sauce and cashew cream, while sockeye salmon arrives swimming in bacon-ginger dashi.

    The beef goes back centuries, and will never be entirely resolved: what are the true origins of pisco, a grape-based, aguardiente distillate that became a national symbol of Chile…and Peru. To end the conflict, the people behind this bar and restaurant invented a new, independent republic dedicated to Pisco that is known as Chipe Libre. Inside a vast Lastarria mansion, this imaginary state unites lands in southern Peru and northern Chile, in obeisance to a sole monarch, pisco. The bar features a good 100 labels and cocktails like “Pisco’s in the Air,” made with lime juice, raspberry, papaya and basil; plus a full range of what are among Santiago’s best traditional sours. Standout food include the crunchy-seafood saltado (marinated and grilled beef strips), with mango, served on a sizzling grill; the joint’s star sandwich, El Presidente, is a solid slice of roast beef, fried egg, and shoestring potatoes. To avoid any sovereignty disputes, Chipe Libre flies its red-and-black, center-starred flag as the republic’s national colors.

    Spain takes its food seriously. After all, it’s the country that gave birth to El Bulli and, as of 2015, has 169 Michelin-starred restaurants (11 in Madrid alone). So it comes as no surprise that a top hotel on a main boulevard in the capital should be home to one of these temples to gastronomy, the two-Michelin-starred Santceloni. But the Hotel Hesperia Madrid doesn’t content itself with just a world-class restaurant. No, this sleek retreat—decorated boldly by some of Spain’s top designers, including Pascua Ortega, Erico Navazo, and Mercedes Gonzalez López-de-Carrizosa—is devoted to the best of contemporary Spanish dining, with a total of three acclaimed restaurants and a sultry scotch bar attracting the most discerning palates in Madrileño society. In between decadent meals—and exploring the ritzy shopping and myriad sights just outside the hotel’s front door—work up an appetite at the open-air gym up on the rooftop, yet another of the Hesperia’s claims to fame.

    The owners of FnB—James Beard Award semifinalist chef Charleen Badman and front-of-house manager Pavle Milic—were early champions of Arizona wine and produce, curating a wine list that includes lots of Grand Canyon State vintages to accompany their locally sourced dishes. They still highlight the state’s great bounty, and Milic even produces his own wine label, Los Milics, which is available in small batches at the restaurant. Badman’s seasonal menu showcases Arizona’s flavor with an imaginative, very veggie-forward lineup. (Don’t worry, meat and seafood are on the menu, too.) The cozy eight-seat bar is the perfect spot to sample FnB’s wine offerings, showcasing a different region every four weeks.

    The museum’s collection and calendar of exhibits is a little more daring than you might imagine, but the permanent installation of James Turrell’s Knight Rise presents visitors with the biggest art jolt of all. The work, open to the public for free, consists of a circular bench beneath a luminous domed ceiling. An elliptical hole cut into the top of the dome contains a glimpse of sky. When observed in this manner, even the clearest desert sky seems to shift and pulse and fill the window with pure exuberant color. Come at dawn or sunset for the best (and often most solitary) viewing.

    The 20 de Noviembre market has a variety of food stalls where you can sample many Oaxacan specialties, but carnivores flock to the one corridor that’s known as “El Pasillo de las Carnes Asadas” (the grilled meats aisle). Follow your nose to find it: smoke and the smell of meat grilling are thick in the air. You can select the raw meat that looks best to you and have it grilled to your specifications as you watch on. Find a spot at one of the long tables with benches and order salsa and guacamole to accompany your feast. Buy some tortillas from one of the passing vendors, and enjoy!

    The great Almohad sultan, Moulay Ismail made Meknes his imperial capital and it is there that he is entombed. Although his mausoleum lies stone’s throw from Place El-Hedim and Bab al-Mansour, it’s not easy to find because it’s not marked. You will have to ask for help. When you enter in the mausoleum, you step inside a small entry room, painted buttercup yellow with a small fountain marking the center of the room. The entry room leads to the first of several interconnected open aired courtyards, each of which is also painted buttercup yellow. Surrounded in all directions by bright yellow walls, it’s hard to believe you’re actually in a mausoleum. The last courtyard fronts the tomb room and unless you’re a Muslim, you cannot enter. But not to be disappointed, the ante room will simply take your breath away. It soars up several stories high with a row of windows at the top that lets the sunlight filter in. Intricately carved plaster and delicately patterned zellij tiles adorn the walls. In the center of the floor is a small fountain collared by the eight pointed star that is classic to Moroccan design. There is perfect symmetry in all the design elements. It’s just a magnificent space!

    This popular Mexican-food mainstay in the heart of San Francisco‘s Mission District is one of two places in the city that claim to have invented the Mission-style burrito (the other is El Faro): a hefty, elephant-leg-size wrap distinguished from other burritos by its size and the inclusion of rice and other ingredients. The restaurant was first opened as a meat market in 1967 by Mexican immigrants Raul and Michaela Duran, who are said to have served their first burrito in 1969 after noticing that local workers needed a substantial yet portable meal. The Mission Burrito was born, containing most of the food groups: protein, vegetables, dairy, and grains. The Durans converted their meat market into a full-time restaurant in 1972. Taqueria la Cumbre offers a full menu of Mexican food, all made fresh. The burritos are made assembly-line style. (Fun fact: When the Durans first came to San Francisco, they hired a high school kid to make flour tortillas before school. The kid, Jorge Santana, would go on to be a popular musician, like his brother Carlos.)
