White walls and a wood floor set the stage for a menu that includes oven-roasted pork fillet, fiery jerk guava chicken served with fluffy dumplings, and vegetarian dishes such as vegetable stews and lentil salads mixed with mango and ginger. The restaurant also has a superlative rum collection, used for an inspired cocktail list that is as fruit-filled as it is potent.

    When it opened in 1889, the Jerome lured New York City socialites and European aristocrats with its mix of rough-and-tumble mountain swagger and “modern” amenities (plumbing and electricity). In December 2012, the 94-room property emerged from a five-month renovation overseen by designer Todd-Avery Lenahan. The original front desk remains, and the tile floors have patterns inspired by Ute Indian weavings. The new lobby bar, the Living Room, serves craft cocktails amid mounted deer heads, mining artifacts, and a framed antique American flag. The rooms and common spaces feel inspired by a Ralph Lauren men’s collection, with lots of plaid, leather, and rich fabrics. Even the elevators are lined with old leather belts.     Salar de Uyuni, located in the Daniel Campos province of Bolivia, looks like it belongs on another planet. Stretching for more than 4,050 square miles—a little smaller than the state of Connecticut—it is the world’s largest salt flat, formed when several prehistoric lakes dried up 25,000 to 10,000 years ago, leaving behind hexagonal patterns of salt on the otherwise featureless surface. When nearby lakes overflow, or the area gets rain, a thin layer of water covers the expanse, transforming it into a massive reflective mirror that makes for jaw-dropping, dreamlike photos.


    The natural wonder has served as a valuable source of salt and lithium for Bolivia, and it has long been a hot spot for tourism in South America. There’s even a hotel built out of salt bricks: the Palacio de Sal. If you’re planning a trip to witness the surreal beauty of the Salar de Uyuni salt flat, here’s what you need to know.



    To see Salar de Uyuni’s breathtaking mirror effort, visit during wet season, from December to April—but be aware that when it gets too rainy, it can be hard to get around and you might not be able to access certain areas. May to November is the dry season, which means temperatures are colder, but the ground is harder and you can drive across the land more easily.



    The ideal month to visit is May, when the seasons transition from wet to dry and you’ll have a good chance of seeing the salt flats both dusty and reflective.



    Salar de Uyuni sits near the point where Bolivia, Argentina, and Chile meet, so tourists tend to come from three different starting places.



    The town of Uyuni in Bolivia is the most popular place to embark on tours of the salt flats. The small town is so close to the flats, you can easily take day trips. If you’re traveling from La Paz to Uyuni, you can take a one-hour flight or an eight-hour overnight bus.



    San Pedro de Atacama in Chile is another well-known starting point for tours of the salt flats, but because it’s about 200 miles away, most tours are three days long.



    If you’re coming from Argentina, look into multi-day tours operating out of Tupiza, Bolivia, a good base less than 60 miles over the Argentinian border.



    Tour operators in the region offer shared or private tours. Shared tours are more affordable, but they don’t offer much flexibility when it comes to your schedule. Also, most shared tours are led by Spanish-speaking guides, while private tours can offer English-speaking ones.



    Many tours of the salt flats also go to other attractions in the area, such as the Polques hot springs, the Atacama Desert, and high-altitude lakes like Laguna Colorada. Look into tours originating in San Pedro de Atacama and Tupiza for itineraries that include these destinations.



    Salar de Uyuni is located nearly 12,000 feet above sea level, so you might experience altitude sickness symptoms such as nausea and headaches and should plan accordingly.



    To enter Bolivia, travelers must have a tourist visa, which costs $160 for U.S. citizens, and a yellow fever vaccination certificate if they are traveling from a country with risk of yellow fever.

    Tucked on the corner of Hopkins Avenue and Monarch Street, White House Tavern occupies one of Aspen’s oldest buildings, a small Carpenter Gothic–style white house that was built in 1883. The offerings here don’t change from when the restaurant opens for lunch at 11 a.m. to when the sky darkens and the cocktails start flowing into the night. The menu is made up mostly of hearty salads (Thai steak and noodle, kale with rotisserie chicken) and tasty sandwiches, including an incredibly crispy chicken sandwich and a flavorful, perfectly cooked prime rib au jus piled high on a homemade roll. The cocktail list is short and tends toward the classics—negroni, margarita, martini—but the wine list is surprisingly ambitious.

Snag a seat at the eight-person sushi bar, or dine on grilled snow-aged beef (that is, steaks aged in a natural yukimuro refrigerator of the white stuff) at the Tavant Grill, then end your evening with tea-infused cocktails at the rooftop bar.

    The people watching is just as entertaining as the artwork at Casa Malca, a mansion once maintained by Colombian drug lord Pablo Escobar but now owned by New York gallerist and art collector Leo Malca. Set on a Caribbean-facing swath of sand next to the Sian Ka’an Biosphere Reserve—and just a short bike ride from Tulum’s beachfront boutiques and restaurants—the hotel features 71 rooms, complete with polished concrete floors, floor-to-ceiling windows overlooking the ocean, and bold artwork from Malca’s personal collection. A black-and-white print inspired by Keith Haring covers the lobby bar, while antique baby dolls adorn the walls in one of the hotel’s three restaurants. The pool and beach areas are more sedate, with cerulean daybeds and colorful hammocks studded like jewels among the leafy palms.

Kurimanzutto’s shows—not to mention the openings—mark the pulse of the Mexico City arts scene.

    While some castle hotels can feel a bit dusty—with all those heavy curtains and canopy beds—the Lough Eske Castle Hotel feels more airy and contemporary than you’d expect from a 150-year-old castle. Located near Donegal Town in the northern part of Ireland, it’s the only five-star hotel in Donegal County. And while the Elizabethan manor house was once at the center of a farm, today it’s fronted by a formal rose garden and surrounded by 43 acres of forest on the banks of Lough Eske, a 900-acre lake.

    The hotel has a glass greenhouse-style spa, an indoor pool with views of the grounds, and a restaurant, Cedars Grill, which serves fresh-from-the-sea oysters and filets of Irish beef. But best of all is the lovely, generous staff: Concierges in particular quickly arrive at a first-name basis with guests as they arrange outings and grant even somewhat-annoying requests. And since all guests do here is spa, stroll, and feast, the only real challenge is deciphering the staff’s thick Northern Irish accents.

    Built in the 17th century, Nymphenburg Palace is one of the largest royal castles in Europe. Planned as a summer residence for the Bavarian monarchy, it was expanded over time and now features additional pavilions and gallery wings, plus a French Baroque façade by Joseph Effner. The palace exterior and expansive, English-style gardens—complete with lakes, geysers, and waterfalls—are the real highlights here, but the interior, with its Baroque, Neoclassical, and Rococo era rooms, is also worth seeing. Be sure to check out the Steinerner Saal (Stone Hall) with its striking ceiling frescoes, the Schönheitengalerie (Gallery of Beauties) with works by court painter Joseph Karl Stieler, and the palace chapel of St. Magdalena. There are also a few interesting museums on site, including ones dedicated to royal coaches, porcelain, and natural history.

The store is located on a high-end shopping street near the lake. While I normally don’t gravitate to “fancy” chocolate boutiques, something about this place beckoned. It is an intimate shop and the friendly staff is happy to explain the types of chocolate that best suit your preferences. Max Chocolatier uses local, 100% natural ingredients, so the chocolate products vary by season: there are spring, summer, fall and winter “collections” with different ingredients and recipes. In addition to basic chocolates (milk, dark, hazelnut, caramel, orange, etc.), there are also more exotic types with ingredients such as pumpkin, chili, and edelweiss providing some international flavor. Beautifully, lushly-packaged boxes of chocolate line the shelves. Clearly these sweet tidbits are lovingly crafted to please all your senses.
