    Maison Collard’s claim to fame is a cookie so hard they have to print a warning on it. Legend has it, during the great siege of 1466, the people of Dinant were starving and had only two things at their disposal: flour and honey. They made these into dough and baked it. Later, they began to stamp patterns into the hard dough, with brassware found in their kitchens. In reality, there is little historical evidence to support the existence of the couque before the 18th century. Throughout the period, couques were decorated with depictions of important historic events. Although the tough dough is no longer kneaded by hand, the cookies are still pressed into hand-carved pear wood moulds. Popular shapes include animals, fruits, and scenes of Dinant. Nowadays, sugar and spices are also frequently added to the mix. Couques sold these days must be labeled with a warning advising people not to bite into the hard cookie. Instead, you are advised to dunk it in a beverage, to soften it, or break off a small piece and suck it. In fact, couques are traditionally given to babies to suck on while they are teething.     Your introduction to Andaz Mayakoba begins with mangroves and a cenote, or at least an architectural tribute to these natural features of the Playa del Carmen landscape. The elegant pillars that support the towering porte cochere mimic the angled roots of the mangrove trees nearby. A tall passageway, lined with dark wood, leads to an open-sided lobby.

    At the center of the lobby, aptly called El Sanctuario, a shallow circular pool reflects the sky through an opening in the ceiling above. The Andaz—which opened on the Mayakoba development in late 2016—has 214 guest rooms and suites, all in low buildings carefully placed on the delicate limestone crust of the peninsula. Some of the buildings surround pretty lagoons and offer easy access to the resort’s restaurants, Casa Amate, the fine-dining option, and Cocina Milagro, which serves three meals a day in a pavilionlike space overlooking the property’s pools.

    A spa, fitness center, shop, and kids’ club are also an easy walk away. The balance of guest rooms are in a separate complex of buildings beside the beach. A clutch of umbrellas and lounge chairs on the white powdery sand before an impossibly blue sea presents a stunning picture. In the beachside portion of the resort, another pool and two casual restaurants, OllaTaco and OllaCeviche, add up to a slightly funkier vibe.

    Guests are transported around the grounds by golf carts and are encouraged to use bikes parked everywhere. Lagoon boats make regular stops between the four resorts at Mayakoba, and guests are encouraged to take a daily cruise of the winding waterways with a naturalist guide. Andaz staff are young, attentive, and warm.

    Colorful street-style murals, depicting animals and fish, splash across the buildings’ exterior walls. Inside the airy guest rooms, artfully tiled sections of floors and walls add fields of color and interest to an otherwise mild, sunny palette. Architect Ronald Zürcher has channeled the extraordinary local beauty—the light and darkness of the region’s beaches and jungles, the vivid pops of color of flowers and birds, the sacred hush of the cenote—and designed a gorgeous and intimate boutique resort.

    Nature may have spent 12 million years creating the rock formation that is the centerpiece of this 1,300-acre Hilton Curio Collection resort in the foothills of the Sonoran Desert, but late-coming humans have done a commendable job of adding the finishing touches. Although the Boulders, with its casita accommodations blending into the landscape, its championship golf courses, and its upscale shops, is as luxurious as any resort in the Scottsdale area, it’s also where guests are most likely to feel they are truly in the desert. An early-morning walk along groomed paths, when the first rays of light are turning the landscape golden, is as likely to produce the sounds of woodpeckers or owls calling from their nests in saguaro cacti as it is the whack of a ball against club or racket.

    The best views of San Francisco are from the top of Twin Peaks, the two hills that are located in the geographic center of the city. Only from Twin Peaks can you get a 360-degree view of the entire city. If you are lucky, on a clear day you can see all four Bay Area bridges—from the Golden Gate to the Richmond-San Rafael and the Bay Bridge all the way south to the San Mateo. Standing on North Peak, you can look down the tree line of Market all the way to the Ferry Building. All the city neighborhoods, scattered over up and down the hills, from Mission to Bernal Heights to Russian Hill to the Presidio are in your vista. If it’s clear, you’ll be able to see the Marin Headlands, Alcatraz, Sausalito, and even Mt. Tam. From the North Peak, you can walk over to the South Peak and take in the city views from the Sunset District down to San Francisco International Airport. Tips: 1. Bring a jacket with you. Even on a warm summer’s day, it can be chilly at Twin Peaks. 2. Wear sturdy shoes, especially if you want to walk up to the Peaks and or around them. 3. Bring binoculars, if you have them. There are telescopes that you can pay to use if you don’t have binoculars.

    I found a new food obsession when I visited Taiwan, Peking duck. This traditional Chinese dish isn’t just served in Taipei–it’s been elevated to a form of culinary art. While you can find several great purveyors of this delicacy in Taipei, my favorite is the Celestial Restaurant in Zhongshan District. The adventure starts by ordering how you want to duck presented. Your options are duck served in one, two or three ways. Option one is the classic serving of the tasty duck, option two involves mixing the meat with scallions and soy sauce and serving it over rice and the third way is making a soup from the stock. Keep in mind, it’s not one or the other, if you order it three ways, you get all three ways. The classic is of course the best and more than enough food for several people. The duck is first presented to the table in all of its roasted goodness before the skin is served to the salivating diners. The proper procedure is to wrap pieces of the skin along with scallions and hoisin sauce in a small crepe. This simple layering of flavors quickly became one of my favorite meals I’ve ever had. After a few quality moments with the skin, the duck meat is then served, diners consuming it again with the scallions and crepes. I feel cheated that this was the first time I ever had an expertly prepared Peking Duck but it is without exaggeration when I say I would fly back to Taipei just for the chance to enjoy this remarkable meal a second time.

    Hit Seven Mile Beach, a beautiful and—as the name would suggest—long stretch of shoreline to see why it’s one of the Cayman Islands’ most fabled features. Facing out to sea, you’d be forgiven for thinking you were beholding a life-size Rothko installation, with bands of the palest aqua, the richest cobalt and every gradation of blue-green in between. Also keep an eye out for the schools of fish that sprint along the water parallel to the shore.

    A hotel with the words “gallery” and “art” in its name would be remiss not to include at least a nod to the art world in its decor (though more than a few establishments have been known to throw up a wall-sized painting by a well-known artist and declare themselves art hotels). As Florence’s pioneering design hotel, the Gallery Hotel Art doesn’t skimp. Virtually the entire ground floor, from the lobby through to the lounge and trendy Japanese-Mediterranean-Peruvian fusion restaurant, is one giant gallery, its sleek white decor acting as the calming, understated counterpart to the contemporary art and photography not often found in this city.

    Indeed, don’t underestimate the groundbreaking nature of this hotel. Design hotels may be a dime a dozen these days, but when the Ferragamo family’s Lungarno hotel collection launched with this modern getaway designed by Michele Bönan, its clean-lined furnishings and chrome, white, and natural wood hues were a challenge to a city outfitted in rich brocades and dark wood antiques. As such, the Gallery Hotel Art isn’t the flashiest stay, but it is the kind of place you can relax and unwind and feel like you aren’t living in the Renaissance days.

    Opened in May 2014 with a facade mildly reminiscent of a 19th-century European grand hotel, the Mandarin Oriental Taipei might seem incongruous in an Asian city—at least to those unacquainted with the Taiwanese penchant for blending international styles with more typically Asian motifs. The hotel’s Old World luxury extends throughout, from the marble-floored lobby (complete with white columns holding up high cathedral ceilings) to the rooms themselves, which are coolly stunning. Each room, from the standard Deluxe to the sprawling Presidential Suite, has separate tubs and walk-in showers inside a marble bathroom designed to make anyone feel like royalty. As for sleeping arrangements, “plush” is an overused word in hotel reviews, but it’s hard to find a better one to describe the feeling of sinking into a bed with 480-thread-count satin linen (which rises to 1,000 in certain suites) and a goose-down duvet. As a finishing touch, look up: Every room basks in the glow of its own chandelier. Though Marie Antoinette and the Empress Dowager Cixi lived on different continents, both would feel quite at home at the Mandarin Oriental.

    While the Liberty Hotel may have deep roots in Boston lore, it’s not for the reasons you think. For more than 100 years the hotel existed as the Charles Street Jail, an in-city penitentiary that housed (in)famous inmates like James Michael Curley, Malcolm X, and Sacco and Vanzetti. Its inspired transformation came in 2007, but the owners maintained some of the jail’s vestiges, from the exercise yard to several jail cells, while turning the building into a 298-room luxury hotel. Richly appointed rooms offer sweeping views of the city skyline and the Charles River.

    The hotel houses five distinct restaurant and bar venues, all of which attract large swaths of locals, especially on the weekends. Located at the foot of Beacon Hill, the hotel is steps away from the boutique and antique stores along Charles Street and also sits next to the picturesque Charles River Esplanade.

    O. Fournier is a modern architectural marvel located 80 miles (90 minutes) from downtown Mendoza in the district of San Carlos. It is one of Valle de Uco’s farthest wineries to visit, but it’s worth the drive to enjoy O. Fournier scenic views, distinctive design, and award-winning restaurant. José Manuel Ortega, a Spanish banker, bought the land in 2000 and contracted local architects to begin building O. Fournier in 2002. No expense was spared and no detail was overlooked to achieve Ortega’s vision. His talented wife, Nadia Harón, who delved into her passion for cooking when the pair moved to Mendoza, has become one of the country’s most notable chefs. Her restaurant, Urban at O. Fournier, blends Argentine and Mediterranean-Spanish flavors and traditions using fresh ingredients grown on the property’s 650-acre farm. If you find yourself falling in love with O. Fournier’s wine and landscape, you may just be tempted to purchase a small plot of land from Ortega to harvest your own wine and create your own signature blends. Reservations to visit the winery and restaurant must be made in advance.

    A contemporary take on a classic 1970s Adriatic resort, Hotel Lone is Croatia’s first and only member of the Design Hotels network. The gleaming-white, Y-shaped building may sit amid the forests of Zlatni Rt Park (a 10-minute seafront stroll from the Old Town of Rovinj), but its five-story lobby forgoes nature for flowing golden fabrics, rich murals, and a suspended steel sculpture. The Scandinavian-style accommodations are decidedly more minimalist, with lots of wood and natural light aplenty—plus plunge pools on park-facing terraces in the 16 Jazz rooms. Facilities include an 18,300-square-foot spa with an indoor pool, eight treatment rooms, and a unisex sauna complex, as well as the stellar ResoLution Signature Restaurant.
