    Fresa’s Chicken al Carbon is an Austin-owned restaurant serving charcoal-grilled, locally raised chickens, freshly prepared tortas, salads, sides, homemade ice creams, aguas frescas, and a selection of beer and wine. The family-style meals feature the highest quality pasture-raised birds from Vital Farms. Either marinated in achiote and freshly squeezed citrus or rubbed with fresh oregano and cracked pepper, the chicken is grilled slowly over hardwood charcoal and served with house-made tortillas, rice, beans, and fresh salsas. Don’t leave without ordering the cajeta churros for dessert!

    Few restaurants have been immortalized in both a popular book and a movie. Nam Kee, operated since 1981 by the Chan family in Amsterdam’s Zeedijk is one. A Chinatown favorite long before Dutch novelist Kees van Beijnum alerted foodies to oysters’ sensual pleasures in De Oesters van Nam Kee (The Oysters of Nam Kee) in 2000, the Cantonese eatery was named Best Chinese Restaurant in the Netherlands by Lonely Planet. In 2009, Time Out Amsterdam recognized it as Best Chinese Restaurant in Amsterdam. A 2010 renovation has replaced the former cold, white tiles with warm woodwork, stone accents and the obligatory Chinese calligraphy scrolls. The revamp has failed to make Nam Kee upscale or fancy, so don’t expect anything romantic or gezellig (cozy). A brightly lit dining room is simply furnished but filled with the flavors of salty soy and sweet ginger wafting from sizzling dishes of classic Cantonese favorites. The fabled Oysters of Nam Kee arrive steamy in their craggy shells, swimming in pools of silky black bean sauce, garnished with crunchy green scallions. My hot and sour soup with seafood was spicy, laden with chunks of shellfish. Friends shared a velvety corn soup with shrimp and minced pork. For light eaters, dim-sum-size appetizers include renditions of classics like Chinese Spring Rolls, Fried Won Tons and Sesame Prawn Toast. Main dishes are more substantial and include such Cantonese specialties as Salt and Pepper Squid redolent of peppercorns and crisp Peking Duck.

    My guide, Paco, a.k.a. Francisco de Santiago, 46, is a full time tour guide, and also a former child chess champion and bullfighter (“that was many kilos ago”), orders a flight of artisanal mezcal samples at our first mezcalería of the evening, and instructs me on the proper way to taste the purest of agave drinks. “You spread the mescal on top of your hand, like this, then wait for the alcohol to evaporate, then smell it for citric, floral, or smoky tones.” After smelling, a sip, then another for good measure, you take a bite of orange slice dipped in crushed maguey worms and sea salt. After that, we dive into the city’s tacos and street food, beginning our night with two cups of esquite—boiled corn kernels mixed with lime, chili pepper, and mayonnaise, which we bought from a father-son team who have been working the same street corner for 22 years. When riots broke out after Martin Luther King’s assassination in 1968, Ben’s remained open and served both police and protesters. While the U Street Corridor has undergone an urban makeover, Ben’s has remained the same, serving its quarter-pound of half-pork/half-beef smoked sausage on a bun with mustard and onions, all smothered in spicy homemade chili sauce. The prestigious James Beard Foundation even took notice, deeming it one of “America’s Classics.” Bring cash and come hungry.

Each dining experience starts with a letter of intention, a poem of sorts, from Muñoz stating his intention behind preparation of your meal -- and then you eat the menu itself as a fanciful starter! It’s best to get a reservation ASAP, with three Michelin stars, DiverXO is almost always booked!

    Östermalms Saluhall is one of Stockholm‘s most famous markets. While the prices aren’t cheap, since 1888 the market has been where those looking for the very best fish, meat, and produce shop. For most travelers in Stockholm, it provides a good lunch option if you want a fish sandwich or snack in an atmospheric Victorian food hall. The Saluhall will be closing for renovation and moving to a temporary building across the street in January 2016, and is scheduled to return to its home in 2020 after it has been refurbished and upgraded, ready to serve discerning Stockholm residents for another 125 years.

    Two plane flights, plus a drive and you arrive to this tiny island off the coast of Mozambique in the Bazaruto Archipelago. The former Indigo Bay Hotel was the nicest accommodation on the island when it opened in 2001. In May 2014, the property was touched up and relaunched by Anantara, giving travelers a comfortable base to experience Bazaruto’s natural beauty and local culture. The hotel has its own in-house naturalist and a whip-smart, PADI-certified dive instructor who can take guests snorkeling and diving. The Bazaruto Archipelago has been a national park since 1971 and is home to more than 100 species of coral, four types of whales, sea turtles, mantarays, dolphins, and it boasts the largest population of the rare dugong on the African east coast. In addition to water activities, Anantara can arrange cooking classes, horse riding, dune boarding, and bird watching (Bazaruto is home to 180 species of birds).

    But this resort isn’t only for active types. It equally caters to sybarites who are seeking R&R in a remote place. The 44 villas are all spacious and many come with large outdoor patios with dining areas and plunge pools. A highlight is the spa, perched high above the property. Make sure to arrive early and save time after to truly enjoy the views. The resort works closely with the local community, many of whom are employed by the hotel. Guests can visit one of the local villages and observe some of the community projects Anantara helps fund. But the best way to get to know the locals is simply by interacting with the friendly staff.

    Guests at Anantara Bazaruto Resort can opt to explore this very different side of the island by sandboard (think snowboarding down sand dunes), safari Jeep, or on horseback. I went on a horseback ride up at sunset. The uphill was lovely, but going down a towering sand dune atop a horse is about as scary as dropping down a double black diamond run on skis. But my horse mastered the vertical drop expertly. More terrifying than the drop was the ride around the freshwater lake, which my guide said is inhabited by 12-foot long Nile crocodiles. Luckily the few we saw were snoozing far away.

You can’t go wrong with one of their amazing salads, delectable stir fries, or house specials like Indian Spiced Red Lentil “Gallette” or Caraway Dusted Petaluma Duck Breast. Dining in a historical Victorian House only enhances the experience.

Ask to be on their email list so as to find out what specials and promotions are happening. Beer tastings are held on Thursday evenings, and wine tastings take place on Friday, Saturday, and Sunday afternoons.

    Canals are an integral part of the Dutch landscape so it’s only fitting you see them up close and personal, from a boat. Viewing Amsterdam by watercraft puts you level with Golden Age mansions, world-class monuments like the Anne Frank House and Westerkerk, and historic landmarks like the city’s narrowest house. Numerous companies offer canal tours of Amsterdam, including Holland International, which has day, evening and holiday cruises. Around the year, you can see the city in long vessels with enclosed cabins for protection against the unpredictable weather in the Netherlands. Choose from hour-long cruises covering city highlights or dinner, pizza and candlelight voyages. Audio guides are available in 19 languages (including Dutch), and there are toilets on board the boats. If you have more than a few hours to spend on the water, opt for a hop-on hop-off tour in a smaller, electric-powered 12- and 35-person boat. From March‒October, Holland International’s Canal Hopper floats through Amsterdam’s UNESCO-honored canal ring, stopping at 16 city landmarks including the Rijksmuseum, Anne Frank House, Rembrandt Square, the Albert Cuyp Market, and Nieuwmarkt, Amsterdam’s oldest neighborhood. There are departures from 11:00‒18:00, Friday‒Sunday from March‒October. In July, August and during holiday periods, the Hopper sails daily with fair weather.

    Of course there is no shortage of great food in Las Vegas, but this place is different. First of all it is not on The Strip, so it is not accessible unless you know about it. It’s in a strip mall in an area with a lot of other Asian restaurants, including an exceptional noodle shop next door called Monta Ramen. You must make a reservation at Raku—walk-ins are impossible and I saw them turn countless people away. Every dish will blow you away. I have traveled a lot to Tokyo, and I love it, but this is the best Japanese food I have ever eaten, and is worth tearing yourself from The Strip to experience.
