    New Mexico has an official state vegetable: the chile pepper. (In case you’re wondering, only 13 out of the 50 states even have such a designation.) And the self-proclaimed chile capital is the tiny agricultural village of Hatch--population 1600. But every year, on Labor Day weekend, up to thirty thousand people converge here to celebrate the hot pods during the annual Hatch Chile Festival. Climate and soil here converge for optimal pepper-growing. If you can’t make it to the Rio Grande Valley in early September, don’t worry about the flavor running out--roasted then frozen or canned, or dried and powdered, Hatch chiles can be had year-round. At Pepper Pot, a family-owned restaurant on what passes for the village’s main drag, try them stuffed--the chile relleno--or in sauce form, over enchiladas, burritos, huevos...And when it comes to which sauce to choose, New Mexico has an official state question: “red or green?” The local (and tastiest) way to answer is “Christmas,” and you’ll get both. This is down-to-earth terroir... Incidentally, several years ago, Anthony Bourdain passed through here and proclaimed Pepper Pot’s red enchiladas to be the best he’d ever had. Come judge for yourself. Open for breakfast and lunch, this converted home is a cash-only restaurant. The borders of both Texas and Mexico are only an hour away, and it’s a favorite with local farmers and bikers passing through; if you decide to eavesdrop, you’ll be hearing trilled Rs and twangy English.

    Is it is possible to be romanced by a property or courted by a restaurant? My luxurious and beautiful dining experience at the Fairmont Orchid Resort’s Brown’s Beach House Restaurant had me hooked as soon as I arrived on the resort property just after sunset. Immersed in aloha, and comfortably seated on the restaurant’s outdoor patio, a solo voice and the sound of ukulele danced through the air in concert with the tropical ambiance. Sustainably grown and locally sourced foods are exquisitely prepared to please the palate, and an air of romance is enhanced with the lull of the surf rolling into the sand, only steps away.     Located in Wood Dale, Yesterday’s Farm Museum is trip to a different era. The barn pictured above is part of the Wood Dale Historical Society, and it was constructed back in the 1850s. This massive structure is referred to as a ‘T’ barn due to the unique design for its time period. It features a hayloft, a feeding area for the horses, and a place for the cows to get their grub on as well (pictured above). But the coolest part is that during October, as Halloween approaches, the folks here provide hayrides for family and friends, and also feature spooky ghost stories at night in the barn.     Tucked in an area known as Poncey Highlands, Manuel’s Tavern has made a name for itself as the everyman’s bar, a watering hole for politicians, college students, old timers and everyone in between. It’s one of a few bars downtown that has its own parking lot, so it’s a popular spot for birthdays, meetings and events. Manuel Maloof opened the bar in 1956, which soon became popular with senators, mayors, athletes, musicians and of course, local students, for the cheap prices. Manuel’s boasts an extensive beer selection, but you can’t beat the deal on $6 pitchers of Miller High Life and Pabst Blue Ribbon. The food is also a step above your standard bar fare, particularly the burgers, barbecue sandwiches and Philly cheesesteaks.

Home to an extensive assortment of magical displays highlighting all facets of natural history from around the world, the Field Museum is a great way to spend a day getting your culture fix. If you start to lose steam, just pop into the café for a meal to reenergize before continuing to explore the multitude of exhibits that await you. And while the museum is a showcase for natural history, it’s been at this spot since 1893, which makes it a part of history as well.

    Turkey isn’t known for its beer, with most menus dominated by the serviceable yet flavorless Efes. The craft beer movement has been gratefully welcomed (especially by expats), and a few breweries have popped up in Istanbul in recent years. The Populist brewery is part of Bomontiada, a massive complex of art and performance spaces, shops, restaurants, and nightlife on the site of the former Bomonti Beer Factory, which closed in the 1950s and was abandoned for several decades. Populist’s food menu is standard pub fare, with a few surprises like a lamb burger with Carolina mustard sauce and a flatbread pizza with kokoreç (better-than-it-sounds grilled lamb intestines). The rotating selection of 12 beers on tap might include a Belgian Turkish wheat with anise and a hoppy IPA. To reach Bomontiada, take the metro to Osmanbey, and from there it’s a 10- to 15-minute walk through a historically diverse and rapidly changing neighborhood.

    The ancient Hawaiians revered mantas in very high regard. With up to 25-foot wingspans, these majestic sea creatures feed on some of the sea’s smallest organisms: zooplankton. Strap on a snorkel to watch them dine at night, doing slow, gape-mouthed barrel rolls as they swallow copepods, mysid shrimp and arrow worms. The two most popular Big Island sites—off Kona International Airport and near the Outrigger Kona Resort and Spa—have suffered overcrowding lately, which is terrible for both the rays and the people who love them. Try Jack’s Diving Locker for a scuba descent and Eka Canoe Adventures for snorkeling, after checking out guidelines from the Manta Pacific Research Foundation.

    Affectionately called the First Lady of Waikiki, this grande dame opened in 1901. Its gracious architecture harks back to the sugar-plantation era and wraps around a courtyard anchored by a massive banyan. Pull up a chair under its spreading branches—or else a seat overlooking the ocean—and enjoy island-inspired fine dining. East meets West here with appetizers like Kona abalone bourguignon, tempura asparagus with Parmesan custards, and twice-cooked octopus with macadamia romesco. Entrée standouts include the miso salmon and Korean-fusion Beach Bim Bop starring fiddlehead ferns, kimchi Brussels sprouts, and Ali’i mushrooms from Hawaiian grower Hamakua. Save room for its tour-de-force finale: A “dessert tree” with small bites of everything from macarons to red-velvet cheesecake.
