    My Irish friend, Aedín, and I were driving from Galway to Westport when suddenly she veered off the main road. “There’s a great beach down this way, I think,” she said to me. I was up for anything, seeing her country for the first time. We came upon one beach, “This isn’t the one,” she said. I thought it was beautiful, but she knew what she was looking for. Then we arrived at this beach, which I nicknamed “Aedín’s Beach”. We were the only ones on that beach. As my friend walked down the beach, I watched her as she got lost in the beauty of the landscape: the feel of the warm sun on our skin, the sound of the waves crashing on the shore, the smell of the salty air, the taste of salt and sand on our lips and the sight of a desolate beach against the green pasture land dotted with white sheep. I took this one shot of her. It is one of my favorites from this trip.

    Simply put, Ramiro is the best seafood restaurant Lisbon. It is a 100% local customer based and long established “Cervejaria” (literally translated to place where beer is dispensed), with an buzzing ambience and above all, very high quality cooked on the spot seafood. What I love more about this place is its unpretentiousness and the “no fuss” approach to seafood. Eating with your hand is more than recommended and don’t be scared to dunk the freshly bake buns in the fresh crab meat which comes in the shell or in the velvet buttery sauce of the “bulhão pato” clams. Green wine is the eternal companion of seafood in Portugal, and don’t forget to ask for Palacio da Brejoeira for a taste of crisp slightly bubbly 11º white wine. Desert as a special meaning in this place, and it comes in the shape of a charcoal grilled fillet steak in a bun. Yes, you are in Portugal and after a seafood meal you can further indulge your umami taste buds with some animal protein. Although it is open from 12h00 to 24h00, it becomes extremely busy at the end of the week evenings, and the over 1h wait for a seat can be a turnoff. I would always recommend my clients at the Palacio Belmonte, to either go before 19h00 or after 22h00 to avoid the queues. In the case there is a slight waiting period, you can always go for a very Portuguese “at the counter nibble” of some “black pork aged ham” and a cold draft beer, to pass the time. You cannot leave Lisbon without trying this place!

    Set high above the St. Lawrence on Cap Diamant, overlooking Old Québec, this imposing yet inviting landmark is as much a lodging as it is a tourist attraction, borne out of its reputation as the most photographed hotel in the world. Opened in 1893 by the Canadian Pacific Railway to drum up luxury riders for its trains, the castle-like Fairmont Le Château Frontenac feels every bit as grand today as it must have when Roosevelt and Churchill secretly hatched plans for the invasion of Normandy here in 1943—and it continues to be the hotel of choice for A-list celebrities and other notables. A $75 million renovation in 2014 updated the 611 rooms with a more contemporary feel, draping spaces in chic furnishings and soothing shades of gray and cream, plus butter-yellow or soft turquoise accents. The spa features seven treatment rooms adjacent to an indoor pool, whirlpool, steam rooms, and a gym, but the hotel has become a destination for its food: Champlain restaurant is helmed by acclaimed young chef Stéphane Modat and offers a modern take on Québécois cuisine alongside magnificent views, while 1608 Wine & Cheese Bar highlights local wines, cheeses, and charcuteries.

    Forget Google Maps: You’ll quickly locate this venerable tapas bar in El Poble-Sec by the line out the door. With standing-room-only space for just 20 people, this sliver of a spot fills up fast—and stays that way until closing time. In a room lined floor-to-ceiling with bottles of wine, liquor, and pricey vinegar, you can sample a dizzying variety of tapas and montaditos (small bites served atop slices of bread). Many of the ingredients—namely the mussels, sardines, and tuna—come from cans, which sounds suspect, but Spanish conservas (tinned food) is actually of the highest quality. The cheeses—all fresh—are also top-notch.

    Cemeteries don’t often end up on a traveler’s “must-see” list - unless they are going to Vienna. The massive Zentralfriedhof, or Central Cemetery, isn’t actually centralized. In fact, it lies far to the south of the city. With over 300,000 internments and around 495 acres, it’s one of the world’s largest cemeteries and the final resting place for a who’s who of Austrian cultural icons. Most notable are the final resting places of Vienna’s greatest musicians, including Beethoven, Brahms, Schubert, Strauss I & II, and even Falco. Architect Adolf Loos, sculpter Fritz Wotruba, and a crypt of Austrian presidents also make for a fascinating look at the country’s more well-known residents. The grounds also hosts the Art Nouveau Dr. Karl Lueger-Gedächtniskirche (Memorial Church), a Russian Orthodox Chapel, and burial grounds for Jewish, Muslim and Buddhist faiths. The cemetery is easily reached by S-Bahn and bus. Buses also travel between the sections, as do horse-drawn carriages.

    Last April, I spent a morning hiking along the San Pedro River, just NW of Bisbee, AZ; the caterpillars were astoundingly abundant. When I stopped, I could hear them munching on leaves all around--a surround-sound of crunching, the aural fecundity of spring. Between Sierra Vista and Bisbee, the high grassland highway slowly slopes down to this cottonwood-lined river--one of the few free-flowing rivers left in the Desert Southwest. This ribbon of forest stretches from the Mexican border up towards the lower-elevation desert, providing a flyway for migrating birds and even habitat for the occasional jaguar (very rare). In the late 1980’s, this area was made a National Conservation Area, and it’s a nice shady walk in what can often be sun-blasted country.

    Though Barcelona is hardly the epicenter of paella (that would be to the south, in Valencia), this hands-on culinary workshop/dining experience offers a fine introduction to what’s arguably Spain’s most famous dish. Set in an appealingly hip Raval-area space featuring soaring ceilings, exposed brick walls, and industrial lighting, the class starts with a welcome glass of cava along with a brief overview of paella from founder Alex Betolaz and chef Alex Villar. Don an apron at your cooking station, but don’t expect anything too labor-intensive; ingredients are, for the most part, already prepared, though you will do a bit of chopping, pouring, and stirring. (You can book your paella preferences ahead of time, and vegetarian options are available.) Then you’ll gather around a long wood table and sample various Catalan specialties along with your paella (and there’s usually plenty of sharing going on). Choose from three different paella-making experiences, starting at €50/per person for two courses and going up to €85 for multiple courses plus unlimited wine.

    What do you get when you mix a little Don Draper, a bit of Andy Warhol, a smidge of The Jetsons, and a touch of PeeWee’s Playhouse? The vision of two local architects, the cheerful Vintage Design Hotel Sax is a paean to post-war optimism in the Malá Strana neighborhood, where each of the 23 affordable accommodations are individually decorated with restored vintage furniture and artwork, colorful geometric wallpapers, and retro pieces. Rooms aren’t particularly spacious but are comfortable nonetheless and include amenities like smart TVs, free WiFi, and air conditioning. There isn’t an on-site restaurant, but the lobby bar sells salads and sandwiches throughout the day, and a space off the lobby stocks free coffee and tea, as well as wines and soft drinks for purchase. The complimentary breakfast, however, is served buffet style (you can pay to order à la carte items) and can be enjoyed from the hotel’s fourth-floor terrace overlooking Prague Castle and the Petřín Lookout Tower.

    Caesarea, the city and harbor that Herod built, is now preserved as a national park. A walk along its pathways allows visitors to experience the city’s role as part of ancient Rome and its days during the Crusades in the Byzantine era. Check out a concert at the partially restored amphitheater, or dive in Caesarea’s sunken harbor and underwater archaelogical park. Ancient ruins, including the remains of Herod’s palace, sit along the coastline. A state-of-the-art visitor center offers a historical perspective, complete with famous figures presented as hologram tour guides: King Herod, Rabbi Akiva, the Apostle Paul, and Hannah Senesh. Right outside the park’s boundaries, find a modern city with restaurants, cafés, and some eclectic galleries selling wine, cheese, olive oil, and jewelry—plus a lovely stretch of Mediterranean beach.

    Inspired by the famous Fox Theatre—the Moorish-style movie palace turned performance venue is just across the street—Hotel Indigo Atlanta Midtown strikes a musical note at every turn. The experience begins at reception, where the desk resembles a drum set and a collage of show tickets from the past 30 years decorates the wall behind it. Guest rooms riff on the theme with accent wall murals that make it look like you’re either attending a concert or starring on stage, but the overall vibe is playful comfort, with pops of green on the quilts, spa-like baths with Aveda products, flat-screen TVs, and free WiFi. If you find yourself hankering for soul food, the chicken and waffles at the on-site restaurant should do the trick, but don’t pass up a drink at the black-and-white bar counter, which looks like the keys of a piano and is backed by a wine display that evokes the inner workings of a jukebox.
