Where to eat the best tapas in Madrid, Sevilla, Barcelona, and San Sebastián—plus how to order them like the locals do.

Chris Walker and Morgan Hartley spent three months cycling through central Asia as part of an 18-month bike trip. Here is part one of five of their account, in which their trip is almost thwarted from the start.

Germany’s oldest and most famous university town, Heidelberg is known for its striking Old Town, beautiful setting on the Neckar River, and evocative hilltop castle. Destroyed by French troops in the 1690s, rebuilt during the 18th century, and miraculously unscathed during World War II, it’s proved a source of inspiration for everyone from Goethe to William Turner to Mark Twain. Equally romantic is the surrounding valley, full of forests, fortresses, castles, and charming villages like Bad Wimpfen.

Give your senses a jolt at Sky Costanera Observatory, on the 61st and 62nd floors of the Costanera Center. A 50-second elevator ride takes you almost 1,000 feet into the sky for a thrilling 360-degree view of the city, population over five million, with the snowcapped Andes as a backdrop. Guides are on hand to point out cityscape highlights. Not for scaredy-cats. Note: In case of rain, return first thing the following day, the best time to visit for the clearest view.

To get to Salzburg, Austria while river cruising on the Danube, dock in Linz, and then head for the hills. Most river cruise companies provide all-day excursions to Salzburg, known as the film location for The Sound of Music. Highlights include: Salzburg’s Old Town, a UNESCO World Heritage Site, a visit to Mozart’s birthplace, and exploring the Hohensalzburg Fortress just above the city center.

Sugar, slavery, and the colonial legacy of constant sparring partners England and France are all woven into the history of St. Kitts, where a still formidable (and highly Instagram-able) hilltop fortress has stood guard for more than 300 years.

Along with Vienna, Salzburg and the Alps are Austria’s top draws and the perfect place to spend the second half of a two week trip. Mozart’s Salzburg is adorned with beautiful gardens, a mighty fortress and great museums. Salzburg is the perfect gateway to the Austrian Alps, dotted with quaint villages like Hallstatt, pristine lakes and Austria’s most well known resorts, including the famous Kitzbühel. Trek through the Alps or just enjoy the views from cities like Salzburg and Innsbruck.

Housed in everything from a 17th-century palazzo to an ancient fortress to a 350-year-old farmhouse, Malta’s best hotels blend history with modern luxury. Whether you want a spacious room with views of the Grand Harbour, a great location within walking distance of major sites, or a rooftop pool to relax by after exploring the capital city, you’ll find it all, along with loads of traditional charm, in this fascinating island nation.

I realize that this is a highlight that may not even need words, since the image is so very convincing. If you find yourself exploring the Costa Brava (‘Rugged Coast’) of Spain, be sure not to miss the beach town of Calella and have lunch at the Hotel St. Roc to sample the local specialties and witness this view. Once you descend on foot from the Hotel St. Roc, you’ll start to see footpaths and stairs headed down to a few, beautifully quiet beaches. The water is clear, the swimming great, and siesta seems to never really end in that glorious sunshine.

Atenas (whose name means Athens, as in Greece‘s capitol) is actually a quaint agricultural town in the province of Alajuela, about a 45 minute drive west of San Jose. With a population of only 27,000 people, and surrounded by coffee plantations and mountains, this is the absolute perfect place to experience Costa Rica as it truly is. The village has cute shops, some eateries, and stores that will carry any items you may need during your stay. The town square is adorable, and the various restaurants (all very casual) have excellent food based on local fresh catches and fresh-from-the-farm fruits and vegetables. The particular view above is from a lookout point on a private gated property. However, there are three housing developments in the area, and various owners rent out their places for very reasonable rates, and plenty have a view like this. Another fast fact about Atenas: it’s claimed to have one of the best climates in the world according to National Geographic, and you will come to know the phrase ‘El Mejor Clima del Mundo’ because it is proclaimed everywhere - and it’s true.
