    Poke (pronounced POH-kay) is not only a staple of Hawaiian cuisine, it’s also a favorite of diners needing a meal on the run. These bite-sized chunks of raw fish are seasoned with everything from soy sauce to seaweed, and you won’t find a luau or community potluck that doesn’t have at least one type on the table. For those craving poke on the West Side of Maui, Foodland Farms supermarket is consistently voted as the best place for poke in the islands. At a small deli counter in the back of the store, you can choose from a selection of more than a dozen different varieties which boast seasonings from spicy to savory. The fish of choice is yellowfin tuna (ahi), and one variety—the “Flyin’ Hawaiian"—is part of a charity set up by Shane Victorino, a professional baseball player who was raised on the island. While the poke itself can fluctuate somewhere between $12-$15 a pound, budget diners can enjoy a “poke bowl” in which a third pound of fish is served over rice for a wallet-friendly $7. Can’t decide? Try the ahi avocado poke bowl served over a bed of brown rice. Want to blend in? Eat it with chopsticks.

    The Curacao Marriott Beach Resort may be one of the best located hotels I’ve ever been to. Situated on a private beach in Piscadera Bay, the resort feels like the height of secluded and elegant resorts. It’s also a short three-mile drive from the capital of Curacao, Willemstad; the free shuttle delivering guests to the heart of this colorful city. Whether or not you’re looking to just lounge by the pool or get out and explore the island, the Marriott makes it easy to do it all.

    Set on two extinct volcanic craters 450 feet above sea level in the highlands of Santa Cruz, the extremely high-end (but still carbon neutral) Pikaia Lodge, which opened in mid-2014, is unlike anything the Galapagos has ever seen. With strict building regulations on the highly fragile islands, Pikaia, owned by a live-aboard dive yacht impresario, was the first lodge to be granted a building permit in more than a decade, and the lodge is built entirely of recycled materials. The terrain, a mix of dry savanna and tropical highland forest, was regenerated with 12,000 endemic trees and grazing habitats for giant tortoises, for which Pikaia created its own private reserve. The entire all-inclusive property is powered with portable Eolic wind generators and soundproof electric generators using clean biodiesel. Despite the ecofriendly ethos of the property, there is no shortage of all-out luxury, from the infinity pool that’s softly illuminated at night, to the cushy spa or the lounge with a 3-D HDTV screen for lectures and videos. There’s also a contemporary restaurant and a wellness center on-site, plus two slick yachts used for excursions to neighboring islands and dive trips.

  • Turneffe Atoll, Belize
    Turneffe Atoll’s sprawling central lagoon is a beautiful natural playground marked by thick mangrove islands and littoral forest, and hosts dozens of remarkable marine species – including crocodiles. Yes, the central lagoon is pretty to look at and one of the best places in Belize to watch the sun rise, but I wouldn’t recommend you go for a dip. Crocodiles spend their days escaping the heat in the thick mangroves, then swim out into the open ocean at dusk to feed. I saw two crocs during my time on the island; a very young juvenile whose curiosity had brought him right up to the sandy patch of beach behind the Blackbird Caye Resort, and a suspicious adult who kept his distance (thankfully). Still, the lagoon is a great place to spy on the aforementioned crocodiles, photograph marine birds, and more.     No surprises – pork is the focus at West Seattle’s Swinery deli. When you walk into the tiny shop, you’ll see a huge deli case full of steaks and chops, bacon, smoked meats, sausages, pates and confits, as well as all the pickled veggies, slaws, sauces, and sliced deli meats you need to assemble a truly kickass charcuterie platter. If you can’t wait, order a sandwich in the adjacent Courtyard Cafe. The focus is on BBQ pork and burgers, but the smoked turkey sandwich is smoky and flavorful, and the red onions and Carolina sauce add some tangy brightness. For big appetites, try the “Danger Fries,” hand-cut and fried in rendered pork fat, tossed with salt, fresh garlic and chives, and smothered in a bacon blue béchamel sauce.

    Noma, consistently ranked as one of the world’s best restaurants, closed in 2016, but its impact on dining in Copenhagen has been profound. Many chefs who worked there have since launched their own restaurants, including two who opened Bror. It’s a small space with big ambitions—expect astonishing food made from the best local produce. The five-course menu costs 625 kroner ($100), with wine pairings an additional 450 kroner ($72). There are also some memorable snacks. Don’t miss the bull testicles with tartar sauce or the cod head with cabbage wrap.

    You won’t find any mediocre pastries or kitschy mugs at Savaya. Here, it’s all about the coffee. Owner Burc Maruflu hails from Turkey, and his passion for coffee permeates this intimate space — which is just big enough for a long mesquite bar, a few tables, and a bright green roaster. The map painted on the wall and the hanging burlap bags show where the fair-trade organic beans are sourced. They’re roasted at the café daily, and small classes are occasionally held for those who want to learn more. Tucsonans regularly name this place as one of the best spots to get a cup of coffee in the city. In addition to the original Midtown location, there are also Savaya cafés in the Santa Catalina foothills and Dove Mountain.

    Being a guy from the Jersey Shore (which has nothing to do with that television show!), I love the sea front. The seaside resort of De Panne in Belgium is a place worth visiting. Sure, Belgium is usually rainy and cold but there are hot sunny days too, so it is advisable to hit the coast and check out De Panne. Its a typical Belgian seaside resort with lots of cafes and restaurants and a very big sandy beach. What I like about De Panne is the old style mobile cabanas, which were once popular along the Jersey Shore going back a century. The town was also the home of Belgium’s King Albert during WWI, since it was the only area that was not occupied by the Germans.

    El Charro sits in a converted set of historic houses & buildings a block off Tucson’s old town district—the same location where it began serving food in 1922. We had lunch here, at a big old wooden table in a warmly decorated dining room. Ask to be seated inside, or else in the garden, if the weather’s amenable. It’s a bit cold and dim in the front of the restaurant. I had an amazing vegetarian burrito, stuffed with roasted veggies, avocado and a green corn tamale. The others went for the excellent chimichangas, reputedly invented here (you can read the story on the menu). The special-brewed beer, an amber, was great, the salsa verde addictive, the decor a great talking point.

    I’m far from a hunting enthusiast, but I am an avid fan of taxidermy, so when I heard that every Cabela’s features museum-quality displays, I was hooked. And they weren’t kidding. The Lacey, WA location has a multi-story mountain plunked down in the center of its showroom, studded all over with bighorn sheep, foxes, bears, bobcats, rabbits, and the occasional polar bear. Underneath the mountain is a walk-through aquarium featuring regional fish, and the second floor has a truly impressive display of African big game, including a giraffe, zebra, elephant, and lion. When you’ve admired the lifelike mounts and fed the koi in the beaver pond, you can stop at the cafe for an exotic-meats sandwich before hitting the road. Ostrich burger, anyone?

    The Morada Bay Beach Cafe on the bay side of Islamorada is the perfect spot for a Keys lunch. Colorful chairs and tables dot the beach; the food is excellent and the restaurant regularly receives fantastic reviews. Try the Wagyu beef burger. It is delicious. Fresh fish and seafood are popular choices. The conch fritters and conch chowder hit the spot. The staff is very friendly, professional, and helpful. Island music or Jimmy Buffet songs waft across the beach.

    This short 13km drive is worth taking for the panoramic views of the northwest coast, stretching from the Rosguill Peninsula to the Bloody Foreland, and out to Tory Island to the north. There’s plenty of seabird life on the cliff ledges, with puffins, storm petrels, gulls and guillemots. When you get to the tip of Horn Head, walk to the viewpoint at Faugher, for views of the cliffs and the ruins of a signal tower from the 17th century.
  • Get it? Play on words right there. Ha. This beautiful water lagoon is a playground for the awkwardly beautiful pink flamingo, a honking, goofy, loveable bird that is all legs and beak. I didn’t expect to see flamingos in the Galapagos, so this was quite a nice surprise, given the spectacular setting and all. Santa Cruz is one of the most stunning of all the islands in the Galapagos, marked by tortured volcanic terrain, pretty lagoons, and spiraling mountain peaks.
