    Rolson’s Hotel and Restaurant is high on a hill, overlooking the town of San Ignacio, not too far from the ruins of Cahal Pech. The restaurant’s tables are mostly outdoors, and the view provides a wonderful backdrop to meals that showcase the best of Belizean and Mexican cuisine. My favorite was a chicken burrito drowning in cheese and salsa. I also thoroughly enjoyed the horchata, fresh-squeezed lemonade and michelada. At happy hour, Monday through Friday between 5 and 7 p.m., the michelada is a welcome refresher. Wireless Internet is available, making Rolson’s a great place to get some work done while enjoying wonderful food served with a smile. The longer you linger, the merrier the atmosphere becomes, as locals seem to favor enjoying a late dinner on Rolson’s breezy patio. Dinner is served from 6 to 10 p.m.

    Feast your eyes upon the Francesinha. What is in this curious looking sandwich, you ask? Heaven. Sausage. Cheese. Port wine. Onions. And a bit more heaven. If you visit Porto - and why wouldn’t you visit the home of Port wine - you’ll come to know the Francesinha. How well you come to know this sammy has a direct correlation to how good of a time you have in this gem of a throwback European town. Restaurants throughout Porto claim that they were the first to invent this sammy or that they were the first to add foi gras or the first to serve it with prawns - none of that matters. All that is important is that you ear more than your fair share of one of the world’s sauciest culinary marvels. And that you do it with a pint of beer, and a glass of port nearby.

    I have to say I had my doubts when, in search of a lunch spot during our final day in Marfa, a local shop owner sent us to Fat Lyle’s. I didn’t know what to make of the unique name of the food stand. But I would put my preconceptions aside and give it a try. I am so glad I did. The food was delicious. If I wasn’t stuffed from my order I would have ordered more and more and more. We sampled the Korean Chicken which was so tasty. The chicken makes my mouth water just thinking about it. I got the brussels sprouts with carmelized onions, blue cheese, and french fries. Sounds like a weird concoction but for some reason it works. Make sure you stop here for a bite to eat. I need to go back to Marfa for more.

    The Review:
    Set on a ledge overlooking the Willowemoc Valley and its namesake river, The DeBruce brings a touch of sophistication to an otherwise quiet corner of the Catskills. Here, in a restored inn from the 1880s, guests find 14 modest rooms spread over three floors. Designed to create a sense of calm, all feature down duvets, Sferra linens, and tile-and-marble bathrooms stocked with Malin & Goetz toiletries, while some also include clawfoot tubs and expansive views of the surrounding scenery. Guests spend little time in their rooms, however, as The DeBruce is home to several cozy common spaces, including the Great Room (filled with antique couches and wingback chairs), the Conservatory (with an original fieldstone fireplace and comfy reading chair), and a serene pool (surrounded by lounge chairs, a firepit, and manicured gardens). The property also sits on nearly 600 acres of private land, which spans two mountains, a river, and several ponds. Simply walk over the private bridge for access to trails for hiking, birding, snowshoeing, and cross-country skiing, as well as a half-mile of river for fly fishing.

    At the center of all of this is the restaurant—a glass-walled dining room overlooking the valley, where guests enjoy the a la carte breakfasts and multiple-course dinners included in their stay (one night is always a nine-course tasting menu). Chef Aksel Theilkuhl, formerly of BLT Steak Group in New York City, draws from a bounty of local, seasonal products for every meal, impressing with dishes like smoked trout and mushroom three ways. Should guests prefer something more casual, there’s also the Club Room in the basement, where Theilkuhl serves bar classics and small plates in an intimate setting. For more insight into The DeBruce’s culinary program, sign up for sessions with Theilkuhl and help with kitchen prep, sample new dishes, or forage the hotel grounds for ramps and more. Other activities like Pilates and yoga classes, exploratory nature walks, and fly-fishing lessons are also on offer, giving guests plenty of ways to while away their days in the Catskills.

    Overall:
    Housed in a restored 19th-century inn, the 14-room DeBruce is a warren of cozy common spaces that invite travelers to linger in wingback chairs next to stone fireplaces or chat on porch swings hung from the verandah. Guests may take a dip in the outdoor pool or join a fly-fishing or foraging excursion, but the main event is dinner. Chef Aksel Theilkuhl, formerly of BLT Steak Group in New York City, serves a nightly tasting menu in a 32-seat dining room facing the lodge’s ponds and rolling hills.

    The Review:
    Originally operating as a motor hotel in the 1920s, this Poncey-Highland property reopened in 2018 under the ownership of Oliver Hospitality, the same team behind hip locales like The Fairlane (Nashville) and Station House Inn (Lake Tahoe). New York-based studio Reunion Goods & Services spearheaded the design, imbuing the space with modern-day details while reviving its retro vibes with bespoke murals, custom wallpaper, and vintage-inspired artwork. Walls get a particularly feminine makeover within each of the 95 guest rooms, thanks to Atlanta artist Sharon Shapiro’s colorful depictions of women in everyday life. While the hotel caters to solo travelers and couples aplenty, it’s fun to bring a group: 15 bunk rooms welcome the cool kids here, and each of them sleeps up to four. Bring that crew downstairs for dinner at Tiny Lou’s, where executive chef Jeb Aldrich puts forth French-American fare like Tennessee rabbit cassoulet and black cocoa foie gras.

    In the Palmerie neighborhood outside of town, ethno-botanist Gary Martin and his wife, interior designer Meryanne Loum-Martin, have created a fairytale oasis—whose name translates to “big garden”—with five houses, five pools, and beautiful green spaces spread over nine lush acres. Set in three different villas, the 24 uniquely designed, boho-chic rooms range from the Small (which can be tight and somewhat dark) to the more spacious Standard, Large, Garden, and Pavilion options, which feature plenty of light and perks like fireplaces, terraces, king beds, and artisan details.

    When not lounging around one of the pools, guests can play a set on the clay tennis courts, wander around the botanical gardens, take a Moroccan cooking class with Chef Bahija, or explore the surrounding area by bike, vintage sidecar, or camel. Kids are more than welcome here and can look forward to such programming as calligraphy and magic classes, while adults can expect in-room massages and outdoor yoga classes. Breakfast is included in the room rate and, like all meals, can be enjoyed in various spaces around the hotel. Dinner is particularly magical when served underneath countless glowing lanterns.

    Built into a mountainside with uninterrupted views of Zermatt and the Matterhorn, The Omnia is a contemporary take on a mountain lodge, envisioned by the late modernist architect Ali Tayar. From below, the glass, metal, and larchwood exterior—and, most strikingly, the slanted roofline—seem to echo the great mountain itself. Entering the hotel is similarly dramatic; from the street, guests walk through a softly lit tunnel to glass elevators, which lift them out of the rock toward the hotel lobby, with dizzying views of the village below. Inside the 30-room property (12 of which are suites), Tayar employed soft, neutral colors to harmonize with the surroundings and create a sense of understated luxury. No two rooms have the same layout, yet all but one have balconies with views. A freestanding fireplace separates the granite-and-leather-accented lobby from a small library stacked with oversize art and design books, while two outdoor terraces are perfect for sipping coffee with views of the Matterhorn. The spa features an outdoor whirlpool, Turkish bath, and steam room as well as an enclosed heated pool that opens to the outdoors through a glass wall on one end.

    Like many Hudson Valley inns, Wm Farmer & Sons owes its existence to a young New York couple who decided to quit city life in favor of greener pastures. In this case, it was Kristan and William Kirby Farmer who moved to Hudson and transformed a 19th-century structure into a 13-room inn. Spread across two main buildings, rooms feature a mix of dark grays, browns, autumnal oranges, farmhouse reds, and the occasional plaid pattern on the chairs and sofas. A few annexed suites off to the side also include full kitchens with sleek appliances like ovens and stoves. The on-site restaurant is open Tuesday through Sunday and offers a constantly changing menu of meat and seafood dishes, plus a daily happy hour with seasonal cocktails.

    Owned and operated by the same family and situated about a mile apart from each other, Camp Denali and North Face Lodge are more than deserving of bragging rights: They’re part of less than a handful of accommodations inside Denali National Park and Preserve with prime views of America’s highest peak. But the properties—and amenities—differ. Each of Camp Denali’s 18 cabins offers an authentic, close-to-the-land experience: Propane lamps provide light, a wooden stove gives off heat, drinking water comes from an outdoor spigot, and a short path leads to an outhouse. For guests who prefer more creature comforts after a day taking in the rugged outdoors, North Face Lodge’s guest rooms all have electricity and private bathrooms. Locally sourced meals are served in a cozy wood-clad dining room, and a common sitting room oozes charm and conviviality with leather sofas surrounding a stone hearth fireplace, where you can choose a book from the stacks of shelves or share tales of your into-the-wild adventures with fellow guests.

    Even a Brussels native would be forgiven for thinking, at first glance, that the Dominican is a historic building. After all, the façade incorporates many of the features that existed when renowned 19th-century French painter Jacques-Louis David lived at this address. And, inside, the site’s former incarnation as a 15th-century Dominican monastery appears in such details as the courtyard colonnade and original stone floors in the serene Monastery Corridor. The soaring ceilings, oversized windows, and ornate ironwork of the Grand Lounge and its adjacent bar call to mind the grand cafés of early 20th-century Europe, while rooms are adorned with vibrant paintings of classical subjects, like those by David and his contemporaries.

    As historic as it all is, though, there’s no doubt that the Dominican is a modern hotel. The contemporary decor harmoniously complements its surroundings, and each of the 150 luxurious rooms has been individually designed. Many afford views of the impressive La Monnaie, the city’s opera house, located next door. The lounge is one of Brussels’ hottest spots for everything from power lunches to date nights, and the gym even has a private boxing room.

    Two blocks from Union Square, Hotel Adagio is a stylish retreat from the frenetic energy of downtown San Francisco.     Inspired by his time in New Orleans, Chef Steve McHugh brought to San Antonio a vision of a modern, welcoming spot with a killer charcuterie program, and that vision became his buzzy restaurant, Cured. Opened in late 2013 and having survived an on-premise fire, the restaurant has drawn discerning carnivores in for plates like monster 2-pound pork shanks, pork cheek poutine and cabrito sliders, all served in a elegantly utilitarian yet warm space. Not to be missed is the fine in-house charcuterie program -- or the see-through curing room front and center as you walk into the dining room. The wonderfully curated beverage menu features craft beers and wonderfully inventive cocktails. Cured is a must-visit culinary experience on any jaunt to the Alamo City.
