Nestled in the rain forest leading up to the famous Boiling Lake, Titou Gorge features cool, deep waters and smooth cliff walls formed by molten lava. If you’re wearing water shoes and a flotation device, you can actually get down in the canyon and make your way upstream through a series of pools that ends at a waterfall. If you’ve seen Pirates of the Caribbean: Dead Man’s Chest, then you’ve seen Titou Gorge before—portions of the movie with Orlando Bloom were filmed in this very spot.

As soon as they see it along the Great Rift Valley, hiking enthusiasts want to climb Mount Longonot, a dormant volcano that last erupted sometime in the 1860s. The name Longonot is derived from a Masai word that means “steep ridges"—fitting because the journey to the top is nearly vertical, along deep crevices and crumbly rocks. Summiting usually takes about 1.5 hours; from the top, peer into the forest-filled crater and sit under a shaded gazebo to enjoy a picnic. If you have the energy, it’s also possible to hike the rim of the crater, but be warned: Skirting around takes roughly three hours, not including the journey back to the bottom.

The popular Dale Ball Trails system offers 23.4 miles of interconnected high-altitude desert trails in the foothills of the Sangre de Cristo Mountains, where piñon and juniper forest greet sturdy ponderosa trees as you ascend to higher altitudes. The system passes pretty close to town, and navigation is simple thanks to clear trail markers. If you’re so inclined, follow the steepest path along the ridge to the top of Picacho Peak. The reward for your hike is a breathtaking 360-degree view.

This 34-mile paved bike trail wraps around the River Mountains and loops from downtown Boulder City through a part of the Lake Mead National Recreation Area, past Lake Las Vegas, through the outside corner of Henderson, and back. All told, the route presents bicyclists with a challenging and diverse path on which to spend a day. There are even some spur trails from the main thoroughfare that link to Hoover Dam (through a series of old railroad tunnels), downtown Henderson, and beyond. The most challenging portion of the main trail is between Henderson and Boulder City, where a series of three hills—dubbed the Three Sisters—prompt even the fittest atheletes to huff and puff for a while. Services are available at various spots along the trail, and bike rentals are offered in Boulder City and at Lake Las Vegas.

Listen to the mating calls of the parrots flying above at the National Trust Parrot Reserve Hiking Loop, or descend carefully into Peter’s Cave and move through the various layers to discover a truly breathtaking natural wonder. This national park is an ecological preserve with upland watersheds, mangrove forests, and estuarine and marine environments that support threatened and endangered species. The park also includes the Columbus Landing Site, a National Historic Landmark that is the only known place where members of a 1493 expedition led by Christopher Columbus (his second voyage) set foot on what is now United States territory. Columbus and his men met a tribe of Caribs here, so it was the first documented encounter between American Indians and Europeans.

This enchanting corner of Costa Rica, blessed with a superb climate, provides visitors with a chance to experience an ideal rural setting. If you’d like some action with your relaxation, you’re well positioned to hit local sights like Poás Volcano, as well as try camping, horseback riding, and trout fishing. Fraijanes Lagoon, set amid grasslands, forests, and strawberry fields, is particularly idyllic. There’s another attraction you may not associate with a rural setting: Good restaurants abound. Get up early to enjoy the sunrise and a cup of delicious coffee alongside warm bread and natilla, the local sour cream.

Expect no less than over-the-top extravagance at Laucala, a resort island in Fiji with its own rental submarine. Nestled between pristine beaches and lush forest, the peaceful town of Watamu is ground zero for water sports in Kenya. One of Kenya’s most renowned kite-surfing schools, Tribe Watersports, is based here and offers three–day courses to get you skimming the warm waves of the Indian Ocean in no time. If you’re happier underwater, Watamu will also appeal. A maze of rich coral reefs skirts the shoreline, so giant turtles and exotic fish can be seen year-round, and at certain times of the year majestic whale sharks pass through this region, making it a snorkeling and diving haven. The lush green forest, soaring trees and various lakes are reason enough to spend the day meandering along Stanley Park’s well kept, well posted trails. Turns out the city has given you another reason: the Stanley Park Environmental Art Project. Six artists have installed ecologically sensitive art projects throughout the park, and we were lucky enough to stumble upon this massive sphere of ancient wood sitting peacefully between two ends of its former self. “We wanted to construct something that works within the missing section to accentuate the mass, the length and the essence of the entire ancient tree.” Keep your eyes open though, as some of these installations are set back and off the trail. This particular piece was discovered on the Lovers Walk trail somewhere near the intersection of the Tatlow Walk trail.

A three-day safari in Kruger National Park is a must for anyone visiting South Africa. Entering the gates is like Jurassic Park and you feel transported back in time to the creation of Earth where the wild animals, especially the elephants, are dinosaurs filled with ancient knowledge of the land’s beginning. Although you may not see anything like the infamous “Battle at Kruger” YouTube video, you will certainly witness some interesting animal behavior like hippos bathing, monkeys mating, giraffes snacking or even two elephants flirting in the brush.

Hungry hikers (known as hill walkers in Scotland) will find refuge at Monachyle Mhor, a 2,000-acre farm located deep in the middle of Trossachs National Park, just past the grave site of folk hero Rob Roy. The main draw of the 14-room pink farmhouse is the food: Chef-owner Tom Lewis, a rising star on the U.K. culinary scene, prepares meals sourced from the farm. The hotel also offers classes on baking bread and churning butter, and coordinates hunting trips and mushroom-foraging excursions. After a day exploring the land, retire to one of the comfortable rooms, equipped with fireplaces, steam rooms, and views of a loch.
