    “Are we still going to ride?” I ask, glancing at the storm rolling off the jagged peaks of the Absaroka mountains. Wrangler Dallin Maples, 25, responds by handing me a long, yellow raincoat as the first drops splat on the hard brim of my hat. “The trails up the hill will be too slick,” Maples says, “so we’re going exploring.” With that, he pulls his horse into the trees, and three of us follow.     The Review:
    Built by Frank Miller and Arthur Benton in the early 1900s, this regal stone building presides over Laguna Beach, echoing the area’s Spanish Mission roots with white stucco, red terra-cotta roof tiles, secret turrets, and spacious patios. Inside, renowned interior designer Martyn Lawrence Bullard enhanced the castle-like structure with hand-painted furniture, Moorish tiles and lanterns, and wainscoting worthy of a Marrakech palace, giving the hotel a bohemian vibe. He also added softer notes like oxblood-leather armchairs and cerulean velvet couches that echo the blue of the Pacific below. Despite being a registered historic structure, Casa Laguna became the area’s first hotel to receive the Green Eco-Leaf rating from iStayGreen.org. Its sustainable initiatives range from bulk amenities and soaps to low-energy lighting and water-efficient landscaping.

    The 23 suites all feature custom marble vanities, handcrafted natural fiber mattresses, and Martyn Lawrence Bullard fabrics and wallpapers. Expect beautiful attention to detail at every turn, from Dean & DeLuca snacks to Cowshed amenities made famous by the spa in Somerset, England. If you’re visiting for a special occasion, book the Bungalow, a freestanding, 600-square-foot sanctuary that offers ocean views from the living room and jetted clawfoot tub. It also has a large private balcony with a hammock for two.     Housed in a converted elementary school dating back to 1915, this sprawling hotel complex has long drawn out-of-towners and local Portlanders alike with its bars, restaurants, miniature movie theater, and even a heated soaking pool that’s open to the public for a small fee. While these amenities—along with the hotel’s sprawling school grounds and proximity to the popular Alberta Arts District—are enough to make it one of the most attractive spots to stay in town, its real cred shines through in the 57 guest rooms, many of which are actually converted classrooms (and still have some of the original scholastic features, such as chalkboards, integrated into the room design).     In a city where gold-spired temples are much more ubiquitous than green space, Lumphini Park is a veritable oasis in the heart of Bangkok. Established by King Rama VI in the 1920s and completed after his death, the 142-acre chunk of tropical greenery is a treasured spot. One of the few parks of any size in central Bangkok, Lumphini is well used: In the morning, tai chi practicers arrive, while in the early evening, joggers monopolize the main path that runs around its perimeter. Even so, there’s ample room to get away from the crowds here. More than 30 species of birds flit among the park’s giant trees, and monitor lizards and turtles inhabit its waterways. Other attractions within the park include a public library, a youth sports center, and swan paddleboats in the man-made lake.

In this case, it was Kristan and William Kirby Farmer who moved to Hudson and transformed a 19th-century structure into a 13-room inn. Spread across two main buildings, rooms feature a mix of dark grays, browns, autumnal oranges, farmhouse reds, and the occasional plaid pattern on the chairs and sofas. A few annexed suites off to the side also include full kitchens with sleek appliances like ovens and stoves. The on-site restaurant is open Tuesday through Sunday and offers a constantly changing menu of meat and seafood dishes, plus a daily happy hour with seasonal cocktails.

But the first new casino Downtown in more than 50 years also celebrates Vegas history: The design harkens back to Old Vegas dramatics, with art deco lighting in the high-limit areas of the casino and images of old-school gamblers inside the elevators. Owner Derek Stevens has even given a new permanent home to Vegas Vickie, a two-story neon kicking cowgirl who once graced the nearby stretch of Fremont Street known as “Glitter Gulch.” Vickie presides over an open foyer, seemingly nodding at guests as they wander around the casino.

    Guest rooms at Circa—512 in all—have dark wood accents and carpets with geometric art deco motifs. Rooms in the Flex King category are equipped with king-size beds and couches that disappear when a second Murphy-style bed is pulled down from the wall. Floor-to-ceiling windows offer epic views of either Stadium Swim or the Fremont Street Experience, a covered pedestrian walkway that forms the cultural and entertainment center of Downtown and was the main drag in the Vegas of yesteryear until the destination expanded with mega resorts to the south. The hotel also is a short walk from the unmissable Mob Museum, which offers a peek into the history of organized crime and runs a moodily lit speakeasy bar in the basement.

Kick things off with crispy Brussels sprouts or scallops with jalapeño salsa, then move on to sushi, hand rolls, or Wagyu beef. Save room for the Bento Box dessert with green tea ice cream and chocolate flourless cake. Or go old-school, if it’s on the menu, and order the mochi pound cake backed by yuzu-cherry jelly and peanut butter ice cream.

    Myrtle Allen is Ireland’s answer to Alice Waters: The centenarian chef has lobbied the Irish parliament for better food policies, earned some Michelin stars, and, 50 years ago, opened a restaurant called the Yeats Room in the town of Shanagarry, an hour east of Cork City. She eventually added bedrooms upstairs and called it Ballymaloe House, and her sous-chef-turned-daughter-in-law, Darina Allen—who has written canonical Irish cookbooks and helped lead Ireland’s Slow Food movement—tacked on the Ballymaloe Cookery School and farm two miles from the main house.

    This is thus the seat of Ireland’s food royalty, and it shows. The restaurant spins flavorful dinners out of whatever comes in from the farm or East Cork’s fishing boats, and the cookery school has become known the world over for teaching expert and novice chefs to make pizzas, ferment pickles, cook baby food, and grow fruits, vegetables, and herbs. Even without all that, the ivy-fronted house—and cabins and cottages on the farm’s grounds—make for a simple, pleasant country retreat.
