Designed by Stephen di Renza (creative director at the Jardin Majorelle boutique in Marrakech), the space has a monochromatic vibe that’s offset by stunningly beautiful plates of food that include innovations like duck confit on herb “meringue,” cured shark on Moroccan corn bread, and grass-fed beef adobo and potato hearts. This is a bright new chapter in Fes’s culinary evolution.

Cooled by ocean breezes, the spot may feel like a bit of a dive to some, but its fish comes straight from the sea—in fact, you can watch from the restaurant’s perch on the pier as fishermen pull in their catch. The menu reflects whatever the boats bring in that day, often snapper, wahoo, or even barracuda, and includes savory sides like banana hasa (plantains), pan bati (corn bread pancakes), and funchi (fritters). Be sure to also try the shrimp; the peel-and-eat delicacies are always cooked to perfection. Note: The restaurant is closed on Mondays.

The curryhouses on Brick Lane will ladle out masalas and rice until your belly’s ready to burst, but for a different take, try Dishoom, which operates in five different London locations (and Edinburgh) and specialises in the finger food of Mumbai’s Irani cafés: a fabulous array of grills and snacks, from the delicious lamb kebab to the moreish keema pav (minced lamb or chicken), served on a bun in an environment that recreates the décor of the colonial railways. If you can make it here for breakfast, the bacon naan roll or the spicy scrambled eggs are the perfect way to set up your day.

    Quinta da Pacheca is the poster child of an ancient winery being adapted to the modern demands of the modern wine traveller. The main houses in the centre of the estate was recently renovated into a chic - boutique - luxury wine hotel. It very elegantly mixes some modern and contemporary elements in a way that one can understand that the owners never lost touch with the Quinta’s heritage. The restaurant is proudly served by Chef Carlos Pires, a man from the interior Northwest of Portugal (Trás-os-Montes - my favourite part of the country) so traditional bold Portuguese flavours are in the main driver in an elegantly plated menu.

    The plaza of Place Seffarine, dominated by the entrance to the al-Qarawiyin Library and a sturdy old tree, is one of the most pleasing areas in Fes. As you approach, you’ll hear the sound of the copper beaters tap, tap, tapping away. It’s well worth perusing the stalls to find high-quality cookware to take home, such as pixie pans for boiling milk for your coffee, copper tagines and teapots, and prettily etched bowls for use in the hammam. Stop at the café for seriously strong coffee and to watch the world go by, or scoot around the corner onto Derb Chouara for hot, sweet mint tea spiked with various other healing herbs at a hole-in-the-wall where you’ll rub shoulders with local craftspeople taking a break from their labors.

    This deep, steep canyon literally hides beneath the state’s surface, though the main park entrance is just 12 miles east of Montrose, Colorado. For two million years, the Gunnison River has been working at the earth here, resulting in a “vertical wilderness of rock, water, and sky” that has been designated as a National Park since 1999 (it was known by the Ute and protected as a National Monument for many years before that as well). There are several entrances to the park and three choices of campgrounds, some of which accept reservations, the rest first come, first served. South Rim Campground is probably the most accessible, family-friendly choice, while North Rim is the more remote. Always ask if the local astronomy club will be setting up, to take advantage of some of the blackest skies in America. Also consider a boat tour of the upper Gunnison River and fishing in its Gold Medal Trout waters.

    Around 1.6 kilometers wide, this hanging glacier has a dramatic 76-meter-high face. Big and beautiful, the river of frozen water flows 1.8 to 2.4 meters daily and very actively sheds icebergs. Those fragments contain compacted snow that fell 75 to 200 years ago, before half the states had even joined America. Presiding over the bay’s extreme northwestern end—perpendicular to the Grand Pacific Glacier—Margerie Glacier serves as the turning point for many cruise ships.
