    The Argentine restaurant that took Sydney by storm in 2010—and even rose from the ashes of a fire that originated in its charcoal grill—finally outgrew its Cleveland Street Surry Hills digs and reopened on Holt Street in late 2016. The old parilla and asado fire pits were transplanted to the new location, this time positioned behind the counter of the open kitchen, and the rockabilly vibe lives on, albeit in a bright, plant-filled, parquet-floored space decorated with vintage sports and movie posters. Old menu favorites like the grilled Wagyu skirt steak and deep-fried Brussels sprouts can now be paired with a seafood cocktail, or wood-fired pumpkin tamales smothered in mole. End with the flan or melon ice cream served in the rind.

    I can think of worse places to be stuck than Bozeman, Montana. And when my flight was recently cancelled, stranding me there for two days, I decided to venture downtown and check out Plonk Wine Bar. Plonk is a term that refers to a poor quality wine. But the 600-plus bottle wine list here was full of surprising selections, like the Celler Cal Pla Black Slate—a blend of Garnacha, Cabernet Sauvignon, and a bit of Merlot and Syrah from Spain‘s Priorat region. Equally impressive are Plonk’s cocktail and craft beer selections. I snagged a seat at the bar, took in the cowboy-meets-wine country ambiance, and ordered a glass of Torrontes from Argentina. The bartender suggested I pair it with a decadent dish of seared scallops with foie gras and braised short ribs. It was exactly what I needed to make my travel frustrations disappear.

    Nestled into the base of Mount Sturgeon, at the southern entrance of Grampians National Park roughly three and a half hours from Melbourne, the Royal Mail Hotel combines a bush experience with world-class food and wine.     The 20 de Noviembre market has a variety of food stalls where you can sample many Oaxacan specialties, but carnivores flock to the one corridor that’s known as “El Pasillo de las Carnes Asadas” (the grilled meats aisle). Follow your nose to find it: smoke and the smell of meat grilling are thick in the air. You can select the raw meat that looks best to you and have it grilled to your specifications as you watch on. Find a spot at one of the long tables with benches and order salsa and guacamole to accompany your feast. Buy some tortillas from one of the passing vendors, and enjoy!

    Hike into Bear Canyon on the northeastern edge of Tucson, and you’ll be rewarded (most of the year) with a view of Seven Falls, gushing out of the Santa Catalina Mountains. Even though the hike in and out is around seven miles, it’s mostly flat. You’ll find that, as you’re zigzagging across the creek on large boulders, with cliffs above the cacti all around, traffic and strip malls are a world away. When you arrive at the falls, the rushing waters are a balm for the soul. Midwinter through the middle of spring is a good time to visit this oasis; the higher-elevation snowmelt guarantees flowing water and the daytime temperatures are comfortable. Midsummer monsoon rains can also fill this canyon, and flash floods can be a sudden danger.

Besides serving their versions of som tam, a gargantuan barbecue produces beautifully smoky grilled chicken wings. While these are the stars of the show, the restaurant also does a winning line in other classics from northeast Thailand such as kor moo yang (grilled pork neck).

On sunny weekends, you’ll bump into locals with their dogs in tow.

    It’s about a ten-mile round-trip, but a summer hike up to Goat Lake in the Central Cascades will reward you with a glacially-colored mirror of snow-clad crags and distant waterfalls. An easy day-hike from Seattle (if you get up early), it’s also just low enough in elevation so that the trail is usually snow-free by late spring. The day I went, my friend and I had the trail almost to ourselves...Switchbacking up through the dark woods, the roar of McIntosh falls lets you know you’re almost at the top...and then you emerge from the woods into the lake-filled clearing--ethereally colored by the glacially-ground rock particles in the water... We met a couple of guys who’d spent the previous night camping above the alpine lake. Then a crew of Forest Service summer workers arrived, with good spirits, ready advice, and machetes for trail-maintenance. It’s about a 1hr45min drive to the trailhead from Seattle.

    In the foothills of the Sangre de Cristo Mountains north of Santa Fe, the village of Chimayó has become famous for its adobe church, “El Santuario,” whose side chapel’s dirt floor is reputed to have healing powers. Every Good Friday, tens of thousands of pilgrims make their way to this “Lourdes of the Southwest.” Others descend upon this valley for more temporal reasons. Just down the road from the Santuario is the century-old adobe home that houses the “Rancho de Chimayó,” a New Mexico institution. Owned by the Jaramillo family, this restaurant is known for its carne adovada--pork that has been stewed to tenderness in red chile. You may or may not believe in the power of the dirt in the Santuario’s floor, but the taste of this valley’s chile will have you convinced that the terroir--the taste of place--deserves its venerable reputation. Get the “combinación picante” so that you can sample a tamal, rolled cheese enchilada, beans and posole along with the carne adovada. And don’t use all of your sopaipilla (the steaming square of puffy frybread) to soak up the chile; save a corner so you can douse it with local honey as a dessert... Chimayó is an easy forty-minute-drive from Santa Fe, on “the high road to Taos.” Across the road from the restaurant is a B&B, run by the same family as well.
