    Award-winning chef Nobu Matsuhisa spent most of the 1990s and 2000s growing an empire of Japanese restaurants around the world. These days he’s expanding his global portfolio of hotels, too. This ultra-luxurious property, which occupies a separate tower inside Caesars Palace, was the first Nobu Hotel in the world when it debuted in 2013. It set the tone for the hotel group’s signature Japanese-inspired aesthetic that feels simultaneously traditional and modern. Refreshed in 2022, the 182 guest rooms draw design inspiration from kintsugi, the Japanese art of repairing broken pottery with gold epoxy. Corridors feature carpets with patterns inspired by suminagashi —the Japanese art of paper marbling. For those who favor smaller-scale boutique hotels, this hotel-within-a-hotel concept here makes the place feel intimate—not unlike a Japanese ryokan.


    The over-the-top design experience begins at check-in, which happens in a diminutive stand-alone lobby decorated with hand-hewn wood blocks. Elevators automatically read your floor with a scan of a room key, a nice touch that surprisingly hasn’t caught on elsewhere around this hospitality-minded town. Of course, adjacent to the lobby, there’s also a Nobu restaurant—the largest in the world. The restaurant offers teppanyaki-style dining where chefs prepare every course right in front of you, along with classic Nobu dishes such as miso black cod and yellowtail jalapeno sashimi.

    From its new location on the Singel, Supperclub maintains the old traditions of one of Amsterdam’s most innovative nightclubs. In few other upscale restaurants can you take off your shoes, get in an oversize bed with friends, and savor an unconventional five-course meal over the course of an evening. But supperclub is not for everyone. Part culinary journey, burlesque/vaudeville club, cocktail bar and experimental free state, it’s a unique if somewhat pricey venue for a fun, quirky evening with friends or business colleagues. When not wintering in India, flamboyant Howie may greet you, ushering your posse to La Salon Neige, where you’ll scoop courses from hospital bowls, ash trays and sensual models dressed in slices of Carpaccio, brandishing salad dressing in syringes and deep-fried cricket tidbits—crunchy croutons! Opt for the upper level lounge and you can watch from above as dykes, belly dancers and aerial artists perform. Don’t worry about crumbs in bed; get into the act while the drag queens vamp and the dancers swirl. Between courses, enjoy a Lavender Love or Leap of Faith cocktail in the Chapter 21 bar. Or venture to the downstairs smoking room that doubles as a gay toilet. While puffing on a joint, don’t be surprised if spontaneous music erupts or locals engage you in conversation.     This elegant family-run restaurant in the charming village of Sulzburg was founded by Hans-Paul Steiner and his French wife, Claude. Today, it’s helmed by their daughter, Douce Steiner, who, after learning the ropes from her father and then training in France, is now the only female chef in Germany with two Michelin stars.

    Simply decorated with antique furniture, cozy carpets, and wooden walls hung with photos, the restaurant keeps the focus firmly on the food. The traditional menu ranges from fresh sea bass, turbot, and red mullet to duck, quail, and desserts like a divine chocolate cake with locally grown cherries, while the wine list showcases some 500 labels (Claude still works as the sommelier). Should you want to make a weekend out of your visit, head upstairs to the associated hotel, which offers comfortable rooms and breakfast in the restaurant every morning.

    When you eat at Casa Tua you are more than a guest at a restaurant. They make an effort to make everyone feel like they are visiting the home of a friend. Split into two levels, the top level is for members only. The bottom level is open to the public for dining and even though you may not be a member you are still treated like family. The kitchen is an open kitchen with viewing windows. The menu is designed as a four course Italian meal. Start the night with their famous Bellini and antipasta.. Their Burrata is to die for and melts in your mouth. Move on to the first course, or primi platti, with a paired wine that their sommelier can help you choose from their excellent wine list. After that, although you feel like you have already had a full meal, there is the main course of meats, fish and poultry. Hopefully you saved room for dessert because you won’t want to miss their Tiramisu.

    You’ll want to block off at least three hours of your day for a meal at n/naka, Los Angeles’s temple to the elaborate, multi-course traditional Japanese feast known as kaiseki. Chef-owner Niki Nakayama—one of the world’s few female kaiseki masters and a James Beard semifinalist—has created an intimate, authentically Japanese space for up to 26 guests to savor one of two 13-course tasting menus. In a serene setting of minimalist, hand-built furniture, the Japanese American chef serves up a parade of vibrantly colored, elaborately plated dishes, each made with hyper-local ingredients. A typical menu begins with a modern take on sashimi and then proceeds through a series of innovative vegetarian, fish, meat, and dessert courses. One stop-you-in-your-tracks favorite: the Shiizakana (which translates to “not bound by tradition, chef’s choice”), in which spaghettini is twirled with abalone, pickled cod roe, and Burgundy truffles. At the end of the meal, chef Nakayama and sous chef Carole Iida-Nakayama emerge from the kitchen to greet each diner. Pro tip: Plan ahead. A two- to three-month waiting list means you need to be flexible with early or late dinner times.

    We absolutely loved the energy and atmosphere at Myoga, the 100-seater restaurant at The Vineyard Hotel & Spa. Chef Mike Bassett serves a dining extravaganza of seven courses paired with South Africa’s finest sparkling, white and red wines. You’d think with seven courses to choose from, decisions wouldn’t be so tough. But OMG. Gorgonzola creme brulee or kaitafi prawn? Roast leek or chilled avo and cucumber soup? Springbok medallions or duo of lamb? To top it off, Pearl Oliver, our most excellent sommelier, beautifully described the attributes of each pairing.     If you’ve been to Fès, chances are you’ll be familiar with the original Clock. This is the second in owner Mike Richardson’s growing empire, this time housed in a converted schoolhouse in the Kasbah. Like all of his projects, a keen eye for line, color, and detail has turned the space from utilitarian into eye-popping as Richardson invites local street artists to bring life and color to the walls; junkyard finds and vintage Berber cushions provide the decor. It’s a popular hangout for both young Moroccans and those traveling through, with regular cultural events, including its famous storytelling nights that spotlight the best raconteurs from the Djemaa el Fna, translated by youngsters learning the craft, to traditional cooking schools to Gnawa musicians giving it their all in tribal trance for Sunday sunsets. But, of course, no visit would be complete without sampling Cafe Clock’s signature, legendary camel burger.

    Situated at the top of the hill on Park City‘s iconic Main Street, the Italian restaurant Grappa occupies a beautiful 100-plus-year-old renovated building that over the years has been a brothel, bar, and bed-and-breakfast. The name comes from the Italian brandy distilled from the leftover grape skins, stems, and seeds from the winemaking process. And, of course, Grappa serves it! Founder and owner Bill White blends French culinary influences with regional Italian dishes to bring bold and delicious flavors to his customers. When the weather is appropriate, there are five levels of patios, complete with plants and water features for alfresco dining.

    The food is as authentic as it gets at this Sichuan restaurant, which is part of the Sichuan provincial government’s Beijing office. Sichuan is known for its fiery cuisine, but if some in your party prefer things a little less piquant, Chuan Ban has a number of dishes that won’t quite set your mouth on fire. You can’t go wrong with mapo doufu (squares of white tofu suspended in chili oil) and lazi ji (diced fried chicken under a mountain of chili peppers). Suancai tudouni (mashed potato with pickled cabbage), scallion pancakes, gan bian siji dou (sautéed green beans), and, of course, a small bowl of rice per person cool your tongue.

    It’s the chef who has carte blanche at this aptly named eatery, which feels more like an intimate dinner party than a restaurant. There’s just one seating each evening (except Sunday and Monday) for 14 guests, who each take a spot along the curved bar facing the open kitchen. Chef Dennis then prepares and plates a five-course tasting menu before diners’ eyes, with dishes changing nearly every night. Expect anything from ceviche as an appetizer to seared beef tenderloin for a main course, plus creative desserts. Note that Carte Blanche cannot accommodate vegans or vegetarians.

    More than 10 years in the making, the Museo de la Memoria y Tolerancia (Museum of Memory and Tolerance) may seem somewhat out of place if you don’t know much about Mexico City‘s immigrant population and the capital’s role in Jewish history... and that’s one reason the museum is worth a visit. In addition to explaining how the city’s Jewish population burgeoned during the mid-20th-century, and, of course, memorializing the Holocaust, the museum features permanent exhibits documenting genocides that have occurred elsewhere, including Latin America and Africa. Themes are somber, of course, but the aim is to prevent future episodes from occurring by educating visitors about the importance of memory and tolerance.

    On a rainy summer night (thunder! lightening!), we had very low expectations of getting a table at Balthazar’s Keuken—mostly because something I read said that it was hard to get in. But there was a table, right in the back by the open kitchen, waiting for us. (The photo is of our view of the kitchen.) They serve a fixed menu. First course was a platter of appetizers, including paprika-y sobressada on bread with fried sage, beautifully anchovy-laden fried artichokes, shrimp in sage butter, and smoked mussels. For the second course we had a choice of fish (they called it red bass, not sure what that is but it was great) or meat (veal in a hearty sauce). And dessert was fresh strawberries with mascarpone laced with ginger.
