When the Evok Collection opened Brach inside a former postal sorting facility in 2018, the hotel was an instant hit. Now, this residential corner of the posh 16th arrondissement is the cool rendezvous spot for in-the-know Parisians. The energetic vibe starts with the design, courtesy of Philippe Starck’s famous melange of styles—an African mask here, a sculptural lamp there. This warmth infuses the 59 guest rooms, done up in a marvelous mix of marble, leather, and wood. The city’s glitterati rub shoulders at the popular (and family-friendly) brunch and covet memberships at the next-level sports club, styled as a 1930s boxing club, complete with a 72-foot pool. Come summer, the rooftop terrace turns into a trendy hangout with 360-degree views of the city from the vegetable garden and henhouse. A-ji-shi is a stand-up sushi bar located in Taipei’s Shidong Market. There’s only a fixed menu and it is pricey by local standards. But the fish is fresh and the sushiman well-trained.

On Puerto Rico, horses roam the farms, the mountains, the town centers—and also the beaches. A couples’ horse ride at sunset is a perfect way to kiss the day good-bye. With Tropical Trail Rides, in the northwestern municipality of Isabela, you can take a two-hour ride through the forest and by the beach as the sun sinks down toward the water. On the North Shore of O‘ahu, Turtle Bay Resort is the only hotel of its caliber on this less developed part of the island. Set on a 1,300-acre property—half of which has been set aside permanently for conservation—the 408 rooms and suites all have ocean views and a neutral/blue palette inspired by the surrounding area. The resort doubles as a wildlife sanctuary. A birding experience via electric golf cart led by Captain Scott Sundby, who runs Shaka Kayaks and has lived on the North Shore for 20 years, offers a glimpse at some of the wild residents. They include the ‘alae ‘ula, or Hawaiian common gallinule, which according to Hawaiian legend got its fiery red forehead from the gods, and Hawaiian monk seals, one of the world’s most endangered seal species. The coastline here is set within the Hawaiian Island Humpback Whale National Marine Sanctuary, extending more than 1,200 nautical square miles; in the winter, it’s the site of humpback breeding, calving, and nursing.

No trip to D.C. is complete without ordering the district’s signature dish, the half-smoke. And while many restaurants serve it, there’s only one worthy of your order: Ben’s Chili Bowl. The popular landmark diner has been feeding the community and cultural icons since the area’s “Black Broadway” days, when jazz greats such as Miles Davis enjoyed this comfort food classic. When riots broke out after Martin Luther King’s assassination in 1968, Ben’s remained open and served both police and protesters. While the U Street Corridor has undergone an urban makeover, Ben’s has remained the same, serving its quarter-pound of half-pork/half-beef smoked sausage on a bun with mustard and onions, all smothered in spicy homemade chili sauce. The prestigious James Beard Foundation even took notice, deeming it one of “America’s Classics.” Bring cash and come hungry.

The trendy Amsterdam-Noord district is home to the city’s newest outpost of the famed burger joint called the Butcher. Set inside the hip designer hotel Sir Adam, the sprawling, dual-level space is pure fun, with table tennis, pinball, billiards, and live DJs five nights a week. Open 24 hours on Fridays and Saturdays, and until 1 a.m. Sundays through Thursdays, this is where you’ll find chic young locals devouring gourmet burgers and fries and sipping fancy cocktails. The waterfront terrace offers excellent views of the IJ River. It’s a free five-minute ferry ride to the restaurant from Amsterdam’s main train station.

Latitudes is the acclaimed restaurant at the Sunset Key Cottages, on Sunset Key, a small private island accessible only by boat. Take the ferry across the Key West Harbor—your scheduled ferry time is your reservation time. The dreamy ride across the gulf waters sets the tone for the rest of the evening. While most restaurants in Key West have flexible dress codes, if any, Latitudes is a place you should break out the nice clothes. If the weather’s nice, ask to eat on the patio, which is decorated with twinkling lights wrapped around the green palms that surround the courtyard, and features tables set with white cloths and candles.
