    This is my favorite Scottsdale resort because it gets Southwestern style down without being kitschy or over-done. There are no cheesy dream catchers or Kokopelli statues here – just a color palette as bright and breathtaking as a desert sunset. Four Seasons Resort Scottsdale is perched in the city’s northern half, and surrounded by miles of Saguaro cacti and rugged rocks. Its location adjacent to Pinnacle Peak Park is perfect for hikers and if you crave more of an adrenaline rush, check out the high-octane tours from Arizona Outback Adventures. At Proof, the resort’s American canteen, dinner is practically a cross-country road trip with home-style comfort food inspired by, and sourced from, the 50 states. Plus, there’s a hearty list of wine, microbrews, and small batch and craft distilled American spirits. The Spa at Four Seasons also celebrates the resort’s sense of place with treatments like the Sonoran Honey Body Polish and Jojoba and Prickly Pear Polish.

    By all means, eat some grits ‘n’ greens down South...but don’t fall into the trap of thinking that all local food is fried when traveling in the region. Check out Manuel’s--one of the culinary highlights along the Savannah River in Hammond’s Ferry, SC. Originally from Lyon, chef/owner Manuel Verney-Caron has created a neighborhood gathering place that features local produce from literally just up the street at “Blue Clay Farm.” This community garden is one of the centerpieces of the “New Urbanism” that has built this pedestrian-friendly neighborhood near the site of a late-18th-century water crossing. Jog along the river, stroll on sidewalks within ‘conversation-distance’ of front porches, kneel down among the chickens and ducks--and make sure to end up at Manuel’s. The residents of Augusta, GA have voted Manuel’s as having the best bread in the city--you can chew on his loaves in restaurants around town and buy them at the Saturday morning Farmer’s Market at the Riverwalk. Technically, though, Manuel’s is out-of-city and out-of-state--but it’s a quick jaunt to North Augusta, SC. Go to the source, and there’s much more than bread: duck confit and croque-monsieurs are served along with burgers and pulled-pork BBQ at lunch; a more substantial taste of France can be indulged at dinner in this bouchon-inspired interior. Most visitors to Augusta come for The Master’s Golf tournament; leave the chain-restaurants around the Augusta National--the drive to SC is worth it.

    Conveniently located near the subway, museums, and upscale boutiques and galleries of Toronto’s swish Yorkville neighborhood, the Park Hyatt Toronto originally opened in 1929. Seventy years later, a south tower was added to the hotel, with the art deco–influenced lobby space linking the two. The spacious rooms have a soothing palette of pale peach, dusky pink, beige, and gold. The Annona restaurant has a similarly rich color scheme, boldly decked out in shades of plum and gold, with plush banquettes and floor-to-ceiling windows overlooking Yorkville. The 18th floor offers sweeping views over Queens Park and the CN Tower, but the main attraction may be the Roof Lounge’s bartender, Joe Gomes: He’s been shaking up cocktails here for the past 50 years, so guests can order a martini from a man who knows how to make them just right. A host of other extras, including complimentary town car service within a five-kilometer radius, free Wi-Fi, and even a kosher kitchen, add to the hotel’s charms.

    Built in the 1920s by a Croatian businessman, Palacio Astoreca underwent two years of refurbishment and restoration before opening its doors as a boutique hotel in 2012. The work was carried out to a meticulous degree, maintaining the original parquet floors, and adding splashes of color with art deco furniture and modern art, including one piece by Switzerland’s Frédéric Clot. The stucco-and-brick mansion rises up from the streets of Chile’s port city, Valparaíso, like a piece of red-and-white confectionary.

    A statement staircase winds up to the 23 rooms, some of which have stand-alone bathtubs. And the basement level is home to a small spa with an open-air, wood-fueled hot tub set alongside a living wall. The reception level and entrance hall open out onto a terrace where lunch, tea, and cocktails are served, allowing guests prime views over the hilly city and Pacific Ocean. There are quiet corners for those seeking a solitary moment, including a library and a piano bar, which comes to life in the evenings with live music.

    Consisting of 25 domes, EcoCamp was inspired by the round houses of ancient tribes that formerly inhabited the area now known as Torres del Paine National Park. There are three categories of domes, all made from green plastic with sheer windows. Standard domes feature twin or double beds and a shared, campsite-style bathroom. Standard domes don’t have central heating and can be nippy in the Patagonian climate. Superior domes have gas heaters and en suite bathrooms. The suite domes are similar to the superior rooms, but have wood-burning stoves (and the suite dome loft has two floors). Domes are connected by raised wooden walkways for minimal environmental impact. Communal meals and pre-excursion briefings take place in the central community dome.

That’s when the place is transformed by the unmissable presence of 90-year-old ex-showgirl Shirley Claire, who sings and brings a healthy dose of razzle-dazzle as she hosts Fabulous Bingo. In fact, most nights of the week have a theme—see Tuesday karaoke at the adjacent Amigo Room bar, half-off wine bottles on Wednesday, and Taco Jueves—so making reservations is a good idea, but not a must. If you wind up waiting for a table, grab an Orange You Glad To See Me—made with gin, orange, Chareau, and lime—and pop into the photo booth. With its stone wall, leather booths, and globe pendant lights, the diner (a former Denny’s) embraces the spirit of the sixties, while the menu offers a distinctly Californian twist on Southwestern and Mexican fare. Must-orders: For breakfast (served until 2 p.m.), opt for the desert classic Date Shake and Huevos Rancheros, made with California- and Coachella Valley–sourced ingredients. For dinner, try the Grilled Mahi Mahi Tacos or Desert Highway Burgers, and request the pickled jalapeños for added kick.

At the hotel’s three eateries, it’s all seasonal all the time, from the fresh morning juices to evening cocktails. That ethos peaks at the fine-dining restaurant Studio, where executive chef Craig Strong creates elegantly plated French-meets-California dishes using locally sourced fish and meat, along with vegetables picked from the hotel’s 1,000-square-foot garden. Pro tip: In a setting this transporting, you almost want to break into song. Good news—the hotel will rent out mini guitars to guests for the duration of their stay.

    There’s plenty to do in Paracas, from sandboarding in Paracas National Reserve to boating around the Ballestas Islands to flying over the nearby Nazca Lines—that is, if you can tear yourself away from the pool at Hotel Paracas. The 120-room resort was all but leveled by the 2007 Peru earthquake, but reopened two years later with a fresh new look, including a blue-taupe-and-white color scheme to reflect the surrounding ocean, desert, and sky. A great choice for families, Hotel Paracas features a children’s club and kids’ pool as well as three restaurants, including a casual seafood spot, an Italian trattoria, and a fine-dining option. Also on-site are two bars serving drinks and light fare, plus a spa and 24-hour fitness center. Guests even have access to complimentary bikes and water-sport equipment.

    Spread over six levels, rooms feature either terraces or balconies with garden or ocean views as well as spacious bathrooms with separate showers and tubs. Suites also include a dining area, and some even have private plunge pools.

    You want locally sourced? The sourdough starter at this East Austin restaurant was made using wild grapes foraged from a nearby alley and a recipe from the Chez Panisse cookbook. That should tell you almost all you need to know about Dai Due. A butcher shop and restaurant (may as well throw bakery in there as well), Dai Due was started by Jesse Griffiths, a chef who had previously run a supper club and a stand at a farmers’ market. The restaurant offers quintessential Texas food. All the ingredients are local, or only from about as far away as the Gulf of Mexico, and Griffiths has the sense to do just enough to let the ingredients shine while staying out of their way. Beet-cured onions add zing and earthiness to a killer pastrami sandwich, honey shines up a pork chop, and pickled cabbage enlivens the huge beef rib.
  • Set high on a mountainside between Aurland and Flåm, Otternes Farm is composed of a collection of farm cottages that date as far back as the 1700s, many preserved the way they were centuries ago. Pick up a map for a self-guided tour; the farm hosts traditional handicraft demonstrations that include dyeing yarn and brewing ale. They also serve local dishes (think pancakes with sour cream and raspberry jam) in a restored barn.

    (Note: Google insists this is Kamuela, it is Kohala) The lava coast of Kohala on the Big Island is dramatic. Waves dash against the black rocks relentlessly until eons from now they will be sand. True, there are fewer white-sand beaches per square foot of land on the Big Island than others in the Hawaiian chain, but the island is huge. Beaches here often hold secrets, are the sources of legends, and are part of the circle of life for creatures indigenous to Hawaii. There have been lava flows since the ahapua’a land divisions were formed, but from the very tops of the mountains running to the sea, most beaches remain intact. One of my favorites is in a little inlets fronting the Mauna Lani Bay Hotel on Makaiwa Bay called Keiki Beach. Not for much swimming, it is a sandy-bottomed dipper’s delight or, as the name states, a place for children (keiki) to play in. A tree for shade, sand, tide pools to explore, a canoe house (hale) covering a koa canoe nearby, and a friendly turtle (honu) who feeds here are all part of what could be a perfect day. There is surf off the point in winter and snorkeling in other seasons. You might even want to rinse off and have lunch at the Mauna Lani pool restaurant. Parking is a good 15 minute walk via a trail. Follow signs to public parking off Mauna Lani Drive, bring water and beach gear, and get there early. Of course you could stay at the Mauna Lani Hotel and Bungalows too. http://www.maunalani.com/

    The W Santiago is where the cool kids stay. Which other hotel would dare to have a sign reading “WHATEVER” at the entrance? Since opening in 2009, the hotel has earned a strong following, both from locals and visitors. Dimly lit with a color scheme of purples, greens, and black, the rooms are modern, with full-length windows overlooking the city. Located in Santiago’s financial district, officially known as El Golf, the W is part of a large skyscraper (hotel reception is on the fourth floor) filled with restaurants and shops. The 196 rooms reach to the 21st floor, and the W has arguably the best roof terrace in town (Hotel Noi Vitacura being a close contender). The roof terrace has an infinity pool, knockout city views, and a heli-pad for those who want to whiz off to wine country or hit the ski slopes in speedy style.

    The Review:
    Santa Fe meets Palm Springs at this bohemian resort in Paradise Valley. Designers saved the bungalows from the previous property, but added dramatic, low-slung buildings rich in glass and deep overhangs, plus an ample central pool and four conference venues. Inspiration came via icons Frank Lloyd Wright and Alexander Girard, who both retreated to the desert for its light and space.

    Guests looking to follow their lead can book one of the Andaz’s 201 mid-century-style casitas, which come complete with Eero Saarinen–esque womb chairs and marble walk-in showers. Suites include an additional full bathroom and spacious living area, while The Retreat—a cluster of accommodations perfect for weddings or corporate retreats—features 20 bungalows, including the 1,800-square-foot Albers House, surrounding a private pool. Throughout, decor draws heavily from the Cattle Track Arts Compound, a nearby nonprofit workspace for painters, sculptors, jewelers, potters, blacksmiths, and performers. (The hotel actually hosts artists-in-residence from the organization on a regular basis). Also on-site is the Palo Verde Spa & Apothecary, where treatments blend desert elements with locally sourced botanicals, and the inventive Weft & Warp Art Bar + Kitchen, with dishes inspired by the surrounding Sonoran Desert. When guests wish to explore farther, they can catch a ride in the hotel Tesla anywhere within five miles, including to Chaparral Park and Old Town Scottsdale.
