    Today’s Jaipur buzzes with plenty of modern restaurants serving international cuisine, but that wasn’t always the case—when Niros, which first opened in 1949, started serving Chinese fare in the 1960’s, for example, it was the first place in town to do so. Now, going on its seventh decade, the place is still a favorite for its classic décor, attentive service, and extensive menu, which takes you from northern Indian standbys like chicken tikka masala and veggie curries to dumplings, stir-frys, omelettes, and even mushroom stroganoff, as well as Indo-Chinese items like fried paneer in Sichuan sauce. There are extensive choices for both veg and non-veg diners, while the kids should like the old-school sweets like American Ice Cream Sodas and Knicker Bocker Glory sundaes.

    It sounds like a Portlandia sketch: the Northwest pizza joint with an on-site chicken coop, where you can get any pie topped with a soft-cooked egg. But Humble Pie is quite serious about their pizza (and their chickens); their goal is balancing Asian and Pacific Northwest architectural elements with sustainable urban farming. That means sunny wooden picnic benches right next to the outdoor coop, and sharing a table with new friends during their busy happy hour. The menu is heavy on local and organic ingredients, including the beer and cider selection. Our favorite was the pulled pork, pickled onion, and Beecher’s mozzarella cheese pizza — with an egg on top, of course.

    An authentic Latin American kitchen experience at a motel? That’s pretty funky! Chef and owner Raul Claros pays homage to his Venezuelan birthplace and Bolivian childhood by whipping up his mother and grandmother’s old family recipes. Headlining the menu are Bolivian salteñas—imagine empanadas on steroids—filled with a gelatinous beef stew to which he adds carrots, peas, onions, olives, egg, and roast chicken. Representing Venezuela are the arepas, ground corn cakes (grilled or fried) served plain or stuffed with combination favorites like roast chicken and avocado, braised beef in tomatoes and chili peppers, and grilled skirt steak with tomatoes, onions, and cilantro.     The food is as authentic as it gets at this Sichuan restaurant, which is part of the Sichuan provincial government’s Beijing office. Sichuan is known for its fiery cuisine, but if some in your party prefer things a little less piquant, Chuan Ban has a number of dishes that won’t quite set your mouth on fire. You can’t go wrong with mapo doufu (squares of white tofu suspended in chili oil) and lazi ji (diced fried chicken under a mountain of chili peppers). Suancai tudouni (mashed potato with pickled cabbage), scallion pancakes, gan bian siji dou (sautéed green beans), and, of course, a small bowl of rice per person cool your tongue.

Hoi An has many fine banh mi sellers, but among the top two are undoubtedly the holes-in-the-wall Madam Khanh (or Madam Queen) on Tran Cao Van Street and the always-busy Banh Mi Phuong on Phan Chu Trinh, popularized by Anthony Bourdain in his program No Reservations.

    Located along a stretch of coastline that’s sometimes called the birthplace of jerk cuisine, the Boston Bay Jerk Center is hard to miss. Various meats are cook on open pits using a technique that may explain why jerk never tastes so good at home: Uncured pimento logs are placed over a bed of hot coals, and the meat is laid directly on the green logs. The whole operation is then covered up by a sheet of corrugated zinc and cooked until it’s black on the outside and tender underneath. You can place your order by the quarter, half, or full pound. Don’t forget to add jerk sauce, which you can also buy by the bottle as a souvenir.

    With its exposed brick walls, small tables, and inventive Japanese fare, this Elmwood Village sushi spot is a restaurant you’d expect to find in Brooklyn rather than Buffalo. Still, chef Kuni Sato has run the local favorite since 1996, serving everything from traditional sushi and sashimi to daily specials with a modern twist. Don’t miss the Kuni’s Fried Chicken (chicken breast marinated in ginger and soy sauce, then deep-fried until perfectly crispy) or the impressive sake collection, imported directly from Japan. Guests can either grab a table, eat at the sushi counter, or belly up to the bar, but act fast when space opens up because this place is typically packed.

Traditionally spiced chicken and pork, as well as a less fiery fish version, served in a tin container along with rice and peas and festival bread (akin to hush puppies). While enjoying the delicious meal, you’ll get to observe the seemingly endless line of customers, and perhaps get a ringside view of a lively and noisy game of dominoes.

Natural light fills the entire space and you can brew a lovely cup of Kona coffee before leaving your room to face the world. A 2009 remodel of the main building rooms along with a 2013 beachfront wing renovation enable guests to unwind in the comfort of updated interiors that still remain true to Laurance S. Locals know that you say “beach access” at the imposing gate for those who want to swim in its clear blue water; check it out in North Kohala. Spectacular white sand beach with some shade trees. The 40 parking spots get filled by 9 a.m. or sooner so go early. It’s also good for boogie boarding.

    Comfort food doesn’t have to be heavy and drowned in grease: just try pho, the light and flavorful Vietnamese soup that’s much loved by Seattleites. Than Brothers is the local chain, with locations all around town, but the Capitol Hill one is one of their longer-established restaurants. First-timers can start with the classic #1, medium-rare beef, before advancing to options such as tripe and tendon; chicken, meatball, and vegetarian choices are also available. The “small” bowl is a hearty, filling portion for about $5, and comes with their trademark cream puff, but add on a Vietnamese iced coffee or tea for an extra sugar-and-caffeine rush. As their menu notes, pho is particularly good when you’re feeling under the weather — Vietnam’s answer to chicken noodle soup, perhaps?

    It’s easy to feel like one of the Mughal royals whose kitchens inspired the menus at this fine-dining restaurant, thanks to the impeccable service, serene garden views, and elegant decor of rich woods and plush fabrics. The food would do the palace cooks proud, too, with an extensive à la carte menu full of delights like perfectly marinated, charcoal-grilled kebabs (a mixed platter is available so you can try each of the tempting choices), Bengal prawn curry, stuffed banana chilis, Mughul-style fish curry, and quail simmered in sealed pots that are heated underground. For a signature experience, try one of the traditional Indian thalis—a three-course meal accompanied by tandoor-baked breads, homemade pickles, rice pilaf, and more sides—or one of the six-course tasting menus, which feature dishes that meld Indian and Western flavors; think lamb with quinoa, “24-carat gold” chicken, and apple fritters in saffron sauce.

    On arrival to Istanbul, many tourists order the chicken şiş (chicken kebab) for a meal because it’s familiar and safe, but they’re really missing out on some of the best food in the world! I encourage anyone visiting Turkey to gastro-travel through the country’s tasty cuisine and sample the many Ottoman dishes and succulent regional kebabs on offer. My favorite place to take guests is Fuego Cafe & Restaurant in Sultanahmet. Fuego opened in early 2012 and is fast becoming one of the most reputable restaurants in the tourism precinct. The outstanding service by owner-operators Can, Ali, Mehmet and Salih has earned the restaurant accolades. Try the Ali Nazik (minced beef on yogurt, eggplant and tomato mash), Hünkar Beğendi (tender lamb on a bed of smoked eggplant puree) or pilic dolma (stuffed chicken with a rich saffron sauce) and wash it down with a glass of Turkish wine from the comprehensive wine list. The restaurant is also open late, so pop in for a nightcap or two on your way back to your hotel. If you’re a coffee drinker, ask Can, a former barista, to brew you a cappuccino, latte, espresso, French coffee, Irish coffee, or even a herbal tea. Fuego welcomes guests for breakfast, lunch, and dinner all through the year and can accommodate people with food intolerances—just ask your waiter for recommendations.

    The craft cookies, cakes, and ice cream churned daily here from local milk and fruit are as creative as they come. Ask for a nostalgic Australian treat, and you might be offered a Mit Mat (a ganache-filled play on the Tim Tam), a Ro-Vo (a room-temperature spin-off of an iced VoVo), or a Jatz pie (like a caramel slice topped with a mosaic of Arnott’s Jatz crackers). The bloke behind the brilliance is none other than Alistair Wise, son of cookbook author Sally Wise, who spent a stint working with Gordon Ramsay. This emporium of happiness—and envy, to be sure—also whips up scrumptious savories including a mean scallop pie and a buttery poached chicken “sanger” with bacon, lettuce, hummus, mayo, and hard-boiled egg.

    Like many of the hippest bars in town, Mary’s is intentionally hard to find. As you make your way down King Street, hang a right on Mary Street and look for a bar on the left with no sign and a rocker crowd. Inside the two-story tavern, a chalkboard menu lists enough craft beers (including the house-brewed Slayer Juice), wines, spirits, and cocktails to require a second chalkboard for fried chicken and burgers (known as the best in town). Get your birds by the half, whole, or “Larry style”—two whole birds deep fried with mash and gravy—and your burger with “trashcan bacon.” Mary’s also does a bacon Bloody Mary with American cheese melted over the rim of the glass that’s more than worth a try.

    There are two Min Jiangs in Singapore, and both are set in lovely heritage buildings: one in the early-20th-century Goodwood Park Hotel, and the other in Rochester Park, a cluster of colonial-era black and white bungalows repurposed into restaurants. Min Jiang’s menu is packed with Sichuan and Cantonese classics, but the big star is the wood-fired Peking duck served with traditional pancakes, crispy slivers of skin and meat, and sweet bean sauce. Still hungry? The hot-and-sour soup, prawn-and-pork stir-fry, and lobster with eggplant and minced chicken in Sichuan chili sauce are also irresistible. If you’re dining with a significant other, grab a table outside on the veranda: The candlelight and tropical foliage create a romantic and cozy vibe.
