    Blink and you might miss it. There’s not even a sign to alert you to Cantina Social, a hidden gem of a dance bar. It’s nestled into a vacant space at the end of an alley, wedged between two buildings in Monastiraki. By day, antique dealers and actors chat over coffee and cigarettes in the secret courtyard. After dark, the cool kids of Athens congregate at absolutely all hours to drink and groove in a low-key, intimate atmosphere. Simple but funky decor, intentionally inexpensive drinks, neighborhood regulars, and great music by resident DJs that veers wildly from indie pop to disco beats are standard; the occasional exhibition or event spices things up. Always open.

    Rooftop cocktail bars are a new craze in Athens, but this place was 20 years ahead of the curve. A prime Athens spot on a hot summer (or spring, or fall) night, Bios is a hybrid of watering hole and cultural center—the rooftop bar is legendary for perfect Acropolis views, but there’s a lot more going on inside: two music halls, a theater, rehearsal rooms, exhibition areas, and additional hangout zones. Events are well-visited by the Athenian cool crowd, but the atmosphere is relaxed, not contrived. Come for culture, company, and sweeping views over the city’s rooftops, under the stars of the warm Greek sky.

    A Niçoise institution for nearly 100 years, Chez Pipo specializes in socca, a chickpea-flour flatbread that comes out of the restaurant’s wood-fired ovens looking like a giant pizza. Their motto, “Aqui si mangia la socca,” says it all—socca is the only dish they serve, alongside a selection of Provençale spreads like tapenades made with anchovies, artichokes, olives, or sun-dried tomatoes. Seating is on a large terrace during summer months or in a wood-trimmed dining room for shade or winter dining. The line outside can get long, but because of the simple menu and well-trained staff, the service moves quickly.

    On a pine-covered summit overlooking the sprawling city of Nice, Mont Gros, a 19th-century observatory, is a local icon. Built by Charles Garnier (famous for his Paris Opéra design) in collaboration with Gustave Eiffel (yes, that Eiffel), the monument has inspired film location scouts and is popular with local couples who come to take in the stunning view of the city together. The observatory is still an active science laboratory focusing on astronomy, astrophysics, and geoscience. The original 18-meter-long lens is responsible for finding 2,000 previously unrecorded double stars. There are two-hour guided tours on Wednesdays and Saturdays year-round, with a more frequent schedule during school holidays.

    Down a cobblestone street and through a stone arch, a narrow terrace and lovely fig tree mark the entrance to Le Figuier de Saint-Esprit. Famous both for his magnificent mustache and exceptional cooking, chef Christian Morisset guides your appetite on a culinary adventure with creative dishes that zing, like a salty-sweet sautéed foie gras with figs or teppanyaki branzino. The chef’s sweets do not disappoint, either, particularly the wild strawberry parfait and the molten chocolate cake decorated with a white chocolate jasmine tea heart.

    One of the best dining deals on the rather posh, relatively expensive Riviera can be found in a school that prepares future chefs, servers, and sommeliers who will eventually work at the pricey coastal restaurants. On Tuesdays and Thursdays, the school operates three restaurants, one with a 10-euro menu, the second with a 15-euro menu, and the chicest with a three-course lunch at 20 to 25 euros. All three offer panoramic views of the city, and delicious food prepared and served by students who are carefully overseen by strict-looking professors. The afternoon may become a cultural exchange as servers practice their English with guests. Reservations are required.

    Perched like an eagle’s nest in the lower Alps, just steps from Italy, this 1930s landmark restaurant faces a stunning rainbow of blues in the expansive view of ocean and sky just beyond its vertiginous glass walls. Taking inspiration from his own heritage and his international kitchen staff, Italo-Argentine chef Mauro Colagreco is making a name for himself for colorful cuisine that plays with contrasts of flavor and texture. Dishes often include an uncommon ingredient—the chamomile broth, for instance, or a combination of oysters, pears, and caviar; the bread served with a poem. The food is both pretty on the plate and a pleasure for the palate.

    Just steps from the sea, on the pine-shaded terrace of the Cheval Blanc St. Tropez (formerly La Résidence de la Pinède hotel), the Vague d’Or celebrates the riches of the sea. Chef Arnaud Dockele’s passion for the region is evident in each bite—and Michelin inspectors have given three stars to the kitchen to reward his creativity in dishes like spider crab in a citrus bath; a verbena-infused bouillon; and abalone served with locally grown onions. Pastry chef Guillaume Godin picks his inspirations from nearby orchards with desserts based on apricots and almonds and local lemons that make the perfect end to a meal under the stars.

    Overwater bungalows have become synonymous with tropical luxury, but Fiji’s main island, Viti Levu, curiously had none to call its own until this Momi Bay stunner opened in April 2017. Set on the island’s west coast, about 45 minutes from the airport, the 250-room resort features 114 luxury bures (wood-and-straw huts), including 22 that sit over a man-made lagoon, with vaulted ceilings and deep soaking tubs; all of the accommodations have balconies or terraces with expansive views, plus woven pendant lighting that resembles local fishing nets, crisp white linens, and dark wood accents. A kids club, indoor and outdoor play areas, and pool just for the small set keep little ones occupied while parents lounge at the spa or an adults-only infinity pool—the place to be during swim-up bar sunsets (another infinity pool is open to all guests). After your sundowner disappears, head to Goji Kitchen & Bar, a teak-and-rattan restaurant serving updated Fijian favorites like cassava-chip nachos and pineapple-glazed fish.

    The Stavros Niarchos Foundation Cultural Center (SNFCC)—new home for both the National Library and National Opera, designed by Renzo Piano and financed to the tune of €630 million—is a wonder to look at, walk through, and relax in. The library and opera are state of the art; the 42-acre grounds include a salt-water canal where you can learn to sail or kayak, fantastic playgrounds and fountains to keep kids entertained, and the Great Lawn where free concerts, open-air screenings and festivals are staged year-round. Take advantage of the center’s location and drink in the 360-degree views of the city and sea from the Lighthouse, a glass-walled lookout and terrace shaded by a vast solar panel that powers most of the sustainably minded complex. This neighborhood is, after all, called Kallithea, which means “wonderful view.”

    Though it doesn’t have the same rustic charm as the Bright Angel or El Tovar lodges—its neighbors on either side—the 1960s-era Thunderbird Lodge hasn’t lost that fun Mad Men vibe. Just yards away from the South Rim, it looks more like a college social sciences building from the outside, but the 55 updated rooms are comfortable and spacious, with geometric-patterned rugs and headboards, marble-topped furnishings, and stone-tiled bathrooms, plus creature comforts like satellite TVs, Keurig coffeemakers, and in-room refrigerators. Many have decent views of the canyon—a steal at only $20 more. And while there’s no restaurant on site, dining options at El Tovar, Bright Angel, and the rest of the village are only steps away. Best of all, the Rim Trail is right outside your door.

In addition to its shops, Plaza Paseo Cobá is home to several restaurants and bars with a trendy, bohemian vibe that’s far removed from the beach area’s bump and grind. Feast on artisanal Italian at indoor-outdoor Casa Sofia, or dance to live music at the Public Place.

    One of the first stops outside of Cusco was on the Anta plain at 12,375 ft. The 16th century ruin of Chinchero is rumored to be the birthplace of the rainbow. I would be hard pressed to argue those refractions of light could have a more beautiful beginning. A wonderful outdoor market overlooks the ruins and there are many weaving cooperatives to explore in the village. Locals work hard to preserve cultural customs speaking Quechua and wearing colorful traditional dress. By supporting the talented women and buying local you assist in making their lives more self sufficient through their craft. If you’re looking for colorful blankets, I thought this market had one of the best selections.

    Eating fresh seafood in an inland city like Denver is certainly a unique experience, but don’t let the distance from the ocean be a concern. Jax’s mission is to bring the coasts to the coastless, and it does so with aplomb. For the eco-minded, the restaurant is deeply mindful about acquiring ingredients from sustainable sources; it’s the first eatery in Colorado to be certified by the Monterey Bay Seafood Watch program. Jax encourages customers to be smart about their own fish purchases and recommends that patrons use the Seafood Watch app. You’d better believe, after taking that kind of care to bring the ocean to the mountains, Jax prepares everything to perfection. There are two locations in Denver to choose from—as well as two other Colorado outposts, one each in Boulder and Fort Collins.

    Beaver Creek’s credo is “Not exactly roughing it,” and Beano’s Cabin—tucked up on the ski hill itself—is a fun way to do dinner in any season. In the winter, you can arrive at the restaurant courtesy of an open-air sleigh; in summertime, you can take an hour-long horseback ride, a tractor pull, or a 10-minute shuttle van. Once on-site, adults enjoy a five-course menu, and kids under 13 have the option of a simpler three course-meal, featuring Rocky Mountain classics like roasted venison and Colorado lamb. As expected, being up on the ski hill makes for a beautiful view no matter the time of year, although the fall is particularly stunning. (Reservations required.)
