Sinseon Seolleongtang is a local chain that specializes in “seolleongtang” soup. The milky broth derives its subtle, soothing flavor from ox bone that’s been simmered for hours. Combined with tender beef brisket and sliced green onions, it becomes the ultimate comfort food. There's a debate on the origin of the soup. Some believe it was introduced by ancient Mongolian invaders who consumed boiled beef with scallions, eventually evolving into seolleongtang. Others argue it was created by the 11th-century leader, King Seonjong, who wanted to feed a large number of subjects with the least amount of ingredients after sacrificing a cow. Either way, this 24-hour restaurant has been a local go-to since 1981 for a breakfast, lunch, dinner, or hangover meal.
