    Opened in time for the 2000 Sydney Olympics, the Establishment is a pioneering 31-room boutique hotel housed in an 1890s steel plant near the modern-day stock exchange building downtown. Managed by the hospitality group Merivale—which started as a fashion house specializing in fascinator hats and mini skirts—the hotel is popular among brand executives who book the 328-square-foot Loft Penthouse for product launches and photo shoots. Rooms feature wood furnishings, swinging metal doors, animal hides, and suedelike daybeds as well as such amenities as Apple TV, Bose surround sound, and Lululemon yoga mats. Bathrooms are particularly luxurious here, with marble floors, freestanding tubs, Bulgari products, and tall windows that open up to Sydney’s bustling business district. The best part about the Establishment, though, is the internal access it offers to some of the city’s hottest bars and restaurants, which are housed within the same complex as the hotel.     One of the oldest restaurants in Park City, the “Double E,” as locals call it, opened in 1972. When I first lived in town in the mid-1980s, they’d have $1.95 breakfast specials of eggs and bacon. Can’t beat that. They serve breakfast, lunch, and dinner, but the stick-to-the-ribs breakfasts are what they’re really famous for. Try the signature Miner’s Dawn, seasoned potatoes with melted cheddar cheese, topped with basted eggs and served in a skillet with wheat toast.

    Established in 1917, this cantina keeps tradition alive while not shying away from new, trendy touches.     Tucked away above Mikkeller, a craft beer bar on a leafy backstreet, Upstairs has quietly established itself as one of Bangkok’s most exciting restaurants. Recognition of Korean-American chef Dan Bark’s skill came when French fine-dining bible Michelin granted the restaurant a star. Although functional and pleasant, the minimalist dining room gives scant notice of the elevated gastronomic experience provided by Bark and his team. A ten-course tasting menu changes regularly depending on the whim of the chef, featuring creative, unfussy dishes that Bark labels “progressive American” cuisine. If you are feeling flush, the best way to enjoy the food is to go with the beer pairing, which involves specially selected craft brews, cider, and mead.

Behind the bar at the Rose Estb is a shelf of jars hosting three varieties of each kind of tea: black, green, white, herbal, rooibos, oolong, and a category for an assortment of others, maté among them. This does not, however, compromise an attention to good coffee (the Rose sources it from San Francisco’s Four Barrel Coffee), which is still what most people come for. Open for brunch and lunch, the simple café menu includes frittatas, soups, salads, and sandwiches. The Rose is located on the southwest edge of downtown in a brick building that was remodeled by the owner, Erica O’Brien, and her father, and is deliberately Wi-Fi free.
