    When the Hôtel du Vieux-Québec poured nearly $3 million into renovating what was once an 18th-century nunnery in 2014, it was already recognized for its green leadership and sustainability: it’s the only carbon-neutral hotel in the province and the only one in Canada to use 100 percent biofuels. Today this boutique property on Rue Saint-Jean, convenient to all old-city attractions, furthers its ecocommitment with features like rooftop gardens that not only grow organic produce for its clients and employees but help with cooling. The hotel keeps five beehives as part of the Urban Honey Project, which helps pollinate city gardens, and the honey is used at the hotel restaurant. All of the 45 rooms and six apartments are unfussy yet comfortable, and even standard rooms have mini-fridges and a work desk. Guests are particularly fond of the continental breakfast basket that’s hung from your door each morning (so long as you book directly through the hotel) and the espresso maker and fresh fruit available anytime in the lounge.

    A Japanese man making Neapolitan pizza in Vietnam’s business hub might seem like an unlikely scenario, but it perfectly describes Pizza 4P’s. The restaurant now has multiple outlets, including one in Hanoi, but the original spot discreetly tucked away in an alley just off Le Thanh Ton Street is still the most atmospheric. The name is a nod to the owner’s wish in life—for peace—and informs his drive to deliver a pleasurable experience to diners. The pies, as popular with tourists as they are with Saigon residents and the Japanese expat wives who frequent the place on weekday afternoons, are ideal: charred, chewy, pliable crusts; tart tomato sauce; and creamy, homemade mozzarella, crafted by hand outside the city of Da Lat (for an unforgettable meal, order a pizza topped with a whole, unsliced burrata).

    When on the road in south or southwestern Morocco, you may notice a tourist bus that has pulled over and discharged a busload of passengers to run dashing through the trees with their cameras. What might be happening? The answer is simple: tree-climbing goats! Let me explain the trees first -- A huge cottage/co-op industry in Morocco is the production of argan oil, derived from the seed kernel of the fruit of the argan tree, endemic to Morocco. The argan tree grows wild in semi-desert soil and is extremely well adapted to drought and other difficult growing conditions of the region. The species Argania once covered much of North Africa but is now endangered and under protection of UNESCO. Argan oil is valued for its nutritional, cosmetic and medicinal properties, and could be considered one of the rarest oils in the world due the very small growing region. OK, now I’ll explain the goats. Goats love the fruit of these trees so much that they use their climbing ability to get far up into the trees to eat the fruit. Prior to the adoption of modern processing methods, argan oil was once produced by collecting the undigested kernels passed by the goats (sorry, just had to mention that!). Be sure to shop for some of the wonderfully rich lotions and creams made from argan oil; and look for handcrafted soap as well.

    One of the most beloved Vietnamese eateries in Saigon, SH Garden has lovely views of a pretty part of the city, but it has earned its following with dishes that celebrate the flavors of all the country’s regions, from north to south. Situated on the rooftop of an old colonial edifice at the intersection of Nguyen Hue and Le Loi streets, around the corner from the Opera House, it surveys a pretty part of the city with plenty of other colonial buildings nearby. Named for its owners Son and Ha, the restaurant doesn’t compete with the higher-price-point options in the city and instead serves good old mom-style cooking.

    A clifftop eco-hotel surrounded by 50 barely touched acres on the bucolic North Kohala coast, Hawaii Island Retreat feels as far away as it gets. There are no TVs in the guest rooms, no air-con, and Wi-Fi only in certain spots. Solar and wind power provide all the electricity, while much of the fruit and vegetables are grown right on the property. Resident goats and bees supply the cheese and honey. The inn has 20 simply-furnished bedrooms in the main house, overlooking groves of cedar and pine trees, plus seven yurts a stone’s throw away, so it’s possible—likely even—that a guest might spend days here and rarely see another soul. The owners, a local spa therapist and natural healer and her physician husband, opened the property in 2009 with the express purpose of creating a wellness-focused retreat, which is why guests can sign up for classes in yoga, tai chi, and meditation, as well as facials and massages. Outdoor massage tables, placed under a tent, overlook a deep green valley. There’s also a mediation rock. So health-minded is this little retreat that it’s become a popular spot for guests recovering from serious illness or simply in search of a detox. Various packages have a wellness or spiritual theme.

    Always a crowd, but how could it be otherwise? Shore panoramas frame breathtaking nature, turquoise seas and sugary, white sand. Mighty close to the perfect beach, dreamy and hot, with great sightseeing opportunities. Keep eyes peeled for jumbo starfish and other marvelous creatures, now a main beach attraction. The shopping’s good, too, especially for artisanal handicrafts and dishware.

    The colorful Po Lin Monastery was built more than a century ago in the secluded mountains of Lantau Island. In 1993, the 112-foot-high bronze Tian Tan Buddha, also known as the Big Buddha, was erected to face the monastery and north toward the Chinese people of the mainland. Since then, Po Lin has been on the tourism map. Seated on a lotus flower and with a raised hand delivering a blessing to visitors, the Buddha welcomes visitors to climb the 268-step base to share some expansive mountain and sea views. Have a walk through the grounds of the monastery, which include the new Grand Hall of Ten Thousand Buddhas and a popular vegetarian restaurant. Though you can take a bus, train, or taxi, the 3.5-mile Ngong Ping cable car is a thrilling way to get there.

    When eating at the Sea House Restaurant, it’s hard to decide what is actually better: the view of Molokaʽi across the water, or the Molokaʽi sweet potatoes used in the frittata. Either way, both combine for a memorable breakfast on the island’s northwestern corner. Opened in 1963 when tourists were just discovering Maui, the Sea House restaurant celebrated its 50th anniversary in 2013—thereby making it one of the oldest restaurants in West Maui. Even with the history, fame, and ocean views, it’s one of the island’s most affordable restaurants. Most items on the breakfast menu will cost you $12 or less, and when you’re done with your meal, you can splash in the waters of protected Napili Bay. The Sea House sources many of their ingredients from local Hawaiian farmers (such as the Molokaʽi sweet potatoes), and they also follow traditional fishing calendars when choosing their fish for the menu. This is a great option for beginning the day on the island’s northwestern coastline and is a filling starting point for later adventures toward Honolua Bay and beyond. Or, just relax on the sands of Napili beneath the shade of a rustling palm. After all, there are only three hours between the end of breakfast and the start of the Sea House happy hour—an affordable menu that starts at 2 p.m. and has been voted one of the best on Maui.

    This sprawling museum is located in four buildings near Battlefields Park—the most recent of them, the Pierre Lassonde pavilion, opened in 2016 and was designed by starchitect Rem Koolhaas’s OMA. The 25,000 works in its permanent collection cover the history of art in the province, beginning with the French colonial period and including artists who are still active today. The museum also holds one of the world’s most important collections of Inuit art, with some 100 pieces—mostly carvings in stone, whalebone, or ivory—on display at any one time. Temporary exhibitions focus on both local and international artists. If you have time for a sit-down meal, Tempéra Québecor—helmed by Marie-Chantal Lepage, one of Québec’s best-known chefs—is near the entrance of the new pavilion, with floor-to-ceiling windows looking out over the grounds and the Grande Allée.

    A serene respite from the towering urban sprawl nearby, this traditional Tang Dynasty–style landscaped garden is based on the design of the famous Jiangshouju Garden in Shanxi Province. Winding paths lead visitors past pines, cypress, and fragrant flowering trees. Set on Diamond Hill in Kowloon with the vast northern mountain range as the backdrop, the lovely park has been designed with artificial hillocks, ornamental rocks, waterfalls, and koi ponds to encourage quiet walks and reflection. Think of it as an outdoor museum for the soul and a place representing Chinese cultural ideals. A striking gilded pagoda and a pair of arched red wooden bridges are the focal points of a lotus pond and a favorite photo subject. To linger longer, enjoy a meal at the vegetarian café on-site.

    Banff and Jasper are top of mind when it comes to Alberta‘s Great Outdoors. Travelers flock to Moraine Lake by the busload for postcard-perfect snaps and zip through the province’s northern parks on the trail of grizzlies, elk, and moose. Waterton Lakes manages to fly just far enough under the radar that it never feels crowded or bustling, even on a wild Canada Day long weekend, which makes it a wonderful alternative for the “been there, done that” crowd. For an iconic view of Waterton Village and Upper Waterton Lake, test your mettle against the Bear’s Hump, a mile-long trek that begins at the Waterton Visitor Resource Center. The trail opens to a grand rocky plateau atop what was once called Bear Mountain by the Blackfoot people. Begin your trek early in the morning or late in the afternoon to have the mountain to yourself, but be warned that the wind atop the Hump can be ferocious.     Andalucia, Spain, is located in the southern Iberian peninsula. The vast area consists of eight provinces. Among them are Cadiz, Cordoba, Granada, and Seville. I sampled the hams, paellas, wines, and olive oils and enjoyed the tastes and smells of the Andalucian menus. The region is rich in culture and history. The flamenco and bullfights are favorite attractions here. Much of the Moorish-influenced architecture dates to the days of Muslim rule. Muslims ruled Andalucia from 711 when Tariq, an Islamic Berber, conquered the area and called it Al-Andalus. He established it as the Islamic Empire. Al-Andalus was a huge cultural center of vast beauty. In 1492, the fall of Granada put an end to Muslim rule when King Ferdinand and Queen Isabella expelled the Muslims from Spain. Andalucia was born and it has been Spanish ever since. Driving through the countryside, I saw beauty around every curve in the road like the rows of olive and oak trees, and fields of grain. I laughed when I saw the huge Osborne Sherry Company’s black bull on the hilltops. These large boards were erected all over Spain to advertise their Brandy de Jerez. I found them charming and so very Spanish. I saw this region of Spain as vast and very beautiful with its mountains, dry plains, and lush forest areas. So many different types of landscapes within the region. I recommend a good guidebook and an up-to-date Michelin map. When renting a car, do so in the States when you book your trip. Happy traveling!

    Blueberry Boy Bait may sound like a B-side song from an alternative band, but it’s actually just an ice cream flavor offered by Humphry Slocombe, a small shop in the Mission District. Owner and former pastry chef Jake Godby has made the name Humphry Slocombe synonymous with flavors and ingredients not often found in ice cream or sorbet. Case in point: best-seller Secret Breakfast, the flavor that launched a thousand Humphry Slocombe fans, a combo of homemade cornflakes and bourbon. Traditionalists will be happy to find “normal” flavors, too, but it’s Godby’s “march to your own drum” ethos that brings out his best work and keeps people lining up for creative scoops.
