    In a world where coffee is ubiquitous, it’s refreshing to find an establishment that cares equally about tea. Behind the bar at the Rose Estb is a shelf of jars hosting three varieties of each kind of tea: black, green, white, herbal, rooibos, oolong, and a category for an assortment of others, maté among them. This does not, however, compromise an attention to good coffee (the Rose sources it from San Francisco’s Four Barrel Coffee), which is still what most people come for. Open for brunch and lunch, the simple café menu includes frittatas, soups, salads, and sandwiches. The Rose is located on the southwest edge of downtown in a brick building that was remodeled by the owner, Erica O’Brien, and her father, and is deliberately Wi-Fi free.

    Chef and owner Charlie Perry spent many hours by his great-grandmother’s side as she shared her love of cooking with him. Her name was Eva Coombs, and Perry opened this boulangerie in her honor. While there are a few gluten-free options on the menu, they’re limited to salads and the fruit-bowl sides. This is not a place that makes adjustments to its bread. The baker serves breakfast and lunch Monday through Saturday, and is open from 9 a.m. to 3 p.m. on Sundays for brunch.

    The Salt Cellar is perched at the top of Gold Hill in Shaftesbury with sweeping views across the Blackmore Vale. This very picturesque hill is really steep and has been used in films. This is a very popular cafe with locals and sits underneath the town clock in Shaftesbury.When visitors come to look at Gold Hill they often walk by without noticing the cafe. If only they turned around. There are benches outdoors and highly sought after window seats indoors with views to enjoy. And then the food. Delicious locally produced salads, sandwiches, daily specials and coffee and cakes. Worried about the calorific value of any of this food? Just walk up and down that hill a few times.

    A useful address for a snack after a visit to the Uffizi or Palazzo Vecchio, this gourmet sandwich bar and deli, hidden away down a narrow lane, serves delicious panini plus the odd salad. The sandwich selection (made with focaccia freshly-baked in a wood-fired oven) changes daily but ingredients are top-notch and sourced from all over Italy: gorgonzola cheese and salty anchovies is a favourite of mine. The price of your sandwich includes a glass of wine.

    Brunost (brown cheese) is a staple of Norwegian kitchens, usually cut thin with a cheese slicer to top buttered toast or warm waffles. Despite the name, brunost isn’t technically cheese; it’s the whey of goat’s milk, boiled for hours until caramelized. This imparts a distinctive brown color, a salty taste, and a texture like goat-cheese fudge. Refresh with a glass of champagne to greet the sun. The Food: Their restaurant, Salt, is known for the forty salts used tableside to enhance the flavor of the Chef’s contemporary cuisine. Learn about the specialty salts in the hotel’s “Salt Immersion” class. The Cooking School: Salt chef de Cuisine, Rick Laughlin hosts a highly interactive cooking school with a small group of guests who rotate in stations while cooking their multi-course lunch. The Adopt a Dune Program: This " feel good factor” lets families donate to nurture the beautiful dune-lined, barrier island beaches of Amelia via Community Footprints Dune Restoration Fund.     When you’re ready to call it a day on the slopes, take Park City Mountain Resort’s Quittin’ Time run down to High West, the world’s only ski-in gastro-distillery. Tour the space, then try the 36th Vote Barreled Manhattan, made from a pre-Prohibition cocktail recipe that calls for aging the drink for 90 days in white oak barrels. The food goes down pretty easily, too: A bowl of elk chili will warm you right down to the toes of your ski socks. For lighter fare, the popcorn tossed with bacon, caramel, and cashews is sweet, salty, and a nice counterpoint to a glass of double rye.

    Restaurateur Brooks Reitz built his name with this chicken-and-oyster joint that feels old-school despite its carefully crafted ambiance. On a first visit, it’s sinful not to order the perfectly salted, crispy/juicy fried chicken amalgam shellacked with a glaze of Old Bay and cayenne suspended in melted lard. That necessitates a second visit to gorge on the poached char-grilled lobster and sausage, or the Leon’s Fish Fry, a platter of shrimp, oysters and catfish. Leon’s was the first to open way-Upper King, now the restaurant hotbed, and it’s held onto its cool status thanks to its thoughtful buildout in a restored auto body shop, retaining the exposed rafters and a rollup garage door that opens to a patio out front.

    Stillwater is a longtime favorite in Launceston for its location on the Tamar River in a lovingly restored 1830s flour mill. Original beams, polished timber floors, and water views set the scene for seasonal dishes such as whiskey-cured Huon salmon; slow-roasted Flinders Island rack of lamb (flavored like ocean salt from the sea-swept grasses the lamb eat); and Cape Grim steak (which hails from the capital of clean air). The same owners run Black Cow Bistro a few blocks up the road, which is doing more incredible things with Cape Grim cuts. Save room for the sweet basil panna cotta with strawberries and breadcrumbs. You can hike it off at Cradle Mountain tomorrow.

    Throughout Mexico in the many colorful markets there are lots of interesting items for sale, from live animals and produce to clothing and all sorts of knickknacks. Food is also plentiful and varied. But nothing seems to have registered more with me than the women in the Oaxacan markets screaming “Chapulines! Chapulines!” A quick peek at the giant baskets they carry and you’ll readily notice that insects are on display. Grasshoppers to be exact. Chapulines are very popular in this region and locals buy them by the bagful and munch on them as afternoon snacks. They are only collected at certain times of the year, and after a thorough cleaning and washing, they are toasted with garlic, lime juice, chili and salt. Skeptical as I was, I just had to see what all the fuss was about. So, I bought a small bagful. I reached in, grabbed one and got completely grossed out. Antennae, eyes, wings - everything was still visible. I took a tiny nibble on a wing. Not bad tasting really, but I just didn’t have the stomach to bite through to the center of the critter. I gave the rest of the bag away to a gentleman who was more than thrilled with my offer.

    You can’t visit Florence without indulging in ice cream once at the very least, but it’s not so easy to find the real deal. Carapina, gelateria of choice for cognoscenti (but often overlooked by tourists), is located a stone’s throw from the Ponte Vecchio, brain child of Simone Bonin who is widely acknowledged to be one of the best ice cream makers in Italy. Sixteen flavors are available at any one time and produced in small batches each day from top-notch local, strictly seasonal ingredients. Classics include pistachio, ‘real’ yoghurt and the bitterest of bitter chocolate but there are more unusual flavors too like the sweet/salty gorgonzola, Parmigiano reggiano or creamy mozzarella di bufala.

Famous both for his magnificent mustache and exceptional cooking, chef Christian Morisset guides your appetite on a culinary adventure with creative dishes that zing, like a salty-sweet sautéed foie gras with figs or teppanyaki branzino. The chef’s sweets do not disappoint, either, particularly the wild strawberry parfait and the molten chocolate cake decorated with a white chocolate jasmine tea heart.
