  • Bazaruto, Mozambique
    Two plane flights, plus a drive and you arrive to this tiny island off the coast of Mozambique in the Bazaruto Archipelago. The former Indigo Bay Hotel was the nicest accommodation on the island when it opened in 2001. In May 2014, the property was touched up and relaunched by Anantara, giving travelers a comfortable base to experience Bazaruto’s natural beauty and local culture. The hotel has its own in-house naturalist and a whip-smart, PADI-certified dive instructor who can take guests snorkeling and diving. The Bazaruto Archipelago has been a national park since 1971 and is home to more than 100 species of coral, four types of whales, sea turtles, mantarays, dolphins, and it boasts the largest population of the rare dugong on the African east coast. In addition to water activities, Anantara can arrange cooking classes, horse riding, dune boarding, and bird watching (Bazaruto is home to 180 species of birds).

    But this resort isn’t only for active types. It equally caters to sybarites who are seeking R&R in a remote place. The 44 villas are all spacious and many come with large outdoor patios with dining areas and plunge pools. A highlight is the spa, perched high above the property. Make sure to arrive early and save time after to truly enjoy the views. The resort works closely with the local community, many of whom are employed by the hotel. Guests can visit one of the local villages and observe some of the community projects Anantara helps fund. But the best way to get to know the locals is simply by interacting with the friendly staff.

    Guests at Anantara Bazaruto Resort can opt to explore this very different side of the island by sandboard (think snowboarding down sand dunes), safari Jeep, or on horseback. I went on a horseback ride up at sunset. The uphill was lovely, but going down a towering sand dune atop a horse is about as scary as dropping down a double black diamond run on skis. But my horse mastered the vertical drop expertly. More terrifying than the drop was the ride around the freshwater lake, which my guide said is inhabited by 12-foot long Nile crocodiles. Luckily the few we saw were snoozing far away.

    Still run by the descendants of its founder, Malcolm Mackay, this 114-year-old family-owned working cattle ranch in Roscoe, Montana, has been hosting guests—Roy Rogers and Robert Redford among them—since the 1980s. Lazy E-L Ranch is often booked a year in advance due to a capacity of just 14 guests who stay in three period cabins furnished with Western art, family pictures, and Navajo rugs. Instead of a formulaic schedule of staged chuckwagons, cowboy sing-alongs, roping practice, and nose-to-tail trail rides, guests have the option of a more authentic experience, joining ranch staff as they manage stock on 12,000 acres roamed by moose, deer, and bald eagles. The main draw here is integrating into ranch life, feeding chickens and horses, cleaning barns, and helping prepare family meals (though chores are optional). There are no guest cattle drives, but experienced riders can occasionally join or observe Lazy E-L professional cowboys moving 2,000 head of cattle. For guests preferring play to work, there’s horseback riding and hiking across pristine alpine pasture and barren plateaus; non-horse people can mountain bike down the terrifying Beartooth Highway, play soccer, baseball, and croquet, fish a private six-mile section of the West Rose Bud River, or raft the Class IV Stillwater River.

    The thermal hot springs in Rincón de La Vieja at Rio Negro (Black River) may not be as well known as those in the Arenal area, but we had the pools and surrounding forest to ourselves. From where we stayed at the Hacienda Guachipelin Rincón de La Vieja, the springs were accessible by horseback or vehicle, followed by a short hike and crossing a rather dubious hanging bridge. The pools are heated by the Rincón de La Vieja Volcano, so you definitely want to test the steaming water. There are seven pools to sample of different shapes, sizes and temperatures. The first pool was too hot to plunge more than our toes into. And the pool that was “just right” was the last one, which happened to be ideally situated next to the churning river. After two days of horseback riding, hiking, canyon ziplining and rappelling, it was great to unwind at this private oasis. If a rainforest/volcano adventure beckons you, I recommend staying at Hacienda Guachipelin Rincón de La Vieja and getting an adventure pass from Adventure Tours--both are at Rincón de La Vieja National Park.

    This corner café in Prague’s foodie hub, Karlín, is always hopping. The painted brick walls, wood tables, cozy corners, but especially the coffee the keeps people coming back. Muj Salek Kavy translates as “my cup of coffee” (a play on my cup of tea) is owned by local direct trade coffee company Doubleshot, which was among the first to kick-start the city’s now booming specialty coffee scene. They select and roast their own in-season beans, and serve their single origin, as well as espresso blends, at the right temperature. On weekends in summer the lively atmosphere spills out onto the streets, and on the weekends, be sure to show up early to get a seat for the delicious brunch, with dishes like rice porridge with coconut milk and apricots, blueberry jam pancakes, and poached with Prague ham and horseradish sauce.

    Are there any nobler or more beautiful horses in the world than the gray-white Lipizzans who wow audiences with their high stepping at the Spanish Riding School? In the 16th century, the Hapsburg empire used Andalusian horses to create the breed in Lipizza (located in Slovenia). As they have for centuries, the Lipizzans perform their acrobatic haute école dressage in the Hofburg Palace’s Winter Riding School arena, an all-white baroque hall designed by Fischer von Erlach. Riders still wear the traditional uniform of bicorne hats and tailcoats, part of the reason UNESCO granted the Riding School its Intangible Cultural Heritage status. In addition to watching the performances, visitors can also tour the stables and sit in on morning training sessions set to classical music.

The theory is that, as our animal companions since ancient time, horses can teach us about us—participants spend quiet time moving among horses in a corral, interacting with them, and reacting to them, and, through this, learn about nonverbal communication and setting boundaries, thus gaining confidence, inspiration, and strength. At these stables in the foothills of the Sangre de Cristo Mountains, guests harness the power of the herd to gain (often very emotional) insights into themselves.

    One of Maui’s best hikes, this trail climbs 800 feet through the lush Kipahulu area of Haleakala National Park. Half a mile from the visitor center, an overlook provides sweeping views of the gorge and the almost-200-foot-long “horsetail” of Makahiku Falls. Continue on past a sprawling banyan, stopping to marvel at the sunlight trickling through the dense bamboo forest. Here, you’ll also find the even more dramatic cascade of Waimoku Falls, which plunges 400 feet down a sheer-walled lava amphitheater. If you’re wary of tackling the four-mile round-trip hike by yourself, know that park rangers offer guided tours every Sunday at 10 a.m. Reservations are available at 9 a.m. a week ahead of time.

If your liver is craving more, MP has the largest collection of premium absinthe in New York City, centered around “the world’s most accurate working replica of an absinthe fountain,” according to their site. It’s a great place for your day drinking needs.

    Combining fine-dining flair with the relaxed ambience of a mountain resort town, Rata in Queenstown is one of the New Zealand eateries operated by well-known Kiwi chef Josh Emett. With a CV that includes cooking stints in the United States and London, Emett has crafted a menu that deftly marries a range of international influences to proudly local produce. Sharing plates include New Zealand octopus with saffron aioli or Marlborough salmon with horseradish and green apple, while local venison and merino lamb are standout main courses. The colors and feel of the forest inform the stylish decor—the eponymous rata is a tree native to New Zealand. Two- and three-course lunch menus are both a good value.
