Started in Kraków but quickly spreading to other cities, countries, and even continents, the creative concept involves local people cooking for guests in their homes. Interested parties simply book and pay in advance via the Eataway website, then receive directions to their dinner with their confirmation email. Meals vary greatly, so it’s up to you to browse the options and choose one that suits your needs, whether that’s pierogi the way your grandmother used to make them, or a sophisticated feast made by an aspiring chef in their own kitchen. Offerings also go beyond Polish food, as Eataway’s network of cooks includes expats like Mira from Korea and Sheuli from India, who prepare their national specialties extremely well. Besides the fact that the food is always delicious and authentic, it’s very reasonably priced—you can typically enjoy a three-course meal for around 50 to 130 Polish zlotys. Above all, you’ll meet interesting people and get a glimpse of real, local life. Eataway’s creator, Marta, remains at the heart of the community, serving “happy meals” from her home in Kraków.

Chef-owner Niki Nakayama—one of the world’s few female kaiseki masters and a James Beard semifinalist—has created an intimate, authentically Japanese space for up to 26 guests to savor one of two 13-course tasting menus. In a serene setting of minimalist, hand-built furniture, the Japanese American chef serves up a parade of vibrantly colored, elaborately plated dishes, each made with hyper-local ingredients. A typical menu begins with a modern take on sashimi and then proceeds through a series of innovative vegetarian, fish, meat, and dessert courses. One stop-you-in-your-tracks favorite: the Shiizakana (which translates to “not bound by tradition, chef’s choice”), in which spaghettini is twirled with abalone, pickled cod roe, and Burgundy truffles. At the end of the meal, chef Nakayama and sous chef Carole Iida-Nakayama emerge from the kitchen to greet each diner. Pro tip: Plan ahead. A two- to three-month waiting list means you need to be flexible with early or late dinner times.

    On a weekend morning, hop on Metro Line 10 to the Panjiayuan station and take exit B. Just down the road is the sprawling Panjiayuan Market, where hundreds of vendors sell their wares. It’s essential to bring cash, patience, and a willingness to bargain. While there aren’t authentic antiques here, you will find loads of curios from the 1950s onward, including a superb selection of colorful propaganda posters at a fraction of what they sell for in central Beijing shops, as well as lacquerware, teapots and cups, jewelry, chopsticks, and textiles. Larger items, like traditional carved-wood furniture and substantial framed paintings, can easily be stowed in one of the taxis that wait patiently near the entrance for happy shoppers.

    Opened in 2017 as the first Fairmont property in Turkey, this 209-room hotel is inside a 41-story luxury high-rise in the Mecidiyeköy business district, close to high-end shopping and dining. Gaze past the hotel’s landscaped gardens to the city and all the way to the Bosphorus from your private balcony—every room and suite has one, along with a 48-inch smart TV, pillow-top mattress, rain shower, Le Labo Rose products, and your choice of tub or traditional Turkish bath (complete with heated pedestal). More Turkish flair—and flavors—are on offer at Aila restaurant and Demlique café, while Stations serves dishes from around the world and the Marble Bar pairs small bites with an international selection of wine. While these Turkish touches can be found throughout the property—most notably at the expansive Willow Stream Spa, with its selection of herbal products and authentic hammam treatments—the hotel has a decidedly contemporary vibe and style, and feels part of today’s buzzing Istanbul. Case in point: the Ukiyo seasonal outdoor infinity pool, envisioned with Instagrammable whimsy by Dutch designer Marcel Wanders.

Spread out around a flower-filled courtyard, the 14 accommodations include standard rooms, junior suites, and suites—though no two are the same: Even in the entry category you might find a fireplace, second-floor loft, canopy bed, or original stone wall; suites up the ante with oversize bathtubs set near a second fireplace, or private terraces with views of the cathedral. Antiques and handcrafted furnishings abound, as do stories about the villa’s illustrious former guests. Set alongside the courtyard fountain, the restaurant celebrates authentic Mexican flavors (think breakfast enchiladas and chilaquiles)—and serves brunch until 1 p.m. daily, for mornings that are off to a slow start.

The Four Seasons invested over $1.1 million in landscaping improvements, the Monte Vista Terrace, and other additional offerings like the Adventure Center and Chef’s Table. Originally a privately owned ranch, the property dates back to the early 1900s. Previous owners include Guestward Ho! authors Barbara and Bill Hooton (then, the estate was known as Rancho del Monte) and, between 1968 and 1992, Betty Egan, who gave the property its current name (a reflection of Santa Fe’s tagline: The Land of Enchantment). John Wayne and Jimmy Stewart are just two of its legendary guests.

Each of the 135 rooms offers visitors a mix of lived-in comfort and luxurious detail, with everything from mohair-upholstered chairs, Turkish Oushak rugs, and hardwood floors to iPod stereos, hi-def televisions, and marble bathrooms with deep-soaking tubs. When hunger hits, guests can head downstairs for authentic Italian plates at Gemma and a nightcap at the Lobby Bar, a lower Manhattan staple known for its timeless ambiance and clever riffs on cocktail classics.

It’s the newest outpost from the folks at Eleven Experience, a vacation outfitter known for offering elegance after a full day of bespoke escapades. Spread across a restored colonial home built in 1800, an annex, and two authentic Bahamian cottages and enclosing a freshwater lap pool, handcrafted tiki bar, and hot tub area, Bahama House’s 11 suites have been appointed with eclectically curated furnishings, artwork, and wall coverings, eschewing island kitsch for beach-chic sumptuousness. Though the hotel leans toward softer adventures than sister properties in Colorado, Iceland, and the French Alps, the flip-flop–wearing “experience managers” are on hand to arrange snorkeling and bonefishing excursions and paddleboard or kayak outings. Or they’ll simply provide a fully stocked Yeti cooler for a day of lounging on famous pink-sand beaches.

    This restaurant is such an institution that it predates the city’s most iconic landmark—the Hollywood sign. In a way, Hollywood was born in Musso & Frank’s red booths, back when the famed boulevard was still a dirt road. The restaurant opened in 1919, and much of the menu remains from the first chef, Frenchman Jean La Rue, who used to specially prepare fettuccini alfredo for silent film stars Douglas Fairbanks and Mary Pickford. Only two executive chefs have held the job since. Dinner dishes such as lobster thermidor and grenadine of beef take you back half a century, while chicken pot pie (on Thursdays only) and steaks, cooked on L.A.’s oldest open-fire grill, taste comfortingly familiar. Don’t miss brunch, which features Greta Garbo’s favorite Flannel Cake, a cross between a pancake and crepe invented by chef La Rue in the 1920s. In keeping with the authentic vintage spirit, martinis are strictly stirred—never shaken—and served with a mini glass sidecar containing the rest of the drink in its own tiny ice bucket. Pro tip: Order the off-menu slow-roasted prime rib, finished on the mesquite grill and served rare.

    Travelers incorrectly believe that the street food sold at stalls around Pub Street in the Old Market quarter is authentic. It’s not—not the fruit shake sellers, nor the Nutella pancakes. There is one exception and that’s the ubiquitous sugar cane juice sellers that you see here as well as at local markets, backstreets, and the riverside every afternoon and evening. Follow your ears. Expect to hear the sound of the long pieces of cane being crunched through the crusher or the sounds of swarms of bees buzzing around. The juice will be served in a plastic cup or plastic bag with a straw. If you struggle with the drink in a plastic bag idea, as many foreigners do, then point to a cup. It’s nearly always served over ice and the ice is nearly always safe, thanks to the French who established ice factories across the country during French colonial rule. However, if you’ve not been in the country long or have a weak stomach, skip the ice, just in case. Sometimes Cambodians will add extra sugar to their drinks. Watch carefully and say no if you see the vendor reaching for some, as it’s sweet enough. It’s a terrific thirst-quencher if you’ve been out in the blazing sun all day – and a fantastic pick-me-up if you’re starting to feel that heat.

    Hillside Farmacy is a farm-to-table restaurant in Austin built around a pharmacy theme. While it may sound odd, the execution is brilliant, with incredible food and wonderfully eclectic design. The restaurant space was formerly the home of a 1920s pharmacy owned by Austin‘s first African-American pharmacist. The decor features authentic apothecary items (from a different 1920s drugstore)—a vintage collection of medicine bottles, antique cash registers, tin ceilings, and wooden cabinets. But it’s the “F” in the deliberately misspelled Farmacy that nods to the emphasis on simple, fresh food. The restaurant works with local food purveyors and regularly changes the menus around the highest-quality seasonal ingredients. Local cheese, homemade pate, artisinal breads and pastries, raw bar, charcuterie are all available here. Dishes include bangers and eggs, buttermilk bisquits and gravy, and bison tartare. Other perks include an old fashioned soda counter and a shaded outdoor patio. If I were a local here, this would definitely be one of my favorite go-to places.

Unlike the rest of Peru the water is warm enough to surf without a wetsuit, a welcome complement to an area already featuring some of the best waves in South America. Hemingway knew what he was doing when he set up shop in nearby Cabo Blanco, an authentic fishing village where the ceviche is some of the freshest on the planet and the days pass with a simple peacefulness unique to many coastal escapes. While outdoor activities abound around Mancora, from kitesurfing to fishing to morning yoga sessions, on this particular morning the to-do list consists of nothing more than a good book, a cold drink, and watching whales splash on the endless horizon.
