The patio has mountain views and misters to counter the ‘dry heat.’ Years ago, when I first visited Tucson before deciding to move here, this was one of our stops--one of those places that makes you think ‘yeah, I could live here...’

    Why I was so surprised to find a food truck in the village of Volcano outside of Volcano National Park, I’m not sure. All I know is that it was one of the many culinary surprises on the Big Island. This truck was packed with all kinds of wonderful things, and almost all of it was healthy too. If you can find it, and I have no way of telling you where they will be parked, ask for the special drink they mix up daily, I think it has ginger it in, but they’ll know what you mean. The company is called Higher Taste Vegetarian Cafe, and this truck was parked outside of the Rainforest Gallery at Niaulani near Volcano Village. That’s the best I can do, but then again, finding the truck is half the fun!

    Known today as the Hawaii Five-O headquarters façade, Aliiolani Hale means “house of the heavenly king” in the Hawaiian language. The building was designed under King Kamehameha V and served as a palace with government offices for the Kingdom of Hawaii until the monarchy was overthrown in 1893 and the Republic of Hawaii was established. Shortly after Hawaii became a US state, the building was renovated. However, as the government grew, various departments moved out of Aliiolani Hale and now the Hawaii State Supreme Court makes use of this historic building along with a museum about the Hawaii judiciary and a law library. In front of the iconic building, there is a statue of King Kamehameha I, who founded the Kingdom of Hawaii.

    Every afternoon about 5:30 PM, islanders and connoisseurs of sunsets arrange themselves at their favorite beach side vantage point on the west and south shores of Oahu for a chance to see the legendary “green flash”. In all of my years of living in Hawaii, I have only seen it twice, but sometimes I think it was a result of a very strong Mai Tai and staring at the sun too long. If you’d like to try for a glimpse of this phenomenon, you might as well be sitting in a comfortable spot with a great drink in hand. SWIM is a poolside bar with views over the statue of Duke Kahanamoku out to Waikiki beach. On an upper deck of The Hyatt Regency Waikiki, you are above street level so nice treetop and beach views are yours. I recommend the Lychee Martini ( pictured). The pupus are really good here too and if you plan it right, might serve as dinner. If not, hop over to SHOR American Seafood Grill. Visible across the pool with indoor or outdoor seating, start with amazing Baby Kona Abalone with garlic herbed butter, the tremendous seafood tower or the catch of the day you pair with a sauce you select from the list like Pineapple Shiso Relish, Hamakua Mushroom, Soy Radish etc. Insider Tip : Valet your car gratis with purchase – so get your ticket stamped and tip your valet.

    Upon reading up about Hokkaido, one of the popular “must tries” listed by fellow travelers was the age-imo, deep fried potato. Wondering what the fuss was all about, I had to try this. Living in Asia, we are quite familiar with deep fried sweet potatoes, so we were expecting something like that, but we were surprised to see that age-imo is actually made with regular potatoes, a popular produce of Hokkaido, much the same way the Americans consider the Idaho potato :-) Age-imo is usually sold in 3’s like the one in the photo. Upon biting into it, you’ll get a taste of that soft steaming hot potato inside. The batter tastes a lot like the hotdog on a stick batter :-) I think these are also sold in some of the outdoor food trucks but the one in the Nakayama Mountain Pass rest stop has been popularly mentioned. So if you’re on your way out of Sapporo to the Southwestern part of Hokkaido, you’ll most probably pass by Highway 230, and Nakayama Mountain Pass rest stop is just about an hour from Sapporo city center. You can also buy soft ice cream here. Be sure to try a special flavor like orange or melon. It is actually quite nice to eat ice cream in winter :-) There is a souvenir shop which sells all sorts of Hokkaido products. Get a cream puff, or buy a pack of those wonderful light and crisp Hokkaido cookies. Nakayama Mountain Pass is also where you can get great views of the famous Ezo Fuji (Mt Yotei) so be sure to get your cameras ready.

    Take the Incline Railway up Lookout Mountain on your way to Ruby Falls and Rock City and you’ll understand why the journey is often half the fun. In operation since 1895, the funicular has a maximum grade of 72.7 percent, making it the world’s steepest passenger railway and earning it the nickname “America’s Most Amazing Mile.” For its age and impressiveness, the railway is now a designated National Historic Site and a Mechanical Engineering Landmark. Before your ride, visit the machine room to see the enormous gears that drive the train, then sit back and enjoy the sweeping views of the valley below as you creep steadily up the track. Sure, you could just drive to the top of Lookout Mountain, but where’s the fun in that?

    At this bird-lover’s paradise, guests have reported seeing Blue Cotingas, Green Shrike-Vireos, and any number of native Panamanian bird species just outside their bedroom window. Their luck is in part due to Canopy Tower’s unorthodox location in a converted radar tower, right in the middle of the lowland rainforest of Soberanía National Park. Accommodations span two floors at either 18 feet (mid-canopy level) or 28 feet (canopy level), and range from basic yet adequate single rooms that share a bathroom, to a large suite with a private balcony. The lush rainforest setting also means there’s plenty more than birds on view—howler and tamarin monkeys, two- and three-toed sloths, nine-banded armadillos, and white-tailed deer are frequently seen from the tower, plus the stargazing is phenomenal. Guests can choose from day rates or all-inclusive birding and nature packages, the most comprehensive of which is a 20-night exploration of the surrounding area.

    Guests at Ultima Thule can rest assured they’re in good hands: The lodge is run by the intrepid Claus family, particularly Paul Claus, the legendary bush pilot and adventurer who is known as much for his skilled glacier landings as his mountaineering exploits (he’s gone as far as Everest and as close to home as nearby Mount St. Elias). Hand-hewn logs from the original cabin built by Paul’s father, John Claus, still form a wing of the main lodge, though much has been added to create the world-class resort. There are now five private cabins outfitted with Craftsman furniture, plush featherbeds and bearskin rugs; a wood-fired sauna; and a large vegetable garden whose harvest—along with local game and fish—forms the foundation of many of the meals. Styled after a Chosun Dynasty–era house, the 130-year-old hanok (traditional Korean house) was used by a secret society during the Japanese occupation of Korea before World War II as a place to study and preserve Korean language and culture. In 2003, a master architect, designated by the Korean government as a “Human National Treasure,” renovated the hanok, and now it’s one of the most picturesque places to stay in all of Korea’s capital. Stepping through the gate into the peaceful courtyard feels like going back in time, and the lotus pond, yellow-mud sauna, and traditional Korean cuisine only add to the anachronistic feeling. Guests staying at the small and intimate Rak Ko Jae can take part in many elements of traditional Korean culture such as making kimchi, trying on a hanbok (traditional Korean clothing), or experiencing an afternoon tea ceremony.
