Hilton’s reentry into the heart of Paris is nothing short of majestic. After a $50 million design overhaul, the 125-year-old hotel, made for the 1889 World’s Fair, has been revived to its 19th-century splendor with a contemporary twist. Formerly the Grand Hotel Terminus and the Concorde Opéra Paris, the property’s landmark status—with its Haussmannian facade and elegant public spaces—demanded it be painstakingly preserved. Among the restored, original elements, the most awe-inspiring are the Corinthian columns, chandeliers, balustrades, hand-painted frescoes, and marble and mosaic tiling. Fortunately, the bar takes pride of place among them, making it the ideal spot to start your stay with a cocktail or glass of wine.

The style in each of the rooms breaks with the traditional stark-white modern codes of most business hotels. Here it incorporates warm accent colors and textiles. With few heritage elements left to preserve, the sense of place is woven in with custom etchings of iconic Paris scenes hung behind each bed. But you won’t be spending much time here, as the action happens in the grand salon.

Inspired by classic roadside motels, Calistoga Motor Lodge sits at the end of the Silverado Trail, offering guests a casual, quirky stay in Napa’s northernmost town. The boutique property features a design by New York-based firm AvroKo, with lots of midcentury-modern furniture, bright pops of color, and retro details to transport visitors back in time. Simple yet cozy, rooms feature bold carpets, vintage-inspired fabrics, and cheeky art (think needlepoint signs reading “No selfies in the bathroom” and fabric animal heads mounted on the walls), plus tiled bathrooms with rainfall showers and signature bath products from on-site MoonAcre Spa. In addition to custom-designed hoodie bathrobes and freshly ground pour-over coffee, guests can look forward to unconventional extras like hula hoops, Mad Lib books, and Etch A Sketches for passing time between activities. If you bring along your pet, the hotel will even provide a dog bed, water and food bowls, and treats to make your four-legged friend feel at home.

The M Spa at the Emblem Hotel is on the top two floors which means from the relaxation room, where you sip on cucumber water and admire art by local artists on the walls while flipping through a magazine, you are at eye-level with the surrounding rooftops and carved facades. Hungry hikers (known as hill walkers in Scotland) will find refuge at Monachyle Mhor, a 2,000-acre farm located deep in the middle of Trossachs National Park, just past the grave site of folk hero Rob Roy. The main draw of the 14-room pink farmhouse is the food: Chef-owner Tom Lewis, a rising star on the U.K. culinary scene, prepares meals sourced from the farm. The hotel also offers classes on baking bread and churning butter, and coordinates hunting trips and mushroom-foraging excursions. After a day exploring the land, retire to one of the comfortable rooms, equipped with fireplaces, steam rooms, and views of a loch.

Stillwater is a longtime favorite in Launceston for its location on the Tamar River in a lovingly restored 1830s flour mill. Original beams, polished timber floors, and water views set the scene for seasonal dishes such as whiskey-cured Huon salmon; slow-roasted Flinders Island rack of lamb (flavored like ocean salt from the sea-swept grasses the lamb eat); and Cape Grim steak (which hails from the capital of clean air). The same owners run Black Cow Bistro a few blocks up the road, which is doing more incredible things with Cape Grim cuts. Save room for the sweet basil panna cotta with strawberries and breadcrumbs. You can hike it off at Cradle Mountain tomorrow.
