    Set in the UNESCO World Heritage-listed Banff National Park, the year-round Fairmont Banff Springs was the brainchild of Sir William Cornelius Van Horne, president of the Canadian Pacific Railway. On arrival at Banff, the tourism visionary made the canny observation, “Since we can’t export the scenery, we’ll have to import the tourists;” thus, he set about building a string of great railway hotels across Canada. The original wooden hotel that opened here in 1888 burned down in 1926, but was replaced two years later with the grander castle-meets-baronial-Scottish-hall structure that exists today. The public lobby spaces are vast, and there are countless nooks to curl up in with a book where guests will remain undisturbed. With its signature stone walls, turrets, and winding staircases, Van Horne’s gambit paid off: The Fairmont Banff Springs feels for all the world like an elegant and ancient castle, albeit one with all the modern conveniences.

    Yep, you read that right: There is a Pirate Supply Store in the heart of the Mission! In their words: “We are a ragtag group of miscreants who sell pirate supplies in order to benefit the free programming that happens at our writing-tutoring center at 826 Valencia, and in classrooms all over San Francisco.” Cofounded by author David Eggers, the non-profit organization 826 Valencia (which is their address, not coincidentally) teaches writing to teachers and students all over the Bay Area. Chapters of 826 have also been founded in seven other cities around the country. The Pirate Supply Store—if you’re still baffled by this, they do indeed sell pirate supplies like hooks and eyepatches—is just one part of the 826 network, with other chapters having similarly quirky stores, such as Brooklyn’s Superhero Supply Co., Los Angeles’ Time Travel Mart, or Washington, D.C.’s Museum of Unnatural History. The Pirate Supply Store is open every day from noon to 6 p.m.

    Hands down the best place to stay in Mexico City’s Centro Histórico is the aptly named Downtown. Located inside a restored 17th-century casona (mansion), the hotel shares its property with a select group of Mexican businesses, including a chocolate boutique and a mezcal bar, as well as restaurants, cafes, and fashion and jewelry ateliers. Appropriately, rooms evoke a bygone era, with low lighting, brick ceilings, and tile floors somewhat reminiscent of a monastery. Amenities are spare but select (C.O. Bigelow toiletries, for starters), and service is unobtrusive but attentive. After a day spent exploring the city, head to the rooftop pool and bar, where you can sunbathe on a bright yellow chaise lounge or sit under an oversized umbrella while waiting for your cocktail to arrive.

    The Review:
    A former farm implement warehouse, the Hewing Hotel has a rustic yet refined sensibility. Located in the heart of the North Loop, just a short walk from some of Minneapolis’s best restaurants and shops, the property mixes exposed timber and brick, tall ceilings, and original industrial elements with high-end finishes, creating an environment that’s at once local and luxurious. Available in five different layouts, the 124 rooms, including 14 suites, are individually designed with exposed wood, metal, and brick accents, plus local details like books, artwork, minibars, and Faribault Woolen Mills throws that speak to Minneapolis. Should you be traveling with your pet, simply pay a $75 fee and you’ll find their name written on a chalkboard alongside those of other furry guests, all under the heading “V.I.Pets,” as well as a treat-stocked bowl in your room.

    Although Hewing guests are surrounded by one of the city’s most vibrant neighborhoods, they’ll want to save at least one night for dining at the hotel’s renowned restaurant, Tullibee, which serves rustic Nordic cuisine alongside craft cocktails, local beers, and house-made sodas.     Set in the former headquarters of a 19th-century bank, Hotel de Rome forms a major part of Bebelplatz, the historic square best known as the site of the Nazis’ infamous book burning in 1933. Across from the stately Opera House and the equally handsome Humboldt University, the hotel has retained the bank’s neoclassical exterior. Parts of the interior are original, too, most notably an elegant staircase that winds up to the fourth floor (the first three floors are also original), and the former bank vault, which has been transformed into a spa that is accessed via the vault’s original steel door. The high-ceilinged guestrooms and suites are suitably sumptuous, with marble in the bathroom and furnishings of mahogany; the color palettes, however, were devised by designers Olga Polizzi and Tommaso Ziffer and are ultra-contemporary. The hotel also has a swanky restaurant, a popular cocktail bar, and a rooftop patio with splendid views of Bebelplatz and the city beyond.

    If one is going to throw around the word “iconic,” let’s make sure it’s used appropriately. As with Zuni. The awkwardly shaped restaurant—it’s in a narrow storefront with wider spaces on the mezzanine—was opened in 1979 by Billy West. West’s best move was hiring chef Judy Rodgers in 1987. She put in a brick oven—and thus the Zuni roast chicken was born. This dish, more than any other (except perhaps the Caesar salad), defines Zuni. The chicken is roasted in the brick oven and served over a bread salad: greens with chewy bread croutons. Simple, perfectly cooked, and seasonal. Rodgers died in 2013, but the restaurant soldiers on without her. The menu changes with the season and with what the local farms are growing, and will doubtless explain the provenance of your meat. Rodgers, along with her peer across the bay, Alice Waters, pioneered California cooking, and the cooks who have passed through here have gone on to define today’s vibrant restaurant scene.

There are also a number of great restaurants in Taipei 101 along with shops and entertainment options; you can plan at least half a day of experiences at this one site.

    Poke (pronounced POH-kay) is not only a staple of Hawaiian cuisine, it’s also a favorite of diners needing a meal on the run. These bite-sized chunks of raw fish are seasoned with everything from soy sauce to seaweed, and you won’t find a luau or community potluck that doesn’t have at least one type on the table. For those craving poke on the West Side of Maui, Foodland Farms supermarket is consistently voted as the best place for poke in the islands. At a small deli counter in the back of the store, you can choose from a selection of more than a dozen different varieties which boast seasonings from spicy to savory. The fish of choice is yellowfin tuna (ahi), and one variety—the “Flyin’ Hawaiian"—is part of a charity set up by Shane Victorino, a professional baseball player who was raised on the island. While the poke itself can fluctuate somewhere between $12-$15 a pound, budget diners can enjoy a “poke bowl” in which a third pound of fish is served over rice for a wallet-friendly $7. Can’t decide? Try the ahi avocado poke bowl served over a bed of brown rice. Want to blend in? Eat it with chopsticks.

    As the old truck lumbered down the highway we talked about the type of photography I normally like to do and he was able to narrow down some key stops for our morning where I’d be able to get some great shots that fit my style. It really is rare to get this kind of personalized treatment; this is where small town hospitality comes in. There’s no better way to photograph a region than going with a local who actually knows the region. Derek picked me up at the DesBarres Manor Inn after breakfast. He was not just a local who had grown up in the area, but he also was a photography enthusiast and was privy to some of the best views of the area. That morning he drove me all over the region – to the high points, the abandoned buildings and bridges, and some gorgeous wetlands that I never would have known existed. During the whole time he and I chatted about the progress of state of Guysborough, and the region in general. It was not only a great way to get photos that most visitors would never find, but it provided a super local insight into the region.     Situated closer to Cambodia than Vietnam in the Gulf of Thailand, Phu Quoc has arguably the best beaches in the country. An international airport opened in 2012, raising the island’s profile and bringing in droves of visitors. Despite this, the island retains a laid-back, underdeveloped charm, and its coast is still dotted with small fishing villages with brightly painted boats. The interior of the island includes plenty of forest, while some of the land is earmarked for growing black pepper—pepper from here is famous throughout Vietnam. The best beach lies to the west of the town of Phu Quoc; it’s a 13-mile long straight stretch with golden sands, coconut palms, and clear turquoise waters. The An Thoi Islands, south of Phu Quoc but still part of its marine park, offer excellent snorkeling and diving during the dry season from December through May.
