There’s also a restaurant, Prospect, with ever-changing dishes like roasted chicken, burgers, and duck carnitas.

    An award-winning boutique resort, Secret Bay serves exquisite style, service, and seclusion just a 10-minute drive from Portsmouth on Dominica’s northwestern coast. The luxury property has no communal spaces, beyond the decks, beaches, a riverside yoga pavilion, and the Zing Zing restaurant. Instead, guests retreat to six elegant villas and bungalows, fully stocked with their choice of goodies. Conceptualized by Venezuelan architect Fruto Vivas, villas fuse high design, local craftsmanship, and sustainably sourced materials like Guyanese hardwood. Guests can look forward to plunge pools, gourmet kitchens, pillow hammocks, and furniture carved from red cedar, along with high-tech touches like Apple TVs and Sonos Bluetooth speakers.

    Committed to sustainability, owner Gregor Nassief helped site Secret Bay’s villas to preserve the rainforest and oversaw construction of the entire resort without any heavy machinery. The property also plants vetiver to strengthen its cliff location and has applied to create a marine reserve in the waters below, where parrotfish flit among the coral. Explore them with the complimentary kayaks, stand-up paddleboards, snorkeling gear, dry bags, and GoPros on offer, or head to the treehouse-style spa, which gazes down on the cove and offers treatments like massages with custom-blended local oils. Guests can also opt to create their own culinary masterpieces or have the chef’s choice delivered by their attendant, who also serves as their housekeeper and adventure concierge.

    Over the next few years, Secret Bay will slowly expand to 50 villas, hidden among the neighboring 27-acre valley and ridge. In the meantime, swim to the resort’s waterline cave or paddle a kayak to the soft, golden Secret Bay beach. Though open to the public, like all Dominica’s coast, the beach sees very few visitors, meaning you might very well be the only one there.

Interestingly, Sra Bua by Kiin Kiin was founded by Henrik Yde-Andersen, whose Thai eatery in Copenhagen, Kiin Kiin, has earned a Michelin star. And so did the Bangkok restaurant for its creative approach to modern Thai cuisine and ten-course tasting menus that use Thai flavors and modern gastronomic cooking techniques in tastes such as basil foam and frozen red curry.

    Nothing says Santorini like an aqua-blue infinity pool, and Katikies has three of them—all the better to take in westward-facing sunset views. Carved out of the cliff side 300 feet above the Aegean, the hotel’s public spaces are connected by a series of bridges and Escher-esque stairways as they descend from the town of Oia above it. Cube-shaped rooms and suites are minimalist but inviting, nearly every surface painted or clothed in calming white; all have verandas, while a few large suites have outdoor plunge pools or Jacuzzi tubs and alfresco seating areas. Upon check-in, guests are given cell phones to summon 24/7 service from anywhere on the property. They use them to order light snacks at the poolside bar and restaurant or make reservations for some of the best sushi on the island at the champagne bar, but the candlelit rooftop restaurant—serving Greek and Anatolian cuisine—is about as romantic as it gets.

    In an area rife with traditional, minimalist ryokans, the Four Seasons Kyoto is a spectacle of grandeur. The opulence is subtle, however, camouflaged by clean, Zen-like style. At the hotel’s heart is a beautiful, 800-year-old pond garden, which features a picturesque teahouse surrounded by cherry, maple, and willow trees. Inside, luxurious details abound, from the seasonal floral arrangements, to the iPads and in-mirror TVs in the guest rooms, to the plush cabanas and atmospheric lighting at the underground pool. For even greater indulgence, guests can head to the spa for such treatments as sake baths, bamboo-and-green-tea scrubs, and jade-stone massages, as well as facials from cult French brand Biologique Recherche. When hunger strikes, the Michelin-starred Sushi Wakon is waiting. Helmed by master chef Rei Masuda, the 10-seat restaurant serves fresh fish, flown in daily from Tokyo’s Tsukiji market.

    Built in 1907 by the same architect who designed the National Theatre and Hallgrímskirkja church, Apotek is full of historical resonance. The Art Nouveau–style building was once the country’s largest edifice and served as the city’s primary pharmacy from 1930 to 1999, a distinction that gave the hotel its name when it opened in 2014. The property’s 45 rooms blend elements of the past while seamlessly incorporating modern design touches, employing neutral colors, parquet floors, and simple-but-refined furnishings to create a sense of calm; subway-tiled bathrooms with walk-in showers have a bright, clean look. You don’t have to wander far to enjoy one of the busiest watering holes in Reykjavik: Apotek Kitchen + Bar is a hot spot for artisan beverages, where cocktail “pharmacists” craft potions for every ailment. Bonus: Not only does it overlook the Austurvöllur park, it’s just around the corner from the Icelandic Punk Museum.

    Ideally situated on the cusp between major financial, retail, and historic districts is the Westin Chosun Seoul. Built during the Japanese occupation of Korea, the hotel survived through World War II and is the oldest in the country. Originally the Chosun Hotel, it was designed by German architectural firm Goetheland. Constructed in 1914, the European-style building was unique among its distinctly Asian counterparts. The Chosun was known for opulence and imported luxury goods from Europe and North America: a crystal chandelier from Tiffany’s in New York, silver dining utensils from Germany, and linens from Ireland. The hotel was also the first in Korea to build an elevator, host a ballroom dance, and serve ice cream. Most of the original building was demolished in 1970, and the modern hotel was rebuilt in its stead. Fortunately, the view hasn’t changed in a century. The hotel overlooks the picturesque Hwangudan Temple (“Temple of Heaven”).

    Built in 1906 as a private residence and converted in the 1950s, Rosedon Hotel is a low-key alternative to Bermuda’s pricey chain hotels. Despite being located in the bustling heart of Hamilton, the property’s lush tropical gardens have the feel of a country estate where geraniums always seem to be in bloom and balmy breezes waft through elegant, colonial-style rooms. The 40 individually appointed accommodations have enough chintz to please a dowager aunt, plus iPod docking stations and private balconies to satisfy everyone else in the family. Laid-back pleasures await in the public spaces: sample weekly changing finger sandwiches during afternoon tea or dine on fresh-caught specialties at Huckleberry, the on-site restaurant, or simply lie in the sun on one of the white chaises that surround the small pool. Though the resort doesn’t have a beach of its own, a free shuttle is on hand to take you to pink-sand shores nearby.

    Built in 2009, Vdara, a condo-style, all-suites hotel, is a tower of serenity in a neighborhood not known for it. Despite its location, at CityCenter, just off the Las Vegas Strip, Vdara has no casino, no celebrity-chef restaurants, no glittering stage productions, no over-the-top pool and nightclub scene, and—like its neighbor, the Mandarin Oriental Las Vegas (but rare for Las Vegas) no smoking permitted anywhere on the property. What it does have, worked into its minimalist, contemporary design, are spacious rooms, kitchenettes, washers and dryers, and a residence club–like feel that puts many guests in no hurry to leave. At 1,495 suites, the Vdara is too big to be called a boutique hotel, but with a high level of service (pool cabana reservations, anyone?), its size isn’t a liability.

    In 2001, hotelier Ian Schrager tapped French designer Philippe Starck to reconceptualize The Clift Royal Sonesta Hotel’s wildly modern interiors. A complete contrast to the building’s historic facade, the lobby is dark, edgy and filled with a quirky smattering of cool furniture—among them chairs by Ray and Charles Eames, a coffee table by Salvador Dali, and a surreal stool by Renee Marguerite. Upstairs, splashes of lavender brighten more neutral rooms, which feature wheelbarrow-shaped chairs and sleigh beds designed by Starck. Merino wool blankets are primed to battle foggy nights, while MALIN+GOETZ bath products soothe well-traveled skin with natural ingredients and science. Downstairs in the Redwood Room, a see-and-be-seen crowd nurses drinks. The swanky lounge sports sleek backlit shelves, its original redwood paneling, and a bar supposedly crafted from a single redwood tree. Though The Clift sits just up the street from Union Square, it feels far away from the tourists.

    We absolutely loved the energy and atmosphere at Myoga, the 100-seater restaurant at The Vineyard Hotel & Spa. Chef Mike Bassett serves a dining extravaganza of seven courses paired with South Africa’s finest sparkling, white and red wines. You’d think with seven courses to choose from, decisions wouldn’t be so tough. But OMG. Gorgonzola creme brulee or kaitafi prawn? Roast leek or chilled avo and cucumber soup? Springbok medallions or duo of lamb? To top it off, Pearl Oliver, our most excellent sommelier, beautifully described the attributes of each pairing.
