    No hotel in Jamaica blends better with its surroundings than the aptly named Rockhouse, a string of villas clinging to the top of a sea cliff at the western tip of the island. Local stone, timber, and thatch are the building materials, and a harmony of design and setting is the result. The feel is rustic, but not rough (the showers might be outdoors, but the rooms are air-conditioned), and the feeling carries over to the pool, which sits on a rock platform halfway down the cliff face, from where sunbathers can don snorkel and mask and clamber down into a usually calm Caribbean. Even the restaurant hangs over the water, adding emphasis to the promise of dishes being fresh from the sea.

    As does practically every hotel in Jamaica, Rockhouse has its celebrity stories, going back to the early ‘70s when Bob Marley, Bob Dylan, and the Rolling Stones added their names to the guest register. But it wasn’t until 1994, when a group of Australian owners took over, that Rockhouse began to evolve its reputation as one of the most Jamaican of Jamaican hotels. It happened in part because Rockhouse has none of the formality that some of the island’s best-known hotels, with their British colonial roots, still possess. And in part because of its active role in funding local education projects, it’s a valued, and popular, part of the community. That, and the restaurant’s homemade jerk sausage is legendary.

    The Review:
    A member of Historic Hotels of America, the Vinoy Park Hotel opened in 1923—a Mediterranean Revival property overlooking Tampa Bay, designed for America’s elite. It served as a training facility for the Army Air Corps for a brief time in the early 1940s, but reopened as a hotel in 1945 and continued operations until 1974, when it closed in disrepair. Following a $93 million restoration and expansion in 1992, the hotel reopened once again as the Vinoy Renaissance, complete with a new guest tower and an 18-hole golf course designed by Ron Garl.

    Today, the Vinoy also features 360 guest rooms and suites, complete with well-lit workspaces, pillowtop mattresses, and Aveda bath products, as well as two swimming pools (one heated), a spacious tennis complex, a 5,000-square-foot fitness center with complimentary workout classes, and an elegant spa offering massages in poolside cabanas. Thanks to the hotel’s waterfront location and private marina, guests can even charter a boat for the day and explore the bay. Dining options range from sushi on the Veranda Patio to farm-to-table fare at Marchand’s Bar & Grill. The culinary standout, however, is Paul’s Landing, named for a Navy carpenter who once fished, farmed orchards, and cured meats and seafood along the St. Pete waterfront. Don’t miss the citrus-glazed shrimp and grits, or the crispy Brussels sprouts with key lime.

    Overshadowed by its larger and more well-known cousins, Palenque and Chichén-Itzá, Uxmal (“Oosh-mahl”) is the ruins of an ancient Maya city located near present-day Campeche. In its heyday, Uxmal was one of the largest cities of the Yucatan peninsula with a population of about 25,000 Maya. Today, it is a UNESCO World Heritage site. Ancient Maya architecture in this part of Mexico is referred to as Puuc architecture, and Uxmal is a prime example of this style. Though there are some Puuc structures in Chichén-Itzá, Uxmal is unique in all of Mexico. Puuc design is most notable for buildings with a plain lower façade and a richly decorated upper façade. Carvings most commonly found include serpents and latticework. Uxmal is dedicated to the Maya rain god, Chaac, and you can see his image everywhere. On the day we were here, it was blisteringly hot and humid; I could’ve used some rain! When I first laid eyes on the four buildings that make up the complex known as the Nunnery Quadrangle, I thought they were the most elegant Maya ruins I had ever seen. The clean lines of the buildings give them a modernity that is surprising considering Uxmal was built more than 1,000 years ago! The carvings on the upper facades are just spectacular and give the entire structure a very delicate feel. Uxmal is located close to Chichén-Itzá, so if you go to Chichén, consider going a bit further to visit Uxmal. You won’t regret it!

    Not everyone gets to live across the street from the White House. Before the current Italian-Renaissance hotel was constructed in 1927, the prime real estate was occupied by the homes of two little-known American icons: John Hay—personal secretary to Abraham Lincoln, ambassador to the United Kingdom, and Secretary of State under both William McKinley and Theodore Roosevelt—and Henry Adams, Harvard professor and great-grandson of John Adams. Their houses were hubs of D.C. culture for decades at the turn of the last century, and so, when the Hay-Adams opened, it was only logical that the hotel would continue that tradition. Washingtonians play at the sultry bar scene, everyone from Amelia Earhart to the Obamas has stayed in its elegantly Old World rooms overlooking historic Lafayette Square and the White House beyond, and the hotel is known for its discreet and comprehensive, no-questions-asked service. Should guests need a ride to one of the District’s many important meetings, the house Mercedes drops off anywhere downtown, guaranteeing a first impression worthy of a luminary. Though if you insisted on the meeting coming to you, no Beltway insider would mind.

  • Tourists visiting Tanzania usually spend a few days on safari, spotting lions and zebras from their 4x4 vehicles. But clever tourists go on to experience an equally thrilling marine safari off the coast of Pemba Island. Among the island’s several luxury resorts is Fundu Lagoon, a boutique beach hotel founded by British fashion and film designer Ellis Flyte. The property has its own diving facility, called Dive 710. The shallow coral lagoons, warm clear water, and unique locations like the Emerald Reef—an undersea garden of green-hued corals—make this region one of the best dive sites in the world. Divers off Pemba can expect to see fish of every color as well as sea turtles and rays.

    Every detail at this former farm has been carefully executed to highlight the spectacular setting, a nature preserve near Norway’s southwest coast. The hotel’s nine wood cabins hover atop metal rods discreetly drilled into boulders above the Valldøla River—the architects’ solution for securing hard-to-get government permits while leaving the land virtually untouched. Purposefully spare yet stylish, each is furnished with only a bed and a couple of lounge chairs next to a wall of glass that encourage quiet meditation on the beauty of the Valldal valley and snow-capped mountains beyond. The concept continues in the spa, which is perched on a bluff overlooking the river and features a small outdoor hot tub and glass-enclosed steam room. Meals are served at a long communal table in a renovated cow barn; though breakfasts are included (the smoked salmon is to die for), three-course dinners are extra but worth the splurge thanks to locally foraged and sourced ingredients such as reindeer steaks.

    This rustic barn turned tasting room, museum and shop highlights Tasmania‘s apple- and cider-producing heritage, while also serving as the home of Willie Smith’s Organic Cider and Charles Oats Distilling. It offers a delicious food menu, too, featuring the stars of southern Tasmanian produce (Huon cold-smoked salmon, Spring Bay mussels, Summer Hill bread) plus cider pairings. A hive of activity year-round, the Apple Shed really heats up in the Austral winter, when you can sip spiced cider (Willie Smith’s Original plus ginger, cinnamon, cardamom, and pimento) during live music on Fridays as well as the first Sunday of the month. Better yet, come for the Huon Valley Mid Winter Festival: a pagan-inspired weekend of music, merriment, and wassailing—scaring nasties out of the orchard to ensure a bumper autumn crop.

    A UNESCO World Heritage site, the Roman Theater of Orange is the most well-preserved ancient Roman theater in Europe, complete with a magnificent stage wall and an imposing 340-foot facade that Louis XIV once called “the finest wall in my kingdom.” With seating for up to 10,000, the theater continues to host shows to this day, including the Chorégies d’Orange opera festival every summer. Sure, you could skip the entry free and sneak a peek of the theater from the adjacent hill, but this testament to the glory of the Roman Empire really merits an in-person visit, especially with the new 360-degree, virtual-reality headsets. Get a discounted rate one hour before the site closes, or buy a ticket that also includes access to the Art and History Museum of Orange.

    This twin-peaked headland—and the ruins of the 18th-century Fort Shirley garrison—preside over Prince Rupert’s Bay, Dominica’s largest wetlands and a docking area for smaller cruise ships. An 1802 revolt here led to the British Empire abolishing all slave soldiers, making this Dominica’s most important historic destination—and now a worthy World Heritage site. A short climb leads to the restored buildings and a splendid viewpoint, complete with cannons. Longer trails spike out into the dry coastal woodlands, populated by crabs and grass snakes (Liophis juliae, known locally as kouwes).

    During the communist era, milk bars could be found in every Polish city. These were canteen-style restaurants where workers could come and eat decent, inexpensive portions of simple food in a no-nonsense setting. Despite their popularity in the 1970s and 1980s, most of the milk bars died away as the Polish restaurant scene was rapidly modernized; however, the few that survived are now increasingly treasured as an important part of Poland’s cultural heritage. U Stasi is well-known for its friendly service (something that milk bars traditionally lacked) while Bar Mleczny Górnik (Miners’ Bar) is basic to the core in all ways except the food, which is consistently good and outrageously cheap.

    A tribute to the zinfandel grape, which originated in Croatia, this restaurant and bar features a zin-centric wine list but also showcases regional favorites like Plavac and Dingač. Of its 100 wines, it offers about 30 by the glass, encouraging guests to taste their way through Croatia’s wine heritage. Pair your drinks with one of the restaurant’s three-tiered platters, which come loaded with Dalmatian bites, then settle in on the terrace for some live music. If you’re hungry for a full meal, opt instead for the five-course “Taste of Dalmatia” menu, which includes everything from seared Adriatic tuna and homemade oxtail ravioli to calamari stuffed with ricotta and sun-dried tomatoes. Come morning, Zinfandel also serves breakfast, which diners can pair with champagne or fig-flavored travarica, a local herb grappa.

    Beyond tulips, windmills, and weed, Amsterdam’s global image is entwined with water. The Canal Ring (Grachtengordel) is made up of 165 fluid channels developed during the 17th-century Dutch Golden Age. In the ensuing years, the water network has supported maritime trade while evolving into a centerpiece of one of the world’s most recognizable urban landscapes. In 2013, on its 400th birthday, UNESCO added the Grachtengordel to its list of World Heritage sites. Today the Canal Ring is both a historic transportation system and a stunning backdrop for local festivals and celebrations. The canals, notably Prinsengracht, are packed with partygoers on annual festivals like King’s Day (formerly Queen’s Day), in April, as well as Gay Pride and Grachtenfestival in August. Canal cruises offer an excellent introduction to city sights and are a great way to see Amsterdam.

Even if you can’t afford to stay at this spectacular hotel, you can still go see what the decadent expat lifestyle feels like for the day by swimming with dolphins in Dolphin Bay or splashing about in the rivers, slides, and pools of Dubai‘s largest water park: Aquaventure. If that doesn’t float your boat (sorry), there’s Atlantis’s dive center, in which you can go diving in a nearly 3 million–gallon tank. You’ll literally be swimming with the sharks (and stingrays) this time. In Atlantis, don’t be surprised to find yourself feeding the rays next to a celebrity—this is one of the places they stay in Dubai.

    Launched in 1929 with a glamorous opening party attended by royalty, this grande dame has long been the most elegant hotel in the Cambodian capital, hosting everyone from Charlie Chaplin to foreign journalists covering the civil war. Part of the Raffles group since 1997, the meticulously restored building—a mix of Art Deco, French Colonial, and Khmer styles—is replete with artisan-crafted decorative touches. Outside, tropical gardens, courtyards, and striking sculptures surround two swimming pools. Hand-woven carpets, polished wood floors, claw-foot tubs, and silk accents—from the throws to the robes—set the scene in the 175 rooms, suites, and apartments.

    Khmer culture comes alive at fine-dining restaurant Le Royal (serving Royal Khmer cuisine) and the Apsara dinner-dance show (offered weekly from November–March in the gardens), while international dishes are on the menu at the indoor-outdoor Café Monivong and poolside terrace. The retro-chic Elephant Bar—a city institution, like its counterpart at the Raffles in Siem Reap—is a favorite for afternoon tea and evening cocktails; don’t miss the “Femme Fatale,” created in honor of Jackie O’s visit in 1967. Signature massages using local herbs and traditional healing techniques can be enjoyed at the boutique spa.

    The trendy Amsterdam-Noord district is home to the city’s newest outpost of the famed burger joint called the Butcher. Set inside the hip designer hotel Sir Adam, the sprawling, dual-level space is pure fun, with table tennis, pinball, billiards, and live DJs five nights a week. Open 24 hours on Fridays and Saturdays, and until 1 a.m. Sundays through Thursdays, this is where you’ll find chic young locals devouring gourmet burgers and fries and sipping fancy cocktails. The waterfront terrace offers excellent views of the IJ River. It’s a free five-minute ferry ride to the restaurant from Amsterdam’s main train station.
