On a promontory within Bouddi National Park, overlooking a secluded bay and a short walk to an empty rust-red beach, Pretty Beach House lives up to its (classically understated Aussie) name. It’s hard to believe this intimate retreat is only a 90-minute drive from Sydney city center. Its location is spectacular and historic—spot the 2,000-year-old Aboriginal rock drawings on a nature walk nearby.

There are four guest pavilions, each outfitted with wood-burning fireplaces, deep-soaking clawfoot tubs, and sun-drenched decks overlooking Broken Bay and Angophora treetops (three have their own private plunge pools). A family-owned ceramics studio, Cerámica Suro opened in the 1950s to manufacture wares for luxury hotels. When José Noé Suro, the son of the original owner, took over the factory, he invited some of his artist friends to collaborate on projects and began producing dinnerware for some of Mexico’s top restaurants. This is where the cool kids (Uma Thurman, Led Zeppelin, Anthony Bourdain) lay their heads when they stop over in the Big Easy. The look is modern but not excessively so, location-appropriate, but not in an overly Fleur-de-Lys kind of way. Think: creamy hues, contemporary furnishings, and lofty ceilings paired with intricate woodwork, ornate chandeliers, and black-and-white photos of jazz greats. The former bank is also well positioned for late-night revelry, while still being far enough away from the French Quarter action—so you can get a good night’s sleep in one of the just-renovated king-size Apple rooms.

Fine dining at the very highest level is somewhat thin on the ground in Da Nang and Hoi An. Nevertheless, there are stirrings at the top end of the market, with Pierre Gagnaire the biggest name to stamp his presence on the central coast dining scene. Other chefs are also doing a fine job in everything from fusion cuisine to exemplary hotel venues.
