    The 40 year old hotel has just undergone a $85 million renovation and is in tip-top shape. But aside from that, what makes this place so unique are the cool people that work there. It’s a place that values humans, and their ideas, including some of the more silly ones... For example, there’s Yappy hour (one of my favorites!), where you’re invited to bring Fido to the golf course for sun–downers. Drinks for the two-legged patrons, and a specially designed menu of snacks for the furry, four-legged ones, courtesy of Executive Chef Daven Wardynski!. Human food all over the resort was out-of-this-world amazing, too. I say that somewhat regrettably, as I put on 5 lbs in 48 hours. Here’s a chef, sort of a renaissance man, that makes some seriously good food, creates the Sprouting Project, and, if that’s not enough, engineers smokers for all sorts of things that never imagined they’d end up in one. Iceberg lettuce? Yep. Oh, and the really cool presentation pieces for deviled eggs? Chef made them, because he couldn’t find the right plate.     Stepping into the enormous main concourse of this landmarked architectural jewel—with its sweeping granite staircases, hulking columns and 38-meter (125-foot) ceilings painted with night-sky constellations—can be a jaw-dropping experience. What’s even more incredible, though, is the sheer number of people who use it as a commuter hub day in and day out (more than 750,000 train and subway passengers every weekday). Wander around the shops, head down to the basement food court for a bite and to marvel at the crowds hurrying by—and if you get jostled, don’t take it personally.

    Routinely crowned the city’s top seafood restaurant, Blue Water Cafe is also among the continent’s best. After honing his skills at Michelin-starred restaurants in Europe, executive chef Frank Pabst opened this Yaletown classic to marry fine-dining techniques with local, sustainable ingredients. Eventually, the restaurant became a founding member of the Ocean Wise program, which helps consumers make ocean-friendly seafood choices. When visiting, you can belly up to the bar—which boasts more than 200 whiskeys and 1,000 wine labels—or reserve a table in the elegant brick-and-beamed dining room, housed in a heritage warehouse. Come summertime, however, you’ll want to head straight to the patio for sushi and premium sake. Fancy a splurge? Go for the seafood tower, which showcases the bounty of British Columbia.

    We went to the Viking Ship Museum while visiting Copenhagen. It’s about 1/2 hour train ride from the city and another 10 minutes or so on the bus (#203). I expected to spend about a half day here entertaining the kids but we ended up spending much more because it was so engaging. They have actual kid activities that are interesting and fun -- view old viking weapons, learn how to sword fight with wooden shields and sword (a staff member will show you how it’s done), decorate your own shield and sword to take home, learn how to make rope -- and this is just one small part of the whole experience. Inside you can view the remnants of the 5 viking ships that were discovered in the harbor and learn about how they recreated them. You can also watch a film about how a crew sailed a recreated ship from Roskilde to Dublin (while seated in a replica ship). The kids can try on traditional viking costumes. And finally, but not least, you can pay a small fee to take one of the replicated viking boats out on the water! There’s no motor -- just oars to row out and then use the wind to sail back in. It’s beautiful out on the water and to have a view back to town. The kids can participate or just watch all the activity. There was so much to do and a variety of offerings that engaged the whole family. Definitely a must-do with kids on a visit to Copenhagen.

    What’s not to like about Museumplein? In summer, it’s as chill as Vondelpark, with picnickers playing instruments and getting high on the lawn. Add more grass and the field becomes stoners’ heaven as well as a magnet for art aficionados. The latter come for Amsterdam’s trio of world-class museums, all re-opened in 2013 after lengthy renovations—the stately Rijksmuseum, Stedelijk Museum of Modern Art, and the Van Gogh Museum. Tucked south of Leidseplein amidst upscale hotels and cafés, Museumplein is both a culture vulture’s paradise and an open space for those who want to escape the city buzz. In addition to repositories of priceless paintings, it’s home to the Concertgebouw at its southern end.

    Most people recognize Eugene, Oregon as the home of the “Oregon Ducks” because of the sports programs at the University of Oregon. But Eugene is so much more. Take for instance the Inn at the 5th, a luxury boutique hotel built and owned by the Obie Company who developed the 5th Street Public Market next door. The hotel reminds me of the “Little Engine That Could” an endearing 1930’s children’s book teaching the value of hard work and optimism. And the Inn at 5th presents those core values to guests in a stylish and polished package.

    Salar de Uyuni, located in the Daniel Campos province of Bolivia, looks like it belongs on another planet. Stretching for more than 4,050 square miles—a little smaller than the state of Connecticut—it is the world’s largest salt flat, formed when several prehistoric lakes dried up 25,000 to 10,000 years ago, leaving behind hexagonal patterns of salt on the otherwise featureless surface. When nearby lakes overflow, or the area gets rain, a thin layer of water covers the expanse, transforming it into a massive reflective mirror that makes for jaw-dropping, dreamlike photos.


    The natural wonder has served as a valuable source of salt and lithium for Bolivia, and it has long been a hot spot for tourism in South America. There’s even a hotel built out of salt bricks: the Palacio de Sal. If you’re planning a trip to witness the surreal beauty of the Salar de Uyuni salt flat, here’s what you need to know.



    To see Salar de Uyuni’s breathtaking mirror effort, visit during wet season, from December to April—but be aware that when it gets too rainy, it can be hard to get around and you might not be able to access certain areas. May to November is the dry season, which means temperatures are colder, but the ground is harder and you can drive across the land more easily.



    The ideal month to visit is May, when the seasons transition from wet to dry and you’ll have a good chance of seeing the salt flats both dusty and reflective.



    Salar de Uyuni sits near the point where Bolivia, Argentina, and Chile meet, so tourists tend to come from three different starting places.



    The town of Uyuni in Bolivia is the most popular place to embark on tours of the salt flats. The small town is so close to the flats, you can easily take day trips. If you’re traveling from La Paz to Uyuni, you can take a one-hour flight or an eight-hour overnight bus.



    San Pedro de Atacama in Chile is another well-known starting point for tours of the salt flats, but because it’s about 200 miles away, most tours are three days long.



    If you’re coming from Argentina, look into multi-day tours operating out of Tupiza, Bolivia, a good base less than 60 miles over the Argentinian border.



    Tour operators in the region offer shared or private tours. Shared tours are more affordable, but they don’t offer much flexibility when it comes to your schedule. Also, most shared tours are led by Spanish-speaking guides, while private tours can offer English-speaking ones.



    Many tours of the salt flats also go to other attractions in the area, such as the Polques hot springs, the Atacama Desert, and high-altitude lakes like Laguna Colorada. Look into tours originating in San Pedro de Atacama and Tupiza for itineraries that include these destinations.



    Salar de Uyuni is located nearly 12,000 feet above sea level, so you might experience altitude sickness symptoms such as nausea and headaches and should plan accordingly.



    To enter Bolivia, travelers must have a tourist visa, which costs $160 for U.S. citizens, and a yellow fever vaccination certificate if they are traveling from a country with risk of yellow fever.

    Beaver Creek’s credo is “Not exactly roughing it,” and Beano’s Cabin—tucked up on the ski hill itself—is a fun way to do dinner in any season. In the winter, you can arrive at the restaurant courtesy of an open-air sleigh; in summertime, you can take an hour-long horseback ride, a tractor pull, or a 10-minute shuttle van. Once on-site, adults enjoy a five-course menu, and kids under 13 have the option of a simpler three course-meal, featuring Rocky Mountain classics like roasted venison and Colorado lamb. As expected, being up on the ski hill makes for a beautiful view no matter the time of year, although the fall is particularly stunning. (Reservations required.)

    The first of Dubai’s extravagant palm tree–shaped artificial islands once seemed an expensive marketing gimmick; but One&Only The Palm’s prime position on the tip of the outer breakwater—plus thriving starfish and transplanted mature palm trees—make the beach here feel at once natural and private (albeit with dramatic views of the gleaming cityscape lining the mainland coast). The rooms and suites, some with their own private pools, are grouped in blocks of six or nine within sea-facing, Marrakech-meets-Miami–styled mansions with beige and dark-wood interiors and freestanding bathtubs. There is a Guerlain spa on site, and the hotel’s flagship restaurant, Stay, is overseen by Michelin-starred French chef Yannick Alleno.

    Walking through the first set of double doors offered warmth from the cold and snow outside. Walking through the second set, we were smacked in the face by the glorious smells coming from the wood fired ovens and the pizzas baking within.

    Brewhouse brews 5 of their own beers and has a menu ranging from Matzo Ball Soup to 4 different types of Poutine.

    Wait for a table upstairs or order off the full menu at the bar or by the fire in their cozy lounge.
  • My favorite way to start a day in Tianzifang is with a hearty breakfast at Kommune. With a notably large courtyard, it’s a fabulous place to kick off a warm-weathered day and even if you’re a little chilly, the coffee comes in bowl sized mugs that will warm you right up. Open from 7am-1am daily. (They also have a great wraps at lunch and a happy hour from 5pm-7pm.)

    Strictly locals convene at this shoebox-sized café with herringbone floors, a vintage sofa, and seven tiny tables steps from Josefstrasse’s funky boutiques. Coffee geeks will feel right at home—beans are roasted just two doors down, there’s a Dalla Corte espresso machine in the corner, and all sorts of intriguing paraphernalia are for sale (think Japanese siphons and mills). Still, the quirky non-caffeinated beverage selection shouldn’t be missed; there are Traktor smoothies, Thomas Henry sodas and mini bottles of Prosecco.

    A local favorite, Handlebar J Restaurant and Saloon has been owned and operated by the Herndon family since 1975. There’s live music every night of the week—including The Herndon Brothers Band every Wednesday through Saturday—and free country-dancing lessons Wednesdays at 6:30 p.m. Still, one of the coolest things about the Handlebar is the collection of hats that hang from the rafters, placed there by all the cowboys who have moseyed through since the 1960s.

    The Artmore is one of the few independent boutique hotels in Atlanta. The 1924 Spanish Mediterranean style hotel has been renovated and is strategically located to public transportation. The modern décor is present in guest rooms as well as the Studio Bar and Lounge. The plush outdoor lounge would look at home in Miami. In addition to standard one and two bed guestrooms, the Artmore has loft suites for guests staying for extended periods of time.
