    The Château de Modave sits, perched on a rock, 60 metres (200 feet) above the Hoyoux river in the province of Liège, Belgium. While it is open to the public all summer long, my favourite time to visit this pretty castle is during the Christmas season. For the holidays, the chateau invites local florists and decorators to style its period rooms. While some of the concoctions are rather outlandish (think more gold and feathers than you can shake a wand at) some are traditional and festive. You can still explore the castle during the summer months and it’s well worth a visit for the view alone. You can also explore the extensive grounds and gardens.

    This is one of the new hot bars, just a few blocks down from the Jupiter Hotel on SE Grand and Morrision. Checkpoints: skinny hot bartenders in wifebeaters who shake up some inventive cocktails, a DJ, a 110-year old piano, a horseshoe bar and an impressive late night menu (cuban sandwiches, anyone?). I had the Sam Issacs which was mentioned in Portland Monthly as the drink to have but not even on their menu. It has bourbon, mint, blackberries and lime. It’s DELICIOUS. Portland seems to have a thing for libations with ginger beer and I’m loving it. I followed up with 96 Tears, a combination of vodka, lime, ginger and ginger beer. This was light but boozy. The perfect way to start a night or in this case, I’d end it here if you want to dance.

    Who is Sir Albert? This issue might perplex the uninitiated because the hotel and its staff insist that the mysterious aristocrat transformed his private mansion into a collection of sleek and fashionable pieds-à-terre for the international cognoscenti who come to Amsterdam. In reality, the 19th-century red-brick building was once a diamond factory, built to be so sturdy that the trams wouldn’t shake it, and, while that rich history is reflected in some of the angular and clean-lined decor, it’s more fun to imagine that a wealthy eccentric has designed the stylish and spacious rooms and left you in the hands of a staff used to realizing whims before they’re even imagined.

    The rooms themselves are indulgent in a minimalist way, with dashes of both Japanese modernism and midcentury Scandinavian design in the black wooden floors, oversized white soaking tubs, and all the latest technology; clearly, Sir Albert is well traveled. He also must have a taste for authentic Japanese cuisine, considering the house restaurant is inspired by traditional Japanese pubs and attracts discerning foodies and hip young locals alike. He clearly travels in trendy circles, considering his house’s location in lively De Pijp; his appreciation for art, too, is evident in the proximity to the Museumplein.

    Restaurateur Brooks Reitz built his name with this chicken-and-oyster joint that feels old-school despite its carefully crafted ambiance. On a first visit, it’s sinful not to order the perfectly salted, crispy/juicy fried chicken amalgam shellacked with a glaze of Old Bay and cayenne suspended in melted lard. That necessitates a second visit to gorge on the poached char-grilled lobster and sausage, or the Leon’s Fish Fry, a platter of shrimp, oysters and catfish. Leon’s was the first to open way-Upper King, now the restaurant hotbed, and it’s held onto its cool status thanks to its thoughtful buildout in a restored auto body shop, retaining the exposed rafters and a rollup garage door that opens to a patio out front.

    Arriving alone and hungry in the Philippines, I checked into my hotel and immediately asked for a dinner recommendation. After some thought by the staff, I was directed to Zubuchon for some authentic Filipino food; but not just any food: Lechon. And not even just lechon, but what Anthony Bourdain suggested is the “best pig...ever.” This perfectly prepared pig keeps its moisture generously covered and insulated with a layer of pork belly fat. Unfortunately, for some reason, I was not able to purchase a piece of pork less than ½ kilo. So, that is what I ordered. Perhaps I should have given the menu a closer look and ordered from the selection of “Fast Meals” that appear to be better suited for one. Before I ran off with my ½ kilo of pig, the server suggested I also try a Kamias Shake which paired with the pork better than any wine pairing I have had with a meal! The tart, but not quite sour, beverage brought out all the nuances of the lechon. Back at my hotel, I was unable to stop myself from eating all ½ kilo of meat - and heading to bed that evening completely stuffed. Try the lechon in the Philippines. And make sure you have Zubuchon at least once!

    In 1950, two halwais—or confectioners—from the Rajasthani city of Bikaner ventured to big city of Delhi to ply their traditional snacks together. Setting up a stall in the Old Delhi Chadni Chowk market, they crafted sweet and savory treats like rasgollas (cheese dumplings in a sugary syrup) and Bikaner bhujuia (fried flour and lentil crisps), based on family recipes—and soon became so well-known that the people of Delhi bestowed them with the nickname of “Bikanervalas,” in honor of their hometown. Today, the brand has over 50 outposts across India, from the Himalayan foot hills of Dehradun and the Mumbai airport to the upscale Hyderabad neighborhood of Banjara Hills, but that Old Delhi original remains. Come for classics like till chikki (nut brittle squares with sesame seed and brown sugar), rich halwas and milk cakes, fruit-and-nut chocolates, and more, as well as seasonal choices. All of the locations are casual, but some are take-out shops only, while other serve a fast-food menu of chaat, Indian and Continental main dishes (including parathas, veggie burgers, and pizzas), desserts, and shakes.

    Few burger joints have a backstory as quintessentially L.A. as Monty’s Good Burger. Koreatown’s first all-vegan restaurant, the In-N-Out-style hole-in-the-wall serves Impossible burgers on vegan buns with lettuce, tomato, Follow Your Heart “cheese,” and a faux thousand island sauce, plus creamy shakes, loaded tots, and not-so-secret menu picks like Dog Pile loaded fries or tots (check their Instagram for the latest options). Before it was a bright blue exclamation point on the corner of Western and 5th, Monty’s was a Coachella food stall debut with a queue that gave founders Lexie Jiaras (USC class of 2017), Max Angles, and Dennis Gomez an idea. Now, Monty’s—named after Jiaras’ Maltese—is full steam ahead, with locations in Riverside and Echo Park and an Instagram following of over 100k. The food itself is especially tasty—if a bit pricey. But you pay for quality, and the locally sourced, organic ingredients deliver a cruelty-free burger that tastes pretty dang close to the real thing.

    Anyone taking diligent notes on Portland decor is sure to notice similarities in design from location to location beyond a love for taxidermy. Much of that Rose City decorating style emanates from Schoolhouse Electric. Located in a 115-year-old redbrick warehouse and factory building in an industrial part of the city’s West Side, Schoolhouse Electric sells everything from perfect reproductions of 1960s-era IBM clocks to more vintage sconces and analogue clocks than you can shake a stick at. The store’s Ristretto Roasters coffee bar provides a caffeine boost when your energy for curated doorknobs reaches its limit.

    Located among several other hotel behemoths in Nob Hill—such as the neighboring Fairmont—the Ritz Carlton San Francisco makes a strong impression right from the outset. It’s housed within a neoclassical building that was originally designed as the Pacific Coast headquarters of the Metropolitan Life Insurance Company. The entrance’s large columns and ornate stonework befit its 1909 birth year, a style that continues on into the chandelier-and-marble decorated lobby.


    Though historic, the hotel is not stuck in time. A 2015 revamp brought the hotel’s 336 guest rooms and suites squarely into the present day, with effortlessly elegant decor, luxurious Frette linens, and comfortable, lounge-worthy spaces. And despite the culinary temptations that await just beyond the top-hatted valets, be sure to enjoy at least one cocktail at the in-house bar and lounge (our favorite: a martini shaken with a novel, yet effective, turn-of-the-century contraption) or a glass of champagne in the sunny outdoor courtyard.

    Chef Brian Knox slings delicious, juicy pattie burgers on lightly toasted, buttered buns served on year-round outdoor picnic tables. Order one of those much-revered double-pattied famed green chili cheeseburgers served with thinly sliced hand-cut fries and for good measure, add a chocolate shake. It’s guaranteed, you won’t leave hungry.

    Travelers incorrectly believe that the street food sold at stalls around Pub Street in the Old Market quarter is authentic. It’s not—not the fruit shake sellers, nor the Nutella pancakes. There is one exception and that’s the ubiquitous sugar cane juice sellers that you see here as well as at local markets, backstreets, and the riverside every afternoon and evening. Follow your ears. Expect to hear the sound of the long pieces of cane being crunched through the crusher or the sounds of swarms of bees buzzing around. The juice will be served in a plastic cup or plastic bag with a straw. If you struggle with the drink in a plastic bag idea, as many foreigners do, then point to a cup. It’s nearly always served over ice and the ice is nearly always safe, thanks to the French who established ice factories across the country during French colonial rule. However, if you’ve not been in the country long or have a weak stomach, skip the ice, just in case. Sometimes Cambodians will add extra sugar to their drinks. Watch carefully and say no if you see the vendor reaching for some, as it’s sweet enough. It’s a terrific thirst-quencher if you’ve been out in the blazing sun all day – and a fantastic pick-me-up if you’re starting to feel that heat.

    Though the airport and city highlights are all a quick drive away, the Fairmont feels like a true getaway thanks to its setting on Palm Jumeirah island. There, surrounded by views of the Arabian Gulf and Dubai Marina, you’ll find 381 guest rooms and suites, each with warm, contemporary-Arabic décor, marble soaking tubs, Le Labo bath products, Nespresso machines, and furnished balconies. Many of the rooms are designed to be connected to form their own locked-off section, making the hotel ideal for family travel. Also great for groups is the wealth of amenities, starting with the 10 restaurants and lounges featuring everything from authentic Indian, Korean, and Taiwanese fare to Brazilian churrascaria and American burgers and shakes. A Kid’s Club, four pools, beachfront loungers, a health club, and a Willow Stream Spa help keep everyone entertained, as do off-property activities like water sports, speed boat rides, and golf at three nearby clubs.

    Copenhagen is one of the world’s most sophisticated cocktail cities. Bars as far afield as Tokyo and New York keep a close eye on what is shaking—and stirring—here. Ruby, among the more elegant of Copenhagen’s bars, opened in 2007 with a focus on classic cocktails. It can be hard to find, but look for the flag of Georgia to guide you there, as it’s in the same building as that country’s embassy.

    When Domingo Ghirardelli immigrated to the United States in 1849, he planned to strike it rich in the California Gold Rush. Unsuccessful, he opened a store in Stockton selling supplies and some confections to other hopeful miners. Flash forward a few years (and failed businesses), and Ghirardelli opened another confectionary company called Ghirardely & Girard, which would lay the foundation for today’s Ghirardelli Chocolate Company.

    Chocolate was made on San Francisco‘s northern waterfront for many years but eventually moved out of the city. Luckily the buildings still stand, including the historic power plant with clock tower. Two floors were added to a warehouse in 1923, and atop those the famous 15-foot-high letters spelling out “Ghirardelli.” Though the company continues to make chocolate, it is no longer owned by the Ghirardelli family.

    Still, there are plenty of reasons to visit the brick buildings that have been transformed into a thriving marketplace with restaurants—including our favorite, an upscale dim sum restaurant, Palette Tea House—, art galleries, shops, a winetasting room, and of course, a place to taste and buy Ghirardelli chocolate, a true San Francisco original. The square also hosts some popular San Francisco events, including an annual Christmas tree lighting and a chocolate festival held each September.

    There is much mystery surrounding Hop Sing Laundromat, an intimate take on the secret speakeasy. No sign marks the entrance, on Race Street in Philly’s Chinatown, only a locked gate and a doorbell. This craft cocktail lounge is brimming with dark atmosphere, wonderful music, and a menu of mind-bendingly creative libations. My drink of choice is the Hotel Nacional, a tropical tribute to the legendary hotel in Havana. Mixed with 15-year special reserve rum, apricot liqueur, fresh pineapple juice, and more, its sublime deliciousness quickly erases the list of ingredients from memory. Drinks range from $12 to $14, and some of the other creative concoctions include the Hemingway Daiquiri, Philly Colada, General Tso’s Chocolate Shake, Memphis Mystery Train, and Captain Kirk. This is not just a bar, it’s an experience, and worthwhile to sit at the bar and watch the talented bartenders in action. Key details to know in advance: bring ID and cash (no credit cards), and dress presentably (the dress code prohibits flip flops, sandals, sneakers, shorts, hats). Don’t arrive hungry, since no food or snacks are served. And be warned: the house rules do not allow chatting on cell phones or taking pictures. Those who violate the dress code will be turned away at the door and those who don’t follow the rules will be asked to leave. Good to know the rules in advance, because this is an experience that shouldn’t be missed. Open 5 pm to 2 am.
