    With a bakery on every other corner in even the tiniest villages in Belgium, what makes one stand out more than another? The answer is threefold: hand selected organic ingredients; skills built on tradition, passed from generation to generation and, most of all, the passion to create the perfect loaf of bread. All three of these are present at the Boulangerie Legrand in Namur. Baker, Dominique Legrand, has been baking bread since he was 18, but the history of the Legrand Bakery runs much deeper. Six generations ago, in 1831, Dominique’s ancestors founded Boulangerie Legrand and little has changed since those days. Dominique and his wife, Angela, had a mission when they took over the Boulangerie Legrand and moved it to its current location in Namur. Their goal was simply to create the finest breads from the best ingredients they could find. This is the reason people drive all the way from Brussels and even as far as Northern France, just to buy their breads. Some of the grains come from as far away as Egypt and their natural fermentations take anywhere from 18 to 24 hours. These are live breads and we could taste the difference, as the flavours danced on our tongues.   • A four-kilometer seaside promenade is the perfect place for a stroll at Scheveningen, a beach resort in Den Haag’s wealthy northernmost district. In addition to a sandy beach, colorful esplanade, pier and the Scheveningen lighthouse, there’s a Sea Life aquarium, Pathé cinema, the Steigenberger Kurhaus music theater, Scheveningen Museum and a casino. Trendy clubs, restaurants, surf schools and other water sports options line the wide Noorderstrand (North Beach) boulevard. After a three-year metamorphoses completed in 2013, the beach-side stretch offers the best of sun, sand and surf on Holland’s western coastline. Giant sculptures by the sea add a whimsical touch, while numerous bars and eating establishments provide spots to grab a drink or a meal while watching the action in the harbor.

    Also known as the Reunification Palace, this Vietnamese landmark was constructed on the site of an old French-colonial governor’s residence. It has a remarkably varied past; it housed Japanese officials during World War II and was later the home of the president of South Vietnam during the Vietnam War. The imposing, broad, angular building played a seminal role in Vietnamese history: It was here on April 30, 1975, in an episode that came to be known as the Fall of Saigon, that a North Vietnamese army tank smashed through the gates, symbolically ending the Vietnam War. A tour of the palace is a step back decades in time—you’ll encounter grand, formal rooms used as banquet halls, reception rooms, and government offices. You can also navigate through basement tunnels and former bunkers.

    A compound-like hideaway on a leafy street a block from trendy South Congress Avenue, Hotel Saint Cecilia is a retro-glam love letter to the 1960s and ‘70s rock music scene, named for the patron saint of music and poetry. But that doesn’t mean that rock stars smash guitars and throw ragers here (unless they rent out all 14 rooms, of course); unlike at its nearby sister properties, Hotel San José and Austin Motel, only guests and club members are welcome at the lounge, a laid-back affair with a Parisian-café–style patio, chesterfield sofas and a fireplace indoors, and craft cocktails and gourmet small plates. Between the 1888 Victorian main house—originally inhabited by a descendent of Davy Crockett—and verdant grounds that hide private porches and a serene pool, the hotel feels more like an impossibly stylish artists’ retreat than a celebrity getaway.

    Each distinctively decorated room is larger than many an apartment, and seems ripped from the pages of a fashion magazine photoshoot. Every detail has been thought through, from the refreshing Grown Alchemist body care products to the Swedish Hästens mattresses (the hotel is the only one in North America with them in all rooms) to the impressive library of LPs to borrow. The greatest fun here is people watching, from men and women jogging round the perimeter to retired folks doing tai chi or dancing.     One of the most stunning natural sites in Tasmania, the Freycinet Peninsula is most famous for a short but steep hike to the perfect white-and-turquoise horseshoe beach known as Wineglass Bay. It’s hard to believe the name comes from a gruesome whaling history that once dyed the bay the shade of red wine. Travelers on an expedition with Freycinet Adventures can kayak the electric-blue waters of Coles Bay and stay in a private camp on secluded Hazards Beach, where they’ll wake up to views of the rocky shoreline, sheathed in orange lichen, and the zigzagging Hazard Mountains, circled by sea eagles. No trip to the Freycinet Peninsula is complete without freshly shucked oysters from the Freycinet Marine Farm.

    It would be hard to find a more idyllic spot for recharging than Naïa Resort and Spa, Placencia’s newest (and, we’ll say it, most comfortable) resort. Stay in your own studio, one-, two-, or three-bedroom beach house, all of which come equipped with floor-to-ceiling front windows, a kitchenette, a deep tub, and an outdoor shower (trust us: once you’ve had the luxury of an outdoor shower, you’ll never want to go back to the boring, indoor version). Every beach house is just that: a beach house. You’re never more than a short walk from the shores of the Caribbean Sea, and the Naîa’s watersports center can get you off the sand and into the water on a kayak or paddleboard. (While you’re there, ask for Stony, whose a pleasant man to talk to and the guy you’ll need to open a fresh coconut from one of the many palm trees on the property). The resort also staffs expert concierges, who can recommend the best tours, spa treatments, and in-town experiences.

    The spa, as expected, is one of Naïa’s best features. Located a short golf cart drive away from the lobby, Naïa’s spa feels like a secluded oasis. Lillypads sit calmly on the surface of still ponds, and treatment rooms—all housed in small, individual wooden buildings—overlook the vegetation. The masseuses will alleviate you of all pent up stress with expert hands and sweet-smelling lotions exclusive to the resort.

    The town of Placencia is only a short drive away, and the Naïa can shuttle you wherever you need to go. Eat and drink at Barefoot Bar or Tipsy Tuna, walk along the paths near the beach to find handmade treasures to take home, and hang out by the docks and watch the fishing boats come and go. Then go back to your little slice of paradise on the Caribbean shores.

    For decades, Québec was viewed by many Canadians, and even many Québecois, as a conservative, traditional, and rural part of the country that was falling behind other provinces that were looking optimistically toward the future. Those are the years that would come to be known as the Grande Noirceur, or the Great Darkness. In 1959, Maurice Duplessis, known for his staunch Catholicism as well as fierce anti-Communist and anti-union policies, died, and he was followed by Liberal governments that led the so-called Quiet Revolution. Québec would emerge from this period as a decidedly cosmopolitan and socially liberal province. The Expo 1967 and the 1976 Olympic Games in Montréal proved to be key moments in which newly transformed Québec introduced itself to the world, and the buildings from both had huge impacts on the cityscape. The Olympic Park’s stadium, designed by French architect Roger Taillibert, is still used for sporting events as well as concerts. The inclined tower on the site has an observatory with sweeping city views. You can explore on your own, though there are also guided tours that provide an introduction to the architectural and engineering innovations of the Olympic Park’s buildings.

    Diners fill the seats on the nightly at this Avondale eatery, where wife-and-husband team Beverly Kim and Johnny Clark dole out American-meets-Korean cuisine with big-time twists and turns (done with such genius that they’ve already earned themselves a Michelin star and several James Beard nominations). Kick things off with their take on a Whiskey Sour (made with Amaro Sfumato and rooibos tea), then delve into the main event: leek pancakes with squid and smoked trout roe, hanger steak with black garlic and dragon beans, and, of course, the bi bim bop, a rotating house specialty cooked in a stone bowl with flavors like burdock root, Korean soy sauce, and ginseng.

    This refined 28-acre resort set in the rolling hills between downtown Sonoma and downtown Napa makes guests feel relaxed the moment they check in. The vistas are unobstructed from the resort’s pool areas, and many of the property’s 94 stand-alone cottages with private balconies and six private homes offer views of the open space, too. By day, lawn games are usually underway on the grassy expanse called the Town Square, while in the evenings, a pavilion provides an unparalleled backdrop for stargazing. This is a hotel that values fresh air, as evidenced by the walls in the common areas, which retract to bring the outdoors in. There are other reasons to fall in love with Carneros—namely, the on-site restaurants. The casual Boon Fly Café is famous for breakfasts, with spicy bacon Bloody Mary drinks and tiny made-to-order doughnuts. FARM, on the other hand, is more formal, with menu items such as braised oxtail terrine and smoked Sonoma duck breast. While the hotel offers in-room massages, it will also reopen its spa after a full-scale renovation later in 2018.

    Fes is well-known for producing the best pottery in Morocco. The local gray clay is much more hard-wearing than many clays used further south; items made from this material are often fired at volcanic temperatures, and usually capable of withstanding a microwave or dishwasher. The pots are still painted by hand here. If you’re keen to stock up on treasures for your kitchen or dining room table, you have several options. Several stores along Talaa Kbira stock good-quality tableware, including our favorite, the Fondouk Tazi, which also offers some lovely modern designs. Continue into the bowl of the medina to the Henna Souk to find traditional patterns such as the tomato flower, various Berber motifs, and embroidery-inspired designs. Serious buyers hop in a taxi up to Ain Nokbi, the industrial quarter, to see the potters at work. The shops can also organize big shipments for you, but oversee the packaging yourself if you want it to arrive intact.

    Fans of the movie Apocalypse Now probably know it was shot in Baler, some 150 miles northeast of Manila. At the time, locals were already well aware of the area’s killer waves, which caused trouble for the fishermen. But attitudes toward the waves slowly changed, thanks to the film: Residents used the surfboards left behind by the crew to learn to ride them. Surfing culture in the Philippines was born, and the big waves were no longer considered a threat, but rather an opportunity to bring in surfing tourism and events each year from October to February. But Baler has a lot to offer for the non-surfer, too, even if you just sit on the beach and watch the ocean. Couples love the long stretch of sand at Sabang, which is perfect for romantic beach walks, and the sunrise here is a must-see. From a historical perspective, Baler is significant because it was the last stand of Spanish forces in the Philippines; the yearlong siege that began in July 1898 is one of the longest in the country’s recorded history. The undermanned Spanish troops, not knowing the war was over, held onto their fortress in the only stone building in the area, the San Luis Obispo de Tolosa church, for 337 days.

    Australian-Vietnamese celebrity chef Luke Nguyen has put his energy into creating fresh, modern, healthy renditions of Vietnamese street food and traditional family recipes at Moi Moi, his new Hong Kong restaurant. A master at balancing sweet and sour tastes as well as spicy and bitter, Nguyen gets big raves for his food, especially the panfried rice cakes topped with tiger prawns and caramelized pork neck. Other hits include green tea–smoked duck in rice-paper rolls, citrus wild salmon, caramelized Kurobuta pork belly, a pho made with raw Wagyu beef, and slow-braised free-range chicken drumsticks with coconut juice, fish sauce, ginger, and garlic. Moi Moi has an extensive and creative cocktail menu to accompany the feast.
