    Situated closer to Cambodia than Vietnam in the Gulf of Thailand, Phu Quoc has arguably the best beaches in the country. An international airport opened in 2012, raising the island’s profile and bringing in droves of visitors. Despite this, the island retains a laid-back, underdeveloped charm, and its coast is still dotted with small fishing villages with brightly painted boats. The interior of the island includes plenty of forest, while some of the land is earmarked for growing black pepper—pepper from here is famous throughout Vietnam. The best beach lies to the west of the town of Phu Quoc; it’s a 13-mile long straight stretch with golden sands, coconut palms, and clear turquoise waters. The An Thoi Islands, south of Phu Quoc but still part of its marine park, offer excellent snorkeling and diving during the dry season from December through May.
  • Last week we spent 5 days in Copenhagen, Denmark. October is, for me, the best time to visit. It’s colder and there are more chances for rain but the number of tourists is drastically lower. I did not feel suffocated by them at all. Nyhavn harbor was almost empty every day. I love traveling in the shoulder season.

If you’re hungry for a full meal, opt instead for the five-course “Taste of Dalmatia” menu, which includes everything from seared Adriatic tuna and homemade oxtail ravioli to calamari stuffed with ricotta and sun-dried tomatoes. Come morning, Zinfandel also serves breakfast, which diners can pair with champagne or fig-flavored travarica, a local herb grappa.

    You’ll never sleep anywhere closer to Machu Picchu than Belmond Sanctuary Lodge—it’s adjacent to the site entrance, and the only hotel on the mountain. In fact, the lodge is built on the former staging area for American explorer Hiram Bingham, who rediscovered the “Lost City of the Incas” in 1911. You’ll pay a pretty penny but consider the price a once-in-a-lifetime splurge. If you arrive the day before your visit to Macchu Picchu on the bus up from Aguas Calientes, you can be at the gates right when they open at 5 a.m. and get a head start on most of the crowds—and the sunrise. And if you’re coming off a days-long hike on the Inca Trail, the spacious showers and plush robes will be the best you’ve ever experienced.

    There are only 31 rooms here, some with terraces and mountain views but all with exquisitely comfortable beds and marble bathrooms. The light-filled restaurant—only open to guests—serves both international and Peruvian dishes, and the bar is a great place to enjoy a pisco sour after a day of exploring the ruins. If you really want to stay in style, consider arriving by the elegantly restored Belmond Hiram Bingham train from Cuzco—the hotel offers packages.

    In the foothills of the Sangre de Cristo Mountains north of Santa Fe, the village of Chimayó has become famous for its adobe church, “El Santuario,” whose side chapel’s dirt floor is reputed to have healing powers. Every Good Friday, tens of thousands of pilgrims make their way to this “Lourdes of the Southwest.” Others descend upon this valley for more temporal reasons. Just down the road from the Santuario is the century-old adobe home that houses the “Rancho de Chimayó,” a New Mexico institution. Owned by the Jaramillo family, this restaurant is known for its carne adovada--pork that has been stewed to tenderness in red chile. You may or may not believe in the power of the dirt in the Santuario’s floor, but the taste of this valley’s chile will have you convinced that the terroir--the taste of place--deserves its venerable reputation. Get the “combinación picante” so that you can sample a tamal, rolled cheese enchilada, beans and posole along with the carne adovada. And don’t use all of your sopaipilla (the steaming square of puffy frybread) to soak up the chile; save a corner so you can douse it with local honey as a dessert... Chimayó is an easy forty-minute-drive from Santa Fe, on “the high road to Taos.” Across the road from the restaurant is a B&B, run by the same family as well.

    Pella is the place to put on your archaeology hat. There may be no triumphant temple remains or grand Roman roads here, but if you like history, Pella is one of Jordan’s most important archaeological sites. Excavations here reveal a staggering 6,000 years of continuous settlement from the Neolithic age right up to the 14th century. The scattering of ruins strewn across the hilltop include a Canaanite temple, Umayyad residential houses, and a Byzantine church (built over an earlier Roman structure) which are fun to poke around in. The real joy of a visit here, though, is the lonely, windswept setting amid the hills, where you’ll rarely encounter another visitor except maybe a shepherd grazing his sheep.

    Along with South Africa’s winelands, the Mont Rochelle Nature Reserve falls within the Cape Floral Kingdom—a small but incredibly diverse area that’s home to 5,000 plant species that can’t be found anywhere else on earth. In the reserve, walking and hiking trails wind past the myriad flora and fauna, leading up to some of the best vantage points for admiring the beauty of the Franschhoek Valley and beyond. The Breakfast Trail is a relatively flat, 1.2-mile walk that can be completed in under an hour or used as a jumping off point for other, more strenuous hikes, like the Vista Trail and Dutoitskop. If you make it to the top of the Vista Trail on a clear day, you might catch a glimpse of Lion’s Head and Table Mountain.

    Permits for entering the reserve must be purchased online in advance. If you’re planning a full-day excursion, swing by De Warenmarkt Deli in Stellenbosch or the Franschhoek Market (Saturdays only) and pick up some snacks to keep you energized while you hike.

    The Blue Ridge Mountains stand in for the Black Forest at Grand Bohemian Asheville, a 104-room luxury property inspired by old-world Bavarian hunting lodges, complete with stag-antler chandeliers, rich velvet and brocade textiles, and a popular mascot in the lobby—a taxidermied wild boar named Zsa Zsa. In contrast to the more dramatic public spaces, rooms and suites are spacious and light with crisp white bedding and tufted headboards; almost all of the bathrooms have large tubs with shutters that open up to the sleeping area. In addition to the rare original artwork that’s scattered throughout the hotel, there’s a gallery featuring paintings, art glass, woodwork, and sculptures from local, regional, and international artists. George W. Vanderbilt’s Gilded Age castle is across the street, and the hotel is within walking distance of Biltmore Village’s popular restaurants and shops and only two miles from trendy downtown Asheville, making it a convenient jump-off for exploring the Great Smokies.

The aerial view of the patchwork of green farms intersecting at Charing Cross has become an iconic New Zealand image. The plains are traversed by the TranzAlpine train, a scenic rail journey sweeping from Christchurch to Greymouth on the South Island’s west coast, taking in Arthur’s Pass National Park, the glacial Waimakariri River and many of Canterbury’s hill country farms.

    Open seasonally from June 1 through October 1, Moraine Lake Lodge is, as its name suggests, set right on the stunning turquoise waters of the glacier-fed Moraine Lake in Banff National Park. The lake is one of the most photographed locations in Canada, and the view once appeared on the back of Canadian $20 bills. The original lodge sprang from a teahouse that offered overnight camping at the turn of the 20th century, with the first lodge house dating back to the 1920s. A full redevelopment began in the late ‘80s, with new buildings designed by acclaimed Canadian architect Arthur Erickson. The cabins and rooms all feature custom-built log furniture, and many rooms have wood-burning river-rock fireplaces. The rooms’ design reflects the soaring Rocky Mountains outside, with warm earth tones alongside cozy blankets and deep soaker tubs. All rooms are free of TVs and telephones, allowing guests to unplug from modern-day distractions, although there is Wi-Fi. It’s likely that cell phones will not work here either.

    Nicer than your average hostel, cooler than the typical chain hotel—this buzzy hybrid offers hostel-style dorms and more traditional accommodations in a 1930s Art Deco building on Reykjavik’s main drag. Designed by hotelier-owner Klaus Ortlieb (of New York’s Gotham Hotel and London’s Claridge’s), the hostel rooms are simple but smart, featuring metal-frame bunk beds, designer armchairs and sofas, and wood tables. The 18 hotel rooms are much more impressive, with elegant coffee-and-cream color schemes, king-size beds draped in Lissadell linens, and en suite bathrooms with C.O. Bigelow products. Most also come with private balconies that look out over colorful rooftops and mountain landscapes. The old-fashioned lobby and bar area—which is strewn with antique furnishings, exotic wall hangings, and leather sofas and armchairs—is a popular hangout for the city’s bright young things, but if you’re looking for something more low-key there’s an on-site movie theater with a carefully chosen selection of Icelandic films.

    If the Djemaa el Fna is the epicenter of Marrakech, the Rahba Lakdima—otherwise known as the Place des Épices, or Spice Traders Square—is surely the epicenter of the medina itself. Bursting with rambunctious energy and high-voltage color, the market is lined on one side by mysterious herbalists and spice traders selling everything from snakeskins to rose petals to ras el hanout (the famous Moroccan spice blend), and by carpet sellers on the other. Venture to the latter’s lair around 4 p.m. when sellers come down from the mountain villages, and you’ll be treated to the spectacle of them plying their trade with the professionals. And in the middle, heaps of woven baskets and woolen skullcaps are piled high. There’s no better place to sit and watch this daily theater unfold than at the Café des Épices, the first of several that have now opened there, but still our favorite for excellent coffee, fresh salads, sandwiches, and tagines.

Its possible to take a guided tour around the building and admire the architecture, especially the gold room which is made up of millions of mosaics. This is also the building where Nobel Prize winners party with the king of Sweden.

    The woodblock prints from ukiyo-e artist Hokusai first introduced me to Japan’s most iconic volcano. Between 1826 and 1833, Hokusai traveled to many provinces in Japan to see Mount Fuji from different vantage points as represented in his works Great Wave off Kanagawa, Watermill at Onden, and Nihonbashi bridge in Edo in order to produce the famous “36 views of Mount Fuji” series. I have always loved these graphic prints and was determined to get at least one view of this magnetic mountain in my lifetime. During my stay at Hoshinoya Fuji, I was able to get the same view that Hokusai etched almost two centuries ago in print number #35 of the series: Mount Fuji reflected in Lake Kawaguchi.

    Set northeast of Lake Kawaguchi, Hoshino Fuji is the destination for those interested in “glamping” and exploring Japan’s natural side. Barely a year old, the resort rises like concrete tree houses among the red pine forest. Upon check-in you’ll be given a backpack with headlight, water bottle, snacks and portable blanket to urge you on for nearby adventures. Around the resort, camping elements are incorporated with hammocks between the pines, open camp-fires at the Cloud Terrace, and portable in-room coffee kit. Each cabin has a plush bed, minimal furniture and a balcony for panoramic views of the lake and Mount Fuji.

    You can “rough it” with nature outside, but I couldn’t resist pampering myself with the amenities provided by the resort. My perfect morning started with a bath scented with hinoki and flowers before a wholesome breakfast with fresh baked bread on my private balcony. During the day you can go out for a hike or kayak or learn how to smoke food from one of the members of staff. In the evening, learn how to cook over an open fire from the chefs before you enjoy the best dinner with local meat and vegetables. The staff at Hoshinoya Fuji thought of all the details that would create a great camping trip and combined it with the attentiveness of a luxury hotel to create a truly unforgettable experience. A work of art led me here and I can’t wait to return and experience this level of hospitality again.

Legend claims the demigod Maui snared the sun here, freeing it only after it swore to inch more slowly across the sky.

    The 38-mile, two-and-a-half-hour drive up Haleakala climbs from sea level to 10,023 feet through several different ecological zones. One of the most popular ways to experience the volcano remains cycling down from the summit at sunrise. Do it yourself if you’re confident, or join a guided tour (Skyline Eco-Adventures offers one that includes a zip-line ride). Once you’ve mastered the motion—and the 21 switchbacks along the road—effortless downhill freewheeling rewards you with unsurpassed views of the island. If you’d rather savor the vistas from a lofty perch, drive to the top for the sunset or book an overnight at one of the park’s wilderness cabins, accessible only by hiking trail.
