Portland isn’t exactly the kind of city that’s known for being “fancy,” which was why it was so bold for the Starwood Luxury Collection to add a sleek 15th floor to the top of the iconic Meier & Frank department store building downtown—and turn the top nine floors into the swankiest hotel in town. Who would’ve thought that Louis XVI chairs, tufted white leather and teal velvet, crystal chandeliers, and ornate wallpaper would work so well in the city of plaid, beards, and twee bird patterns? In true Field of Dreams fashion, Starwood built it and the travelers came out of the woodwork, hungry for a luxury hotel that embodies the Rose City with everything from environmentally conscious practices and farm-to-table restaurants to an extensive art collection and rooftop honey bee colony. All that’s to say nothing of the private club-like Library, a collaboration with Portland icon Powell’s Books (the world’s largest bookstore) that allows hotel guests to borrow from a curated collection of 3,000 books during their stay. As it turns out, it’s not all that hard to dress Portland to the nines.

To get a feel for the real Dubai, there’s no better way than to book a tour with Frying Pan Adventures. Frying Pan was the first culinary tour outfit in Dubai, and their success is well deserved. A day with Frying Pan will get you out of the glitzy hotel scene and into Dubai’s neighborhoods, which can be hard to imagine when you’re sitting in a bar 25 stories above the city. On Arva’s Middle Eastern food tour you’ll try Syrian, Jordanian, Palestinian, Egyptian, Iranian, and Emirati cuisines. Good Emirati food is difficult to find outside of homes, so the tour is worth doing for that chance alone. You’ll get to sample delectable treats: from succulent Persian kebabs and wonderful Egyptian pastries to baklava dripping with honey and piping hot flat bread straight from the oven. Arva’s walking tours (or air-conditioned vans, in the hotter months), will take you from food trucks to tiny Egyptian kitchens, from Iranian saffron rice to Emirati date-scented desserts. Make sure to book well in advance, especially in the winter months.

When former Israeli commando Guli Dabas opened Guli Hagadol, you might have been forgiven for thinking a name like “Guli the Great” was unbridled narcissism. After a chat with the chef, however, we get it: his life is like an adventure book that swoops from Baghdad to Israel, Lebanon to Yemen. All that, plus rigorous military training, are factors shaping his restaurant, serving favorites from various Middle-Eastern latitudes, all prepared methodically and painstakingly. Just down the street from the charming Carreau du Temple, an open-air market square in the Haut Marais that recently reopened after heavy renovations, sits OFR: a bookshop-cum-gallery that houses an extensive collection of multilingual art and design books and fashion magazines. Here, you’re likely to mingle with a modish crowd, willing to strike up a conversation about anything from travel photography to urban design. Geothermal springs on the ocean floor release curtains of bubbles at one of the world’s most famous and unusual dive sites. Shallow enough for snorkelers and folks new to scuba, this spectacular reef has lavish sea life, from sponges to parrotfish to hawksbill turtles. Book a guided tour of this extinct volcanic crater or pay a small marine reserve entrance fee at the site’s excellent dive shop.

One of the most talked about hotels in Paris, Hotel Costes is located in one of the most fashionable streets, Rue Saint Honore. The hotel is best known for its fine bar and courtyard cafe and for its sexy atmosphere and crowd. If you don’t book a room there, make sure to come at least for a drink.

As the name suggests, this soaring 44-story hotel from the Ritz-Carlton brand is peppered with high-end artwork, mainly by renowned Spanish and Catalan artists such as Eduardo Chillida, Albert Rafols-Casamada, Perico Pastor, and Luis Feito. But there’s much more to the hotel than paintings and sculptures—such as the peaceful terraced gardens, an outdoor swimming pool that overlooks a large Frank Gehry fish sculpture, a luxury spa offering panoramic views, and several excellent restaurants. The hotel overlooks Barcelona and the Mediterranean from its prime location on the Olympic Port. And, perhaps best of all, the beach is right at the doorstep.

The rooms are a delight, too, with dark-wood furnishings and flooring, flat-screen TVs, and sleek, spacious bathrooms that come with separate bathtubs and Asprey toiletries. The hotel’s penthouses are even more swish; guests who book one of these will not only get their own private elevator and fully equipped kitchen (where the hotel’s chefs will happily prepare meals en suite) but can also book a dedicated butler service.

Stylish, secluded Likya Gardens is a hideaway amid the cliffs of Kalkan, a humble old fishing town on Turkey’s Turquoise Coast. Each of the seven suites has its own pool and a patio set on stilts, offering views of a crystal-blue bay and brightly colored fishing boats. Guests can sun on nearby beaches such as Patara or Kaputaş, or enjoy the privacy of the hotel’s beach club, where Moroccan-style cabanas are tricked out with minibars, laptops, and Wi-Fi. This boutique hotel doubles as a contemporary art museum. Founders Laura Lee Brown and Steve Wilson wanted somewhere to store their growing art collection while helping revitalize downtown Louisville, so they opened a hotel with rotating public exhibitions. Housed in a 19th-century tobacco-and-bourbon warehouse, the hotel provides a unique space for modern installations like a giant gold replica of the Statue of David, which sits out front. If you don’t stay here, at least stop by for the exhibits. You really should book a room, however, as the service is excellent, the rooms beautiful, and the amenities everything you could need.

With its fourth U.S. location, the Hoxton brings its signature coolness to the old Los Angeles Railway Building in the center of downtown. The 1922 structure is now home to 174 hotel rooms, three bars and restaurants, and The Apartment—the Hoxton’s signature meeting and event space, complete with stylish conference rooms and a communal kitchen filled with tasty snacks. The F&B outlets come courtesy of the team behind New York’s popular Sunday in Brooklyn, and range from Sibling Rivalry (an all-day lobby spot with seasonal comfort food and its own soft-serve bar) and Pilot (a Mediterranean-inspired rooftop bar and restaurant by the pool) to an as-yet-unnamed bar set to open in early 2020.

Being in a busy Asian capital like Taipei can easily make your stress levels skyrocket, leaving you in need of a serene haven. I soaked off the last bit of my soreness in the spa’s tranquil CHANGE room, equipped with a sauna, stream room, and a range of hot tubs. Next time I over-indulge at the hotel brunch buffet downstairs, I’ll be heading up to AWAY for that body-slimming bandage treatment. The non-profit center hosts concerts, book releases, plays, seminars, and poetry readings. Lamakaan also presents film screenings and exhibitions, including the Queer Art Fest and a monthly flea market held by the Tree Huggers Club. “The ultimate chick shop” is what concept boutique MagMaLou refers to itself as. Indeed, the shop, located in fashionable area Frogner, offers clothes (both new and vintage), shoes, bags and accessories, as well as a separate hair and beauty lounge, where you can book yourself in for a “star treatment.” Run by makeup artist Marthe Kvenli Valeberg, who has won prizes for her work, MagMaLou opened its doors in 2011 and is still going strong. The focus is presenting customers with a trendy but welcoming image, and everyone is welcome!

While it’s located mere minutes from Tel Aviv’s trademark beaches, the Brown TLV Urban Hotel is decidedly city-centric. Not coincidentally, it’s also in the center of town, surrounded by an array of distinctive neighborhoods like the UNESCO World Heritage-designated “White City,” the old Yemenite area of Kerem HaTeimanim, and the seemingly endless street market that is Nachalat Binyamin. Beyond being a strategically positioned home base, however, the hotel makes for a great escape. Once you’ve explored the city on a free loaner bike, you can retreat to the rooftop hot tub, the indoor-outdoor Garden Bar, the den-like living room, or—if you’ve booked one of the Zen-inducing Relax Rooms—your private balcony, ideally after an en suite spa treatment.
