    The second location of the Sydell Group’s New York flagship, NoMad Los Angeles embraces its past as the Bank of Italy—imposing columns and all. In the lobby of the landmarked building, much of the original Neoclassical style, such as the Doric columns, coffered ceiling, and marble floors, was preserved, complemented by the addition of floral textiles in rich jewel tones. Even the original vault, which once housed 12,000 safety deposit boxes, and its 50-ton door were kept intact. The color palette across the 241 lavish rooms draws from the exquisitely maintained gold-and-blue Italianate lobby ceiling, with custom furniture, original artwork from design studio be-poles, and freestanding bathtubs in most rooms adding to the luxurious feel. Details like nightly turndown service, marble bathrooms, and custom linens by Bellino mean a five-star stay is all but guaranteed.

    With a bakery on every other corner in even the tiniest villages in Belgium, what makes one stand out more than another? The answer is threefold: hand selected organic ingredients; skills built on tradition, passed from generation to generation and, most of all, the passion to create the perfect loaf of bread. All three of these are present at the Boulangerie Legrand in Namur. Baker, Dominique Legrand, has been baking bread since he was 18, but the history of the Legrand Bakery runs much deeper. Six generations ago, in 1831, Dominique’s ancestors founded Boulangerie Legrand and little has changed since those days. Dominique and his wife, Angela, had a mission when they took over the Boulangerie Legrand and moved it to its current location in Namur. Their goal was simply to create the finest breads from the best ingredients they could find. This is the reason people drive all the way from Brussels and even as far as Northern France, just to buy their breads. Some of the grains come from as far away as Egypt and their natural fermentations take anywhere from 18 to 24 hours. These are live breads and we could taste the difference, as the flavours danced on our tongues. From deceptively simple baguettes to sweet brioches to rich loaves made of chestnut spelt, it was impossible to choose a favourite.     You’ll want to block off at least three hours of your day for a meal at n/naka, Los Angeles’s temple to the elaborate, multi-course traditional Japanese feast known as kaiseki. Chef-owner Niki Nakayama—one of the world’s few female kaiseki masters and a James Beard semifinalist—has created an intimate, authentically Japanese space for up to 26 guests to savor one of two 13-course tasting menus. In a serene setting of minimalist, hand-built furniture, the Japanese American chef serves up a parade of vibrantly colored, elaborately plated dishes, each made with hyper-local ingredients. A typical menu begins with a modern take on sashimi and then proceeds through a series of innovative vegetarian, fish, meat, and dessert courses. One stop-you-in-your-tracks favorite: the Shiizakana (which translates to “not bound by tradition, chef’s choice”), in which spaghettini is twirled with abalone, pickled cod roe, and Burgundy truffles. At the end of the meal, chef Nakayama and sous chef Carole Iida-Nakayama emerge from the kitchen to greet each diner. Pro tip: Plan ahead. A two- to three-month waiting list means you need to be flexible with early or late dinner times.
