  • Tourists visiting Tanzania usually spend a few days on safari, spotting lions and zebras from their 4x4 vehicles. But clever tourists go on to experience an equally thrilling marine safari off the coast of Pemba Island. The warm interior features cozy dining nooks, but you should really sit outside, where you can sip your matcha latte while people-watching on Bird Street. Go for breakfast and order the brioche French toast, or stop by for lunch and pair the trout salad with a glass of chenin blanc from the farm.

Their place, too, has become a fixture on best-restaurants lists, and is changing how people understand Mexican food. Taking its name from a weed that not long ago “decent” Mexicans wouldn’t dream of eating, Quintonil seeks to rescue and preserve discarded Mexican ingredients—particularly heirloom vegetable and herbal varieties—as part of the progressive and sustainable eating program it so elegantly advocates. Menus change seasonally, but a recent bill of fare included an avocado tartare with ant eggs and quelite-herb chips; chilacayote squash in mole with basil; and a rich chocolate-and-pinole-flour parfait. A tasting menu of Neronian proportions is also available.

    Few dishes exude more Swiss tradition than raclette. For more than 700 years, locals have been gorging on this smoky, often nutty cheese in mountain chalets across the country. For a deep dive into the dish’s history, head to tiny fromagerie La Tzoumaz, where Yohann Magnin works for four months every summer making the drool-inducing cheese. Visitors can watch the entire process, from swirling and heating the milk to packing the cheese into a mold, then venture into the back room to get a sense for the aging process (don’t forget to grab a sample). Magnin is the only cheesemaker in town and his factory sits opposite Maison de la Forêt (House of the Forest) as you enter the village from the valley.

Both are the sad realities of a dying tradition in France of sourcing provisions from neighborhood artisans. Young affineur Baptiste Yapar doesn’t let the disheartening takeover of corporate food business dull his passion. The firebrand cheese master focuses his energy on running his shops Au Coeur du Marché (at the Marché d’Aligre) and educating the public. At La Cuisine Paris cooking school, he takes a small group through a complete background of cheese (it didn’t begin in France!), methods of production and the various designations and families of cheeses available. A copious tasting of 7-10 different cheeses (with wine) follows the contextual debut and is, as my friend and I agreed by the end, the closest thing approximating cheese heaven on earth. It is a fascinating two-hour experience that will not only inform how you consider the nuances of cheese in the future but will have you excited to seek out your nearest independent cheese shop for more.

    Toronto’s St. Lawrence Market is crammed with 120 vendors, butcher counters, bakeries, ethnic eateries, and seafood shops. But there’s one reason why most people come here: the peameal bacon sandwich, which is dished up at the Carousel Bakery. It’s not really bacon—or at least not the bacon you usually eat—but rather tender, thicker strips of pork, cut from the loin and then rolled in peameal (like cornmeal but made from peas), and served on a kaiser roll with a swipe of mustard. It’s a porklicious treat!

The popular landmark diner has been feeding the community and cultural icons since the area’s “Black Broadway” days, when jazz greats such as Miles Davis enjoyed this comfort food classic. When riots broke out after Martin Luther King’s assassination in 1968, Ben’s remained open and served both police and protesters. While the U Street Corridor has undergone an urban makeover, Ben’s has remained the same, serving its quarter-pound of half-pork/half-beef smoked sausage on a bun with mustard and onions, all smothered in spicy homemade chili sauce. The prestigious James Beard Foundation even took notice, deeming it one of “America’s Classics.” Bring cash and come hungry.

    The proprietress, her team, and the Mushroom Stand have become important staples at the Baltimore Farmers’ Market. With a huge following in Baltimore, she is known to many as the “Mushroom Lady” because she sells the most amazing mushroom dishes. The favorite (well, my favorite really) are the mushroom fritters: oyster mushrooms, beer-battered, fried, served over greens with sheep’s cheese, basil, and their special homemade hot sauce (if you like hot sauce, you should ask for a generous helping). Other equally great dishes include the portobello quinoa and portobello sandwiches. The portobellos are marinated and roasted on what looks like a big smoker. All dishes are served with the cheese and hot sauce. A logistical note: the wait can usually be a bit long, but you’ll make friends with fellow mushroom lady groupies in the process. Do a lap around the expansive market and you’ll run into a long line towards the back (not far from the pit beef stand) where people are waiting for their mushroom dishes. You’ll pay first near the fresh mushrooms and you’ll be given a number. Find a table or a parking block and don’t wait to eat. You’ll guaranteed be asked what amazingness you’re eating or bond with fellow Mushroom Stand patrons over the deliciousness.
