Though the airport and city highlights are all a quick drive away, the Fairmont feels like a true getaway thanks to its setting on Palm Jumeirah island. There, surrounded by views of the Arabian Gulf and Dubai Marina, you’ll find 381 guest rooms and suites, each with warm, contemporary-Arabic décor, marble soaking tubs, Le Labo bath products, Nespresso machines, and furnished balconies. Many of the rooms are designed to be connected to form their own locked-off section, making the hotel ideal for family travel. Also great for groups is the wealth of amenities, starting with the 10 restaurants and lounges featuring everything from authentic Indian, Korean, and Taiwanese fare to Brazilian churrascaria and American burgers and shakes. The Japanese-inspired Nobu Ryokan Malibu, located on the ocean just north of Los Angeles, sets the tone with its smooth teak exterior. An entrance gate leads to a garden where water flows over honey-colored rocks into a pond, and palm trees shade stone paths lined with black Japanese grass. In the 16 guest rooms, there are no exposed nails or screws, just smooth surfaces of teak and Jerusalem limestone and linen. The art on the walls is original—a watercolor of sparrows in muted tones, a panel of delicately carved black lacquer depicting waves and leaves. The furniture is oak, all right angles and brass fittings, and the bedside lamps look like lanterns. The bathrooms feature skylights, rain showers, and deep teak soaking tubs.

Hotel guests get first dibs on reservations at Nobu restaurant, just two doors down. If that seems too far away, you can get Nobu food delivered to your room: think scallop tiradito, salmon sashimi, and smoked duck with cherry and hibiscus. Another highlight of a stay here are the well being experiences, including yoga with partner studio ALO and an affiliation with Malibu Fit Concierge that offers private fitness classes and guided hikes.

Nobu has partnered with Surf Air to transport guests from various cities in California and Texas. Surf Air flies small planes out of regional airports (if you’re coming from the Bay Area, for example, it’s a 90-minute ride). A car in L.A. takes you on the 40 minute ride north on the scenic Pacific Coast Highway.

Give your senses a jolt at Sky Costanera Observatory, on the 61st and 62nd floors of the Costanera Center. A 50-second elevator ride takes you almost 1,000 feet into the sky for a thrilling 360-degree view of the city, population over five million, with the snowcapped Andes as a backdrop. Guides are on hand to point out cityscape highlights. Not for scaredy-cats. Note: In case of rain, return first thing the following day, the best time to visit for the clearest view.

Cruise the Venice lagoon on one of the few remaining bragozzo boats still working this body of water. The vintage double-masted, flat-bottom fishing boat, once a common type of vessel here, dates back to 1946. The captain and owner, Mauro Stoppo, is also an excellent chef, which comes in very handy. Charter a daytrip (the boat comfortably carries 6–10 people) and sail to a lesser visited portion of the lagoon. The pace is slow; the food and wine decadent. If you want to charter a longer trip, you’ll explore more of the lagoon by day, learning its history and ecology, and then sleeping in private villas at night.

The boat heads out into the silver-green water. I haven’t brought the right jacket, so Susanne Magee, the co-owner of Dolphin Watch, brings me a thick, cozy one. We had out into the area where the Shannon River meets the Atlantic, to see some of the 160 bottle-nosed dolphins that live in the Shannon Estuary. Susanne and her husband Geoff named their boat Draiocht (magic) to be able to bring the magic of dolphin spotting to the public. Whenever one of the dolphin’s gray backs are spotted, a cry of happiness rises up from the people in the boat. A dream retreat for horse lovers, the 240-acre estate is 45 minutes from London and has an equestrian center and polo fields. Game of Thrones Keep an eye out for Prince Harry playing a match on the polo grounds. Competitions are held from April through September. Learn from a Pro Coworth Park works with the Guards Polo Academy and Andrew Hine, the former captain of the England Polo Team, to provide lessons. Lesser-known ski fields are often run by clubs and have the benefit of thinner crowds and the opportunity for skiers and boarders to glide and carve where others haven’t. Rainbow Ski Area near Nelson on the South Island is great for boarders and offers lessons from novice to expert. Further south, Porters Ski Area outside Christchurch features such runs as the appropriately named Big Mama and other trails that cater to intermediate and advanced riders. In the North Island, try the Manganui Ski Area on Mount Taranaki for cheap no-frills skiing (meaning no gear rentals on-site). And on the eastern side of Mount Ruapehu, there’s the friendly club-run Tukino ski field, which is often open when the rest of the mountain is shrouded in clouds.

If you happen to be interested in architecture, or even if you are not, the Harry Weese-designed River Cottages located from 357 to 365 North Canal Street in downtown Chicago are something you should see. A native of Illinois, Weese is best known for his modernistic style which also focused on historic preservation. The wonderful River Cottages, a mesmerizing display of glass and steel square and triangular shapes, rests beautifully along the edge of the Chicago river. The ideal vantage point for taking in this architectural masterpiece is being perched on a boat in the river. Find a friend with a boat (challenging), or hop on the any of the numerous architectural boat tours originating from Navy Pier (easy), and make your way to Harry’s cottage.

While boating on Lake Como we happened upon a peaceful corner of the lake. My husband took our daughter to explore, climb and jump off the rocks. It was a wonderful morning of swimming, and cruising in our little rental boat, and then it was onto Varenna for lunch.

If you’re going to take a scenic gondola ride, it might as well be up the side of a mountain, right? Crystal Mountain’s gondola costs a hefty $25 round trip, but it does come with some lovely views and a surprisingly smooth ride. About six people can fit into one, and leashed dogs are welcome in the gondolas. When you alight from your gondola, you’ll be on a high viewing point with plenty of deck chairs for lounging and admiring the 360-degree view. Hungry squirrels shamelessly beg for scraps, and ladybugs flit about in the air. The gondola is extremely popular in summer, so be prepared for a line and a wait for the ride back down.

Probably the most visited attraction in the city, the V&A combines many elements of the greatest commercial waterfront projects around the world. There are plenty of draws for tourists (the Cape Wheel, helicopter rides, boat trips to Robben Island) and locals (450 retail outlets, from H&M to a major supermarket), but it remains a working harbor, with small seagoing vessels sailing between the main harbor and the dry dock that lies adjacent to the excellent Two Oceans Aquarium and Watershed craft and design hall. There’s even a fast-growing residential section, connected by canals that stretch toward the city. The latest addition, however, is the Silo District, which became one of Cape Town’s must-visit attractions soon after opening in late 2017. Here, a number of restaurants and boutiques, anchored by the Zeitz Museum of Contemporary Art Africa, are located amid old grain silos.

Daingerfield Island is a pleasant spot off George Washington Parkway where visitors can picnic and watch boats and wind surfers float down the Potomac. The name is misleading—the facility is not an island, but rather a peninsula covered with park space and a premiere marina that houses small racing sailboats. Sailing classes are available to children and adults sailing during the summer and experienced sailors can rent boats by the hours. Landlubbers may prefer to rent cruiser bicycles. After building an appetite, grab a bite from Indigo Landing Restaurant or the more casual snack bar while admiring the waterfront.

Book a horseback-riding tour along Provo’s white-sand beaches with Provo Ponies, which is owned by the affable Camille Slattery and located on the southeast end of the island. They offer two guided rides Monday through Friday (one in the morning, the other in the afternoon), while Saturdays are reserved for lessons on their properties, and horses get the day off on Sundays. Book well in advance during the busy season (December to May), as this is a highlight of many people’s holidays. Note this place can be hard to reach, so if you don’t have a car rental, choose their transport option from Grace Bay Beach for an extra $10 per person. Also expect to spend about three hours on the horse.

Known as the “Jewel in the Crown” of the Southern Grenadines, Tobago Cays Marine Park comprises five picture-perfect, uninhabited islands surrounded by a clear lagoon. Here, you’ll find sea turtle nesting sites and feeding areas, small systems of mangroves, and the most well-developed coral reef complexes in St. Vincent. Swim with the resident turtles, snorkel around the almost 2.5-mile-long Horseshoe Reef, or simply relax on a magnificent white-sand beach—each island has at least one.
