Like many Hudson Valley inns, Wm Farmer & Sons owes its existence to a young New York couple who decided to quit city life in favor of greener pastures. In this case, it was Kristan and William Kirby Farmer who moved to Hudson and transformed a 19th-century structure into a 13-room inn. Spread across two main buildings, rooms feature a mix of dark grays, browns, autumnal oranges, farmhouse reds, and the occasional plaid pattern on the chairs and sofas. A few annexed suites off to the side also include full kitchens with sleek appliances like ovens and stoves. The on-site restaurant is open Tuesday through Sunday and offers a constantly changing menu of meat and seafood dishes, plus a daily happy hour with seasonal cocktails.

This honky-tonk-inspired bar has a hometown feel and a country vibe, and has great local beers on tap—like Grand Cayman’s classic premium lagers, the CayBrew and Caylight. Don’t miss out on the Thursday night Rock & Roll Bingo: It can get rowdy and is a lot of fun. Lone Star Bar and Grill is well known for its BBQ, including Texas-style ribs as well as barbecue chicken and burgers. When you get the munchies after a few beers it’s a nice break from the gamut of seafood offered at other establishments.

The restaurant at the Sands at Grace Bay Hotel makes blended-just-right Pina Coladas topped with an extra dollop of rum. Sip and keep watch for the resident dolphin JoJo, who has been patrolling the turquoise waters off this picture-perfect crescent of sand for more than a decade – there’s even a bell to ring if you see him, although who knows if it’s the same dolphin. After you get tipsy, order dinner. In addition to conch, the restaurant is known for steak and fresh-caught fish cooked only in olive oil. At lunch, the fish tacos are my favorite dish. There is live music twice a week.

You’ll be hard pressed to find anything other than postcard-perfect scenery in the Exumas, and if you’re ambitious and up early enough, there’s a good chance that you can have Horseshoe Bay in Saddle Cay all to yourself for a few hours. A trip to a private Bahamian island isn’t out of reach for the intrepid traveler, as plenty of outfitters offer affordable tours, overnight adventures, and sightseeing cruises to these gorgeous islands.

Designated a UNESCO World Heritage Site in 1992, Komodo National Park covers vast areas of land and sea between the islands of Sumbawa and Flores. It’s much more than the home of the legendary Komodo lizard (aka the Komodo dragon). Terrestrial denizens include Timor deer, 72 bird species and an endemic rat. And the underwater world is beyond compare, with pristine coral reefs and ocean currents patrolled by manta rays, dugongs, sharks, sea turtles, dolphins and at least 14 whale species.

Come winter, some of Hawaii’s most beautiful barrel waves start peeling around the point, drawing only the most experienced daredevils. Note that fishing here is forbidden and parking can be tricky—visitors often have to park along the cliffs and hike down through a magical, Robinson Crusoe–type forest to the rocky shoreline. When approaching the bay, watch for mile marker 32. Just past it, you’ll find stairs down to Mokuleia Beach.

Two hours from Rio de Janeiro, off the coast of Angra Dos Reis, Ilha Grande makes for a spacious retreat for two or an epic group vacation. The private island’s six-bedroom house comes with kayaks and stand-up paddleboards, plus a staff ready to whip up caipirinhas at all hours of the day.

Board a boat in the old harbor of Porto Antico and spend the day in the Italian sunshine observing the natural habitat of the International Cetacean Sanctuary. In four hours, and with the help of the onboard marine biologist, you are likely to spot families of dolphins, larger whales, and even migrating sea turtles.

Book a horseback-riding tour along Provo’s white-sand beaches with Provo Ponies, which is owned by the affable Camille Slattery and located on the southeast end of the island. They offer two guided rides Monday through Friday (one in the morning, the other in the afternoon), while Saturdays are reserved for lessons on their properties, and horses get the day off on Sundays. Book well in advance during the busy season (December to May), as this is a highlight of many people’s holidays. Note this place can be hard to reach, so if you don’t have a car rental, choose their transport option from Grace Bay Beach for an extra $10 per person. Also expect to spend about three hours on the horse.
