Affectionately nicknamed by locals as the “Castle in the City” for its copper-green, fairytale-like roof, the Fairmont Hotel Vancouver was once a Canadian Pacific Railway hotel—a fact that’s intertwined with the history of the city (and the railroad) itself. Guests can learn some of that story via displays in the vast lobby, where they sit alongside designer outlets like Gucci and Louis Vuitton. The lobby—as well as the Notch8 restaurant and bar, function spaces, Heritage Suites, and 507 guest rooms—recently emerged from a $55 million renovation done in advance of the hotel’s 80th anniversary. A revamp of the Fairmont Gold “hotel within a hotel” concept and lounge will launch in 2019.

The decor in the spacious rooms is sophisticated and classic, with dark woods, polished brass, and plush velvets accenting the crisp, white linens and muted palettes. Some suites even connect, making the Fairmont a solid choice for family travel. Enjoy Canadian dishes, afternoon tea, and bar bites—plus more railway travel nostalgia—in Notch8 (which is named for a train’s top speed), then work it off in the indoor pool or the well-stocked gym, which features Technogym equipment and a Kinesis wall. The Absolute Spa offers signature services using West Coast ingredients.

It’s little wonder why the cerulean infinity pool at Perivolas has graced more than its fair share of magazine covers. Overlooking shimmering Aegean waters to the Santorini caldera beyond, it feels like heaven on earth. But in fact, the luxury hotel had humble beginnings: Onetime fishermens’ residences in the typical yposkafa style—with cave-like rooms excavated from native volcanic stone nearly three centuries ago—the property has been a family-run boutique lodging since 1983. All 20 rooms have a sea view with terraces to take in the Greek sunsets; some suites feature private infinity pools and Jacuzzis, while the Perivolas Suite is the ultimate indulgence, claiming not only a huge indoor hot tub, but also a steam room and swim-out pool that stretches from inside the cave to the terrace. Furnishings are minimal but sumptuous, with occasional pops of fuschia and purple to add contemporary flair and skylights that flood the whitewashed walls with light. If you can peel yourself away, Perivolas is an easy 15-minute walk from Oia. But with its own highly regarded Greek restaurant, that gorgeous pool, and a cliffside spa with sauna, steam room, and outdoor hot tub, is there really any reason to leave?

The Review:
Nicknamed “the Santorini of St. Pete Beach” for its white-and-blue color scheme, the Postcard Inn on the Beach strikes a balance between playful and sophisticated, attracting families and young couples alike. Set right on the beach, the property boasts a large heated pool, fitness center, and beachwear boutique, plus extras like a fire pit, beach cabanas, bicycles, and fun games like ping-pong and beach volleyball. The 196 bright, breezy guestrooms feature local artwork that pays homage to St. Pete’s surfers and sun worshippers of yesteryear, plus lime, teal, and sea foam accents for a funky vibe. Those looking for a little something extra should book one of the cabana options, which come with private patios right by the pool.

In the morning, guests can fuel up with locally roasted Kahwa coffee and freshly baked donuts at on-site cafe, P.S. Grind. Later in the day, head to the Beach Bar & Snack Shack for sandwiches, frozen cocktails, and live music, or Stamps Lobby Bar and Restaurant for blackened mahi tacos, barbecue dry-rubbed burgers, and other classic American dishes.

Avalon Hotel is situated in the very center of town, opposite the covered market, on a site formerly occupied by a vegetable market. When the neighboring house was destroyed in a fire and the location was up for development, Avalon was born. The hotel has a modern, artistic look with Nordic simplicity and bold colors. The 101 rooms are decorated in a style that combines the strict Scandinavian aesthetic with a more artistic coloring. Twenty-four of the rooms have an open bath—integrated with the rest of the room, so you can watch TV while taking a bath—and three of them have their own gym. One of the first things you notice about the hotel is the turquoise pool that looks like it’s going to fall off the roof. That belongs to the top-floor penthouse suite, but you can access the pool and have a swim while overlooking the streets below even without booking the room, since the pool is open for all guests in the afternoon. And the outdoor street-level terrace is a good place for an afternoon drink in the sun or a long summer lunch.

The Review:
Opened in 2018, Hotel Joaquin pairs downtown cool with coastal elegance. The property comes courtesy of Paul Makarechian, who grew up in Orange County and now owns Auric Road, a collection of “petite resorts” that also includes Korakia Pensione in Palm Springs and Sonoma Coast Villa Resort & Spa in Bodega, California. Once a roadside motel, Joaquin now blends elements of St. Bart’s, the Mediterranean, and mid-century SoCal beach culture for an exclusive yet relaxed feel, with curated artwork and vintage finds around every corner. Light floods the guest rooms, some of which have balconies and private patios (book La Vue for the hotel’s only picture window, framing views of the ocean and Catalina Island). Each room also includes a working record player and vinyl library, as well as Anichini linens, Le Labo bath products, and artisanal snacks curated by Farm to People. The bathrooms pull out all the design stops with imported marble, hand-painted tiles, and brass fixtures.

At on-site restaurant Saline, guests can enjoy smoothies and other light fare for breakfast, wholesome salads and sandwiches for lunch, and Mediterranean-inspired share plates for dinner, along with house spritzes and creative cocktails all day long. When not lounging at the pool, take advantage of the hotel’s Adventure Collection, which includes complimentary surfboards, diving gear, bicycles, and more for exploring Laguna Beach. Should you prefer to hang on the beach, hotel staff will even set up your chairs, pack you a picnic, and deliver water sport equipment to Shaw’s Cove, just a two-minute walk from the property’s garden gate.

Once a grand harem, this luxurious riad in the medina’s Andalusian Quarter is as enigmatic as its past. Interiors are peppered with worldly artifacts and contemporary furnishings, but all blend harmoniously with traditional handwoven rugs, bejmat tiles, and ornate lanterns. Seven lavishly chic suites are equally full of character: vintage Moroccan wedding shawls and antique Berber wardrobes offset modern amenities like high-end organic toiletries, walk-in rain showers and sunken stone tubs, and terraces wreathed in rose bushes and lush greenery. No less romantic is the hammam, complete with vaulted ceilings and graceful columns. There are also plenty of charming corners to settle into with a mint tea and homemade pastries, be it in the serene library courtyard, the umbrella-dotted rooftop lounge, or the hotel’s elegant crystal-chandeliered restaurant.

Vesper Bar at The Cosmopolitan is our favorite spot for a serious Old Fashioned—or Elderfashioned, the house’s riff, which gets a dose of St. Germain.

Münchners love to be active, so why not go local and for a swim in Munich‘s most stylish swimming pool, the Müller’sche Volksbad? The baths and showers in the Volksbad date back to a time when having your own bathroom was a rare occurrence, retaining the history but indulging you in luxury. There are also sauna facilities, with the Roman steam bath being the highlight. Relax afterwards in the Volksbad Cafe.

JK Place Firenze is a far cry from Florence’s obsession with all things Renaissance. Set amid the buzz of Piazza di Santa Maria Novella, this onetime private mansion is decked out in black, white, peach, gray, and chrome, with inflections of 1950s movie stars, 1970s pop art, and ornate 19th-century architecture. The reception feels like a library, and the breakfast room is a glassed-over former courtyard with a hefty antique wooden communal table. Free drinks, fresh fruit, and homemade treats (and bubbles at cocktail hour) can be found at all hours in the guests-only lounge area. Impress your well-heeled friends by inviting them to dine on the piazza terrace, presided over by the appropriately black-and-white Basilica di Santa Maria Novella, before moving downstairs to the clubby J.K. Pink Room. Slip upstairs to your individually designed room for a divine night’s sleep, then awake ready to take on one of the world’s most historic cities.

Virgin opened its first U.S. hotel in a 26-story, 1920s art deco tower. Originally a Chicago bank, the building’s high-ceilinged, second-floor hall has been transformed into the Commons Club, a socializing spot divided into a lounge, dining room, and oval-shaped zinc bar with red leather seating and power outlets for tech-addicted travelers. Apartment-like rooms are smartly divided by sliding doors into two sections: a sleeping lounge, and a large dressing and bath area.

About an hour’s drive south of Barcelona, past scruffy beach towns along the Costa Dorada, Le Meridien Ra Resort and Spa stands out from its neighbors on a beautiful length of the Mediterranean. Inside the resort gates, an elegant central building, buffed out for the 21st century, does not fail to impress. Originally built as a tuberculosis hospital for children, the hotel has turned its focus from illness to wellness: A three-story modern addition contains the Explore spa, with treatments ranging from all sorts of massages and facials to ayurvedic experiences and thalasso body masks with iodine-rich algae. After treatment, clients are encouraged to prolong the self-care vibe with a visit to the roof, where an indoor-outdoor complex offers glamorous sun beds on a deck, steam and sauna rooms, as well as a pool with stations for bubble jets of varying intensities as well as shoulder-massaging water spouts and soothing currents. Guest rooms are spacious and cleanly modern with midcentury design touches (an angular sconce beside the bed, a curvy Hans Wegner-inspired chair and stool) and a mild color palette. Generous cabinet space speaks to the resort’s summer season—many repeat guests come for a week or two. (For additional space, families can opt to rent one of the on-site apartments.) The resort’s kitchen, which draws inspiration from Catalan traditions, is inventive and playful, employing some molecular gastronomy techniques without any fussiness. Small dishes—accompanied by tiny pearls filled with local vinegar or topped with foam or served in paper cones—are perfect for summer appetites (and can be augmented by more traditional seafood, fish, and ham dishes). The beach itself is a wide, sandy stretch planted with a few palm trees and several rows of beach loungers and umbrellas. Beach servers ferry food and drink from the airy dining pavilion, and a masseuse offers complimentary chair massages. The Mediterranean here, a vivid blue, contains 10% more iodine than elsewhere—a health benefit espoused both by the religious order who ran the sanitarium and by the resort now. As a brand, Le Meridien supports local arts and culture and this hotel is a bright example of that ethos: among many offerings, it hosts literary festivals, visits to the nearby studio of a ceramic artist, cooking lessons on the nuances of Catalan rice dishes, winery tours, live music in the gardens, and is home to four grand bronze sculptures by Salvador Dali. But for all these options, days can pass lazily, too, with a lunch under the grape arbor, or a round of backgammon on the shady terrace facing the beach, accompanied by a glass of rosé. ¡Salud!

Fifteen minutes south of the Puntacana Resort & Club, Eden Roc at Cap Cana is the most exclusive of the six hotels in the gated Cap Cana Reserve. At this Relais & Châteaux property, guests have their choice of beachfront suites with kitchens; stand-alone suites with private pools, gardens, and verandas; and oceanfront villas that come with butler service. Whichever you pick, you’ll also have access to an oceanfront infinity pool, a 30,000-square-foot spa and wellness center, and a private, Blue Flag–certified beach. There’s even a kids’ club in a lagoon-side treehouse for when adults need some alone time.

When hunger strikes, head to La Palapa for seafood and Caribbean fare, or Blue Grill Bar + Restaurant for Nikkei and robatayaki cuisine. Should you want to venture off-property, know that Cap Cana is home to an 18-hole Jack Nicklaus signature golf course. Bespoke helicopter outings, visits to the Punta Espada equestrian ranch, and days at Scape Park (a natural theme park with attractions like zip-lining and cave expeditions) can also be arranged.

Opened in 2013, The Chedi Andermatt enjoys a unique location in the charming village of Andermatt in the Ursern Valley. Designed by architect Jean-Michel Gathy, the luxurious hotel draws on both Alpine and Asian influences, spanning traditional styles and materials (oakwood paneling, local stone, murals inspired by 17th-century European artist Rubens) as well as contemporary elements like soft leather chairs. Rooms are full of light thanks to panoramic windows (which also afford views of the Swiss Alps, Andermatt Village, and Furkapass, where the James Bond film Goldfinger was set), but also cozy at night with fireplaces. In the plush bathrooms, guests will also find large tubs, heated stone floors, and rain showers. The hotel has all the perks you could dream of, from an indoor lap pool and relaxation lounge with several fireplaces to four dining outlets, The Wine and Cheese Cellar, and a walk-in cigar humidor. This is one of those places that’s almost impossible to leave.

The &Beyond Ngala Safari Lodge is located on the Ngala Private Game Reserve, an unfenced private concession wedged between the Timbavati Private Nature Reserve and Kruger National Park. &Beyond leases the land from World Wildlife Fund South Africa and donates a portion of its profits to the South African National Parks Trust. As a result, the trust has been able to fund special projects and maintain West Coast National Park, located just an hour north of Cape Town.

Conservation efforts aside, &Beyond Nagala Safari Lodge is most known for offering a luxury safari experience. Guests can spot wildlife from the lounge, then be completely surrounded by the bush in their air-conditioned rooms. Have breakfast under the shade of an enormous weeping boer bean tree, while away hours at the pool with a book and your favorite drink, and indulge in a fireside dinner, surrounded by lanterns and candles. During their stay, guests even enjoy a dedicated vehicle and tracker team to guide them on twice-daily drives, bush strolls, and walking safaris. The lodge is about an hour’s drive from Hoedspruit Airport, but Airlink also operates daily direct flights from Johannesburg and Nelspruit to Ngala’s private airstrip.
