With Hotel San Cristóbal, she brings her magic to a transcendent Pueblo Mágico in the Baja Peninsula. Now she’s bringing her magic to a transcendent Pueblo Mágico in the Baja Peninsula. Just outside of Todos Santos proper, on the small fishing beach of Punta Lobos, the whitewashed, cubist property houses 32 serenely chic rooms, complete with crisp Sferra linens and serape-inspired duvets, vibrant ceramic-tiled bathrooms, and windows that overlook sunny Pacific waves (keep your eyes peeled for migrating gray and humpback whales).

    Resist the urge to confine yourself to your Coco-Mat mattress, however. Adventure awaits in the form of surfing off nearby Playa Cerritos, learning to make pottery in an off-site class, or accompanying chef Edgar Palau on a trip to source fresh fish from local anglers. There’s also a beautiful central pool and lounge, a library, a seaside mirador, and a small retail shop on property. When hunger strikes, head to Benno, where biodynamic meals that fuse Mexican and Mediterranean flavors pair perfectly with small-batch mezcals and sustainably harvested regional wines.

    They had me at the yellow building. I love wandering the Dogpatch neighborhood of San Francisco and both Piccino restaurant and separate coffee bar, are lovely places to gather. The coffee bar on 22nd Street serves carefully crafted Sightglass organic coffee drinks. Their baking team aims to impress and I can’t get enough of the mushroom turnovers. Bonus: If you’re looking to make a to-go order from the Piccino restaurant around the corner, the coffee bar is where you’d place and pick up that order (hours have recently been extended until 10pm).

    At Pier 39, more than 20,000 sea creatures from the San Francisco Bay and California coastline await your visit. Walking through the aquarium’s transparent tunnels immerses you in the bay’s diverse aquatic life, as you come eye-to-eye with the native sevengill sharks, watch the hypnotic motion of the jellyfish, and even touch a grand bat ray’s wing, if you dare. Four adorable otters live here, too. The aquarium hosts daily naturalist-led animal feedings, and curators give talks about tide pools, octopi, and climate change, interactive experiments. New virtual-reality experiences allow you up-close “access” to whales and polar bears. Otters, considered watershed ambassadors, are indicators of healthy waterways. Splurge on a behind-the-scenes tour and shark-feeding tour in addition to the regular admission ticket, and you’ll have an unforgettable day at this amazing waterside habitat.

    Sunny as it is, Cabo has never been known for its beaches because of its rough surf. Not so at adults-only ME, however, which sits on the area’s only swimmable stretch of shoreline, in view of the famous El Arco rock formation. While the 162 rooms are the picture of tranquility (deep soaking tubs, private balconies), the hotel itself boasts a party atmosphere—a house DJ spins by the pool, and bottle service is available in the cabanas on the pool terrace. Thankfully, there’s also a spa specializing in traditional Aztec and Mayan-inspired treatments (don’t miss the temazcal cleansing ritual), so you can rejuvenate before returning home.

    Surprisingly, great cocktails and an ocean breeze can be hard to find in San Diego, which makes JRDN at the Tower23 Hotel somewhat of an anomaly. It may be a scene—there are bouncers at the door, and the 70-foot-long wave wall would be more at home in Miami—but the wind-protected patio is practically on the boardwalk, offering great views of Crystal Pier and surfers catching waves. On warm evenings, drinks like the cava-based Raspberry Sparkler and the spicy chili-mango margarita make the experience even sweeter. JRDN’s happy hour (Mondays–Fridays, 4 p.m.–6 p.m.) offers discounted beer, wine and sake and coincides with the sunset for much of the year, making it a prime time to score a seat outside.

    Hotel Bo is a so-called design concept hotel, and its particular concept is the unification of contemporary and traditional Chiapaneco architecture and design. (Chiapaneco means indigenous to the state of Chiapas, where San Cristobal de las Casas is located.) The four elements—wind, water, fire, and earth—are central to the hotel’s aesthetic, with different design details, such as fireplaces and candles, alluding to these elements. Rooms are decorated with some local crafts, and beds are dressed with colorful spreads. The hotel really is in the heart of San Cristobal, within easy walking distance of markets, restaurants, and the city’s main sights, many of which are architectural gems dating back to the colonial era.

    Pier 7 is a secret. I have found myself there many times and never understand why there are rarely any crowds. At sunrise or sunset with your back to the city you can get gorgeous photos of the Bay Bridge and Treasure Island. The beautiful wooden pier, ornamented handrails, and antique-styled lamps makes this spot totally romantic. Turn to face the city and you have Coit Tower, the TransAmerica building and much more. A beautiful spot that the crowds don’t know about. Ssshhh...

    Hol Chan Marine Reserve, located just a few minutes’ boat ride from San Pedro, is the place to go for snorkeling in Northern Belize. This small, protected area (Hol Chan means “little channel” in Mayan) is home to part of Belize’s barrier reef, which is the second largest in the world (after Australia‘s reef), and the largest healthiest. There are many tour operators out of San Pedro that can take you out for a half-day of snorkeling the reef, and you’ll see colorful coral, rainbow fish, and manta rays, among other marine life. Make sure your guide brings you to Shark Alley, where nurse sharks come to feed on the fish scraps boats leave behind. There, you’ll be able to swim mere feet—or even inches, if you dare—from the creatures.

    If you’re in Madrid and in the mood for tapas, you might not know exactly where to go or what to taste. The Mercado San Miguel (metro Sol) takes away all that decision-making by providing you with a taste experience all under one roof. The old, derelict market was renovated just a few years ago and turned into an upmarket culinary emporium of sorts. It has more than 30 food stalls, each selling something different. My favorite is the bellota ham sold at Carrasco, but there is plenty more. You can sample sherries and Rioja wines at the wine bar, or do as Spaniards do and pick away at tapas as you make your way through the market. I highly recommend the croquettes, or croquetas, in one of the outside alleys: they have ham, chicken, shrimp, cheese and a variety of others. The more standard tapas area easy to find, like tortilla, and seafood is beautifully laid out for you to pick and choose. Right in the middle is my top-rated tapa place. I couldn’t find a name for it but it’s the largest counter, shaped like a U, and has everything from potatoes aioli to steamed razor clams, with everything in-between.

    Head to this jetty near the Golden Gate Yacht Club in the Marina district and simply listen. The Wave Organ, a wave-activated sculpture made of granite and marble culled from the demolished Laurel Hill Cemetery, provides an enchanting experience. As waves roll in and crash against 20 pipes that extend out into the water, the sound is amplified, creating a liquid symphony of gurgles, rumbling, whooshing, and swishing. The balance of high- and low-pitched sounds is both entertaining and strangely profound. A bonus: The views of Alcatraz and the Golden Gate Bridge never get old.

    In recent years, one restaurant has set the bar for cool in Cabo San Lucas. Bar Esquina, the Bahia Hotel & Beach House’s on-site bar and grill, features a chic casbah-like design aesthetic, a menu built on Mexican and Mediterranean flavors, and a commitment to organic, locally and responsibly sourced ingredients you taste in every bite. The menu is ever-evolving, but there are standouts you can always expect to find. The tuna tartare is a tiered, artistic creation, featuring tempura and an avocado-yuzu mousse. The Caesar is the signature Bar Esquina salad, here wrapped in a long, flat crouton and served with poached egg and prosciutto. Entrée selections include a generous filet mignon with potatoes au gratin and the short-rib pizza with blue cheese and arugula.
