    Take a hike into the cool confines of an underground cave system on Middle Caicos Island. Conch Bar Caves is the largest nonsubmerged system in the region, featuring a type of cave that is created by the karst process in which rain water slowly erodes subterranean channels through limestone. Exploring the interior will reveal chambers with tidal pools, rock formations, and four species of bats. Some instances of graffiti within the caves are over a century old, left by guano miners during the late 1800s and early 1900s. Visitors must hire a local guide to enter the caves.

    Thanks to its easy-to-reach location on the main highway just fifteen minutes south of Playa del Carmen, this open cenote ranks among the most popular with locals. One half of the clear spring is shallow, with areas for climbing adjacent rocks; other spots are just deep enough for snorkeling. Elsewhere, there are still deeper waters for swimming and cooling off, complete with a sundeck and a small cliff for jumping.

    Architects clearly had fun designing Saruni Samburu, an eco-lodge tucked away in the private Kalama Conservancy in central Kenya. Set on a giant outcropping of volcanic rock, stone serves as furniture and structure in the six spacious villas—jutting out of walls, punctuating the outdoor decking, and transformed into shower stalls with some clever pipework. Creative decor aside, the family-friendly resort enjoys spectacular views over billowing golden rangelands, a scene best appreciated from one of the two infinity pools on site, or with a gin and tonic in hand from the decked patio area. Just be sure to call it an early night: Guests are assigned their own jeeps and guides for daily safari excursions to spot elephants, giraffes, and endangered Grevy’s zebras.
  • As soon as they see it along the Great Rift Valley, hiking enthusiasts want to climb Mount Longonot, a dormant volcano that last erupted sometime in the 1860s. The name Longonot is derived from a Masai word that means “steep ridges"—fitting because the journey to the top is nearly vertical, along deep crevices and crumbly rocks. Summiting usually takes about 1.5 hours; from the top, peer into the forest-filled crater and sit under a shaded gazebo to enjoy a picnic. If you have the energy, it’s also possible to hike the rim of the crater, but be warned: Skirting around takes roughly three hours, not including the journey back to the bottom.

    Watching the river flow by with a margarita in hand is one of the best ways to while away an afternoon in San Antonio, and at Casa Rio, you can do just that. The restaurant’s colorful umbrellas have lined the River Walk since 1946, providing a postcard-perfect backdrop for sampling enchiladas, flautas, fajitas, and, of course, icy-cold margaritas. The oldest restaurant on the riverfront, Casa Rio is beloved for its authentic Tex-Mex cuisine, but its real charm lies in its ambience. Request an outdoor table and let your worries float away with the river. Just be sure to decide between frozen and on the rocks first.

Sure, you could come in for the home blend, the local organic roast, the daily drip, or the French press. You could enjoy the peanut butter bagels or the blueberry Belgian waffles. Or you could even drop by late in the day for some homemade limoncello, a vodka affogato, or a Rock and Rye. But what locals return for again and again are the Steeping Leaf earl grey and the magnolia oolong, both of which embody the phrase “good cuppa.”

Hangzhou is the home of China’s prized Longjing green tea, which you can taste at the China National Tea Museum. The city is also known for its temples and for beautiful West Lake, captured in countless photos and classical Chinese paintings. Lingyin Temple is one of China’s largest Buddhist temples, which dates back to the 4th century (although most of the buildings that visitors see today are contemporary reconstructions of Qing Dynasty structures). In front of the temple is the Feilai Feng grotto, with more than 300 rock reliefs of Buddha, some dating from the 10th century.

    Another hallowed Capitol Hill rock venue, Chop Suey is a short walk up the hill from the Pike/Pine intersection. The performers tend to skew toward local bands, electronic, and drag shows, but one of Seattle’s most unique dance parties is Talcum, featuring the best of Pacific Northwest soul and Motown music (the name refers to the practice of sprinkling talcum powder on the dance floor for better slipping and sliding). Talcum happens every fourth Saturday, and vintage/formal attire is strongly encouraged. Most Chop Suey shows are 21+, and there’s a full bar, but no kitchen; however, you’re allowed to bring your own food inside, oddly enough. Grab a Seattle Dog, slathered with sautéed onions and cream cheese, at the hot dog cart parked out in front. Cash only, if you buy tickets at the door.

    In 1931 Rowena Cade started to build a theatre on the cliffs in Porthcurno, Cornwall. Today there is a remarkable arena on the coast with just the sea and rocks as a backdrop. In summer the audiences are treated to performances from Shakespeare to Gilbert and Sullivan and many other dramas. The experience of watching a play in the open air with the sea crashing on the shore below is quite magical and a must do for anyone visiting Cornwall. When I last visited a pod of dolphins swam across the bay, completely distracting the audience. Take a picnic to eat during the performance as well as a rug and warm clothing. When the sun sets and darkness falls you can see the lighthouses and passing ships, but it does get cold.

    Casa Vicente is an institution in this desert city—Tucson’s outpost for tapas a la española. Just south of the downtown core, a couple of blocks from the neo-Baroque façade of the Cathedral of San Agustín, this restaurant also features live music on weeknights: classical guitar, flamenco, and even tango lessons. This particular evening, we tried chipirones rellenos, a trio of baby calamari skewered and stuffed with green tomatoes and spices. In a town more known for its tacos and burros (a.k.a. ‘burritos’ elsewhere), it’s appropriate, if somewhat uncommon, to find Iberian fare. Tucson was founded in 1775 as an outpost of the Spanish empire, decades before it became Mexican, and then in the mid-19th century, it finally became part of a U.S. territory. (And, by the way, the sangría here rocks.)

    One of the best spots to relax in Miami is Bayfront Park, 32 acres of lush grounds that include the Klipsch Amphitheater and the Tina Hills Pavilion. From the beach you can watch dolphins jump and play while luxury yachts pass through Biscayne Bay, and you’ll also have great views of the cruise ships and marina. Take the renovated baywalk, shaded by oak and palm trees, past the rock garden and waterfall and several benches. Fitness classes are offered in the park during the week.

    My first night at Galley Bay, I decided to take in their signature dining experience at Ismay’s. This is their top-of-the-line restaurant. Menu items include baked escalope of mahi mahi with olive and pine nut crust parsley; roasted cherry tomatoes, chilled caponata, sweet potato wafers, and balsamic reduction; and gratin of shrimp, crimson grapes, fresh dill, and champagne cream. Certainly impressive names, but perhaps the most impressive is the name of the restaurant itself. You see, when the then unnamed restaurant was being built in 2008, employees overwhelmingly suggested it should be named after one of their own: Ms. Ismay Mason. Ismay had been with Galley Bay for 45 years at that time during which she’d never called in sick and was a steadfast member of the team and community at large. Five years later, when Ismay finally retired, the tribute to her contribution toward the exceptional vibe of Galley Bay continued with the formation of The Ismay’s Foundation which provides for further career training and education within the community. Incidentally, I had the grilled beef mignon and sauté of shrimp, fondant potato, lemon, parsley and white wine emulsion.

    When you think of the word pub, chances are you picture something like this place. Housed in the old Cooperage of the Royal Navy Dockyard, this causal bar-slash-restaurant is all about cozy atmosphere; there’s even a fireplace that was originally a forge used to produce iron hoops for barrels. The menu showcases comfort food—fish-and-chips, savory pies, and brisket with Yorkshire puddings—not to mention some local touches like the pepper jam served with red-onion rings. Enjoy a pint or two of ale, pilsner, or porter from the onsite Dockyard Brewing Company (the most established of the breweries on the island). The hoppy offerings change regularly.
