    The Banff Ave Brewing Company uses pure Canadian Rockies glacier water as its beer’s not-so-secret ingredient. The water makes for a perfectly imperfect beer, as it comes chock-full of minerals usually removed before the brewing process. Open since 2010, the Banff Ave Beer Co has six handcrafted beers on tap at the brewpub in downtown Banff, along with a food menu that puts an eccentric twist on traditional pub fare. The brewpub is popular year-round. In the winter, it’s great for après ski or for a nice meal before sampling some of Banff’s bolder nightlife venues.     First thing when we got out from the underground parking was to be hit by the smell and sight of street food, in the harbor area. They only take cash so I could not wait to find an ATM to get some of the delicious looking food. I have never had sea snails so they were the obvious choice for me and boy was I right to make that choice. They are delicious. Large and a bit chewy cooked like a soup with lots of vegetables. A bit salty and spicy, nothing crazy, just enough to give it a good kick, really yummy. I love trying new things and it looked like everybody was going for them too. There are two options of cooked snails, natur - in a clear soup - and in a tomato soup. The ingredients look the same and the spice is in both options. The only thing is, make sure the seagulls keep a safe distance, they are extremely bold and will come close enough to take it from your bowl, yes, from your bowl.

    With a nickname like the “Cave State,” Missouri certainly isn’t short on impressive caverns. Of the more than 6,000 across the state, however, Meramac Caverns is the largest—and stays open year-round for tours. Said to have been a hideout for the outlaw Jesse James in the 1870s, the seven-level, 4.6-mile-long natural wonder was purchased by Lester Dill in 1933 and opened as a tourist attraction in 1935. Today, visitors can take guided tram tours past the cave’s complex mineral formations, stopping at a “wine room” (named for its grape-like botryoids and accessed by a long stairwell). While exploring, keep your eyes peeled for the resident tricolored bats that call Meramac home.

The outside observer can glean that the general purpose is cooking, but seeing them in action is a different story. Fish are brought fresh from the port, laid on the smoking grills, and adorned solely with olive oil and salt. Fresher doesn’t exist. Dine at one of the restaurants lining main street to experience this for yourself.

    When it comes to po’ boys, everyone has his/her favorite spot. Mine has always been Domilise’s--until I went to Parkway Bakery & Tavern on my way back from City Park. Like Domilise’s, it’s off the beaten path, but well worth it. I ordered the roast beef po’ boy and, since it was the special, the fried pickles. I suggest you do the same. I tripled bagged the duo and made my way back to my hotel. There, I unpacked my goods and found my po’ boy still very much intact and my pickles crisp, warm, and tangy.

    Just through the heavy wooden doors of this Sichuan pop-up-turned-brick-and-mortar is the Pour House, an always-busy music venue where early evening soundchecks often fill the dining room with drum and bass noise. Even louder are the explosive flavors on the plate—the kitchen is unrepentant about not toning down the spice on the Sichuan beef and Yu Xiang pork slivers. For the full lip-numbing cocaine-face experience, start with the dry-rubbed Shaoxing chicken wings, which balance sweet, salty, savory, and spice with plenty of crunch. A few noodle bowls are adaptable for the more spice averse, but this is a place for adventurous fire hounds. On Sundays, brunch offers one of Charleston’s only dim sum experiences, including plenty of dumplings, scallion pancakes, and turnip cakes. After a meal, head to the Pour House deck for free daily concerts by local bands, before bigger-name bands take the indoor stage at night.

The art deco-inspired main dining room features oak pillars, camel-colored banquettes, and a jaw-dropping six-tiered brass and crystal chandelier. A meal here often includes a show: Many dishes from caesar salad to Tournedos Rossini are prepared and served tableside from custom-made carts. The star of the menu is the Creekstone Farms Beef which has been dry-aged in a glass-enclosed meat locker for more than 25 days. Dry-aged duck and lamb, vegan tartares, and vegetable side dishes like leeks roasted over coals, or broccoli with salty bagna cauda round out the menu. Executive Chef Jason McCleod earned two Michelin stars working at Ria at the Elysian in Chicago. While Born & Raised is a high-end venue, the service is friendly and laid back with suit-clad servers sporting sneakers.
