When La Soufrière erupted in 1902, lava flowed down to the sea and created a five-mile-long moonscape on the volcano’s east slope. Today, if you visit during a tropical rain shower, you’ll see the riverbed transform almost immediately from a mere trickle to a gushing stream—and, because of its porous lava base, dry up just as quickly.

The rainy or cold weather can make walking down the famous Strøget in Copenhagen, Denmark in the off-season a little tiring. There’s a little bit of magic just off the main walking street in the form of the Royal Cafe. The high pink walls and large windows let in a lot of light, which reflects off the artfully placed mirrors and display glasses. Rest on funky-patterned seats at small or large community tables and order a coffee or a custom smørrebrød known as a “Smushie” to warm up.

Sprawling over 10,000 acres in Lampe, Missouri, Dogwood Canyon Nature Park was established by Johnny Morris—founder of Bass Pro Shops and nearby Big Cedar Lodge—as a place for families to spend time in nature. Elk, bison, Texas longhorn cattle, and whitetail deer roam the property, which is dotted with soaring bluffs and cascading waterfalls that can be explored via Jeep, tram, and Segway tours. There are also paved paths for biking and leisurely strolls, rugged trails for horseback riding and challenging hikes, and spring-fed waterways filled with rainbow trout for catch-and-release fishing. When hunger strikes, head to the on-site Mill & Canyon Grill Restaurant, where you can eat an excellent bison burger while gazing at the blue-green Little Indian Creek and a 120-foot waterfall.

Montauk State Park sits at the head of the Current River, where seven springs converge to form a breathtakingly beautiful area. The park is popular with anglers who come to fish for rainbow trout in the cool waters, but also offers ample opportunity for hiking, biking, and picnicking in shady groves. Visitors can even learn a bit of history during tours of the old gristmill, built in 1896 at the center of what was once a thriving community. For a relaxing day in nature, follow the locals to the river, where they float in canoes with coolers of cold drinks in tow, then spend the night at one of the modern campgrounds, rental cabins, or motel rooms that dot the park grounds.

The wind carried us up and past Cariño to Cape Ortegal, where we looked out over the end of the world (and clung to the lighthouse like scarecrow on a stick in the middle of a Tornado). Experiencing the cape in a relentless storm was something I’ll never forget - there were more than a few people unwilling to step out of their vehicles to brave the wind and rain that day - but it’s this view of little Cariño that I’ll never forget. I certainly won’t forget falling down the hill after taking this photo. A tumble never hurt anyone permanently.

Driving between Globe and Show Low in the White Mountains east of Phoenix, US 60 curves and descends dramatically into the Salt River Canyon. Some call it the ‘mini Grand Canyon.’ The highway snakes down some 2000 feet before climbing back up... Spring brings snowmelt and whitewater rafting...by late summer, the monsoon rains are keeping the river muddy and turbulent...Several parking areas allow you to pull off the two-lane road; breathe in the views, stretch your legs on Apache land.

Every Wednesday and Saturday, a farmers market sets up in Union Square in New York City. On the west side of the square, by 16th Street, is an orchard stand which makes the best apple cider donuts in the entire world. Breezy Hill Orchard is always there with many different types of apples, pears, pies, baked goods and - best of all - apple cider donuts. A bag of three will only cost you a few dollars. Coupled with a cup of hot apple cider, it might just be the most perfect breakfast. Pull up a seat on one of the many benches in the park and gaze up through the towering trees as donut crumbs tumble down your chin.

Here’s a bold claim: the Olympic Sculpture Park might just have something for everyone. Located on the waterfront, not far from Pike Place Market, it features great views of Puget Sound (well, on clear days) and the ferries going back and forth. Stroll the paths and admire the sculptures large and small scattered throughout the park, or sit on the many chairs and benches and admire the view. There’s a nearby bike trail, and the Neukom Vivarium (a giant 60-foot rainforest log ecosystem in a greenhouse) is just steps away. Best of all, it’s free! Get a dose of culture and then head down to the waterfront for some fish ‘n’ chips.

With more than 400 shipwrecks and its fair share of coral reefs, St. Kitts is a favorite of the scuba set. To try your hand at the hobby, consider staying at Bird Rock Beach Hotel, which houses one of the island’s most popular dive operators. Here, guests can charter a boat to nearby Devil’s Cave and swim among barracuda, lobsters, and nurse sharks, then retire to one of 46 tropical-hued rooms overlooking the sea. Less adventurous travelers can visit the on-site dolphin park, sunbathe on the private beach, or simply sip rum punches from the pool’s swim-up bar. Situated on the northern end of Delaware Park, the Buffalo Zoo offers family-friendly fun for warm summer days. Built in 1975, it’s the third-oldest zoo in the country, but the facilities have been updated over the years to provide spacious habitats for the resident animals. The underground sea lion exhibit and Rainforest Falls are favorites, as they allow visitors to get close—but not too close—to the animals. Also be sure to catch a glimpse of the giraffes enjoying the sunshine from their street-side enclosure. To avoid crowds, arrive early in the day—the place can get packed, especially on nice days.

The modern minimalism of Le Méridien Chambers boutique hotel is accented by all things art. Graffiti-covered stairwells and hallways lead to rooms, each with their own original piece of art by the likes of Brits Damien Hirst and Gary Hume. Located in the vibrant Theatre District, entertainment from live music to stand-up comedy is just outside the door. Summer afternoons in New Mexico come with thunderstorms--curtains of rain across the vast semi-arid landscape, bringing out the wildflowers ... About an hour west of Albuquerque, (take State Route 23 south from I-40), you’ll see “Enchanted Mesa,” presiding 430ft/130m over the surrounding valley. According to Acoma legend, this was the site of their original pueblo, which had to be abandoned when a thunderstorm washed away the only way up-and-down the cliffs...The ‘new’ pueblo is a few miles to the south, on a slightly lower sandstone mesa; it’s been continuously inhabited since the 1100’s...

Orlando is known for great Asian eats, and this sweet little Thai spot in Winter Park stands apart for its stylish vibe and rainbow range of iced and hot teas and desserts. KrungThep is the Thai name for Bangkok, but much of the menu skews fusion-style, with items like pesto chicken sandwiches and satay sandwiches and toast-style desserts topped with everything from condensed milk and homemade coconut ice cream to Nutella, matcha, and organic honey. Tea-lovers are in heaven here, with herbal, black, and white loose leaf varieties galore. The black and white decor scheme is both blatantly Instagram-able and cozy and inviting. Copenhagen has a staggering array of museums, concerts halls, and opera houses. The one captured above (while getting rained on during a boat ride in the harbor on our way to see the Little Mermaid statue), is of the Royal Danish Playhouse. Opened in 2008, the playhouse was designed to complement the nearby Copenhagen Opera House, as well as the original 1874 playhouse venue located on Kongens Nytorv. The bluish-green glass-enclosed area affords visitors panoramic views of the harbor, and also has a restaurant and cafe if you want to accompany your view with food or drink. Or considering the weather I was in, it’s a nice pace to simply protect yourself from the elements.

I was a glacier virgin. I had never seen one in person before, much less set foot on one. That all changed though as the helicopter lifted off and took off towards the incredible Franz Josef Glacier on New Zealand’s South Island. Almost as soon as the Glacier Helicopters flight lifted off, Mt. Cook popped into view, a looming presence throughout the area. We skirted over the lush rainforest and before I knew it, we were on top of the glacier. It’s amazing really; the glacier looks exactly like a glacier should look. It was a vast, frozen river leading from the tops of the mountains to the valley below. We landed at the top for a little exploration and impromptu snowball fights before taking off again to zoom past the massive crevices of the ice mountain. The ride back included even more impressive views of the glacier and the flat plains below leading to the Tasman Sea. It really is strange to see the glacier adjacent to the mild valley below. There’s something surreal about it all and that makes it one of the best adventure activities in New Zealand.
