    You’ve heard of farm-to-table, but the Well at Jordan’s Farm takes it to another level: farm-as-table. Culinary Institute of America grad Jason Williams sources most of the ingredients for his daily-changing menu from what’s in season here on Jordan’s Farm, a 122-acre land trust property operated by the third generation of Jordans. Reservations are essential to get a seat at this alfresco restaurant—there are only a few at the kitchen counter as well as a handful of picnic tables and dining gazebos around the grounds. For a small donation, pick fresh flowers for the table. Bring your own alcohol, and leave the credit card behind; this is a cash-only establishment.

    The southern Placencia Peninsula is a laid-back beach destination where you’ll see a little bit of every Belizean cultural group, in addition to a healthy number of expats. The village is where the action is, a main drag lined with Creole restaurants, bistros, fruit stalls, and snack stands. North of the strip, resorts occupy the Seine Bight and Maya Beach areas, ranging in scale from boutique to large, with swimming pools and water toys.     One of the most beloved Vietnamese eateries in Saigon, SH Garden has lovely views of a pretty part of the city, but it has earned its following with dishes that celebrate the flavors of all the country’s regions, from north to south. Situated on the rooftop of an old colonial edifice at the intersection of Nguyen Hue and Le Loi streets, around the corner from the Opera House, it surveys a pretty part of the city with plenty of other colonial buildings nearby. Named for its owners Son and Ha, the restaurant doesn’t compete with the higher-price-point options in the city and instead serves good old mom-style cooking.

One of the great rewards for hanging out in Alaska once the dark and cold settle over the state, the Northern Lights (or if you want to be scientific about it, aurora borealis) serve up a light show that is equal parts science, magic, and art. Your best bet for catching the light show is to head away from city lights. That’s one of many reasons it’s worth making the trip to Denali National Park, open year-round. When the park’s summer crowds disappear, visitors feel as though the massive national park is an intimate personal space.

The restaurant has won multiple awards at the Great American Beer Festival with its classically styled lagers, seasonal suds, and experimental beers, all brewed on-site. Stop by the downtown hotspot and pair a burger with brews like the German-style Marzen and the Fallen from Grace, which takes cues from the Trappist breweries of Belgium. If you’d rather have a cocktail, Smuggler’s also has an extensive “fire water” selection, plus house-made juices, bitters, and teas. Try the Defibrillator, made with cold brew coffee, Italian chocolate liqueur, Irish cream, and Ketel One vodka.

    This cenote’s name, which means “Two Eyes” in Spanish, refers to its two separate pools that lead into a large cavern of incredibly clear water. At more than 40 miles long, Dos Ojos is the largest underwater cave system in the state and among the most popular and adventurous dive spots on the entire Riviera Maya. Snorkelers of all ages are welcome to take in the amazing scenery and gaze at divers as they explore far below. The cenote lies just a few minutes north of Tulum, a little over a mile off the main highway.

    Why I was so surprised to find a food truck in the village of Volcano outside of Volcano National Park, I’m not sure. All I know is that it was one of the many culinary surprises on the Big Island. This truck was packed with all kinds of wonderful things, and almost all of it was healthy too. If you can find it, and I have no way of telling you where they will be parked, ask for the special drink they mix up daily, I think it has ginger it in, but they’ll know what you mean. The company is called Higher Taste Vegetarian Cafe, and this truck was parked outside of the Rainforest Gallery at Niaulani near Volcano Village. That’s the best I can do, but then again, finding the truck is half the fun!

    The great macaron debate may forever wage on, but from the first time I tucked into a small box of Pierre Hermé’s diminutive cookies, perfectly crisp on the outside and melt-in-your-mouth soft on the inside, I knew I’d remain loyal to his interpretation. Perhaps best known for his unique flavors—foie gras and chocolate, lemon and fennel, vanilla and basil, among many others—it’s his Ispahan croissant, with rose almond paste and crushed raspberry flakes, that really keeps me going back.

    It’s no coincidence that walking around Liberty feels as if you’re exploring someone’s grand home; the department store’s founder, Arthur Lasenby Liberty, wanted to create that very feel, and so in 1875 settled on a Tudor-style building that featured a jumble of interconnecting rooms. A wooden staircase at one end connects the six floors, and a paper room sells stationery in the store’s iconic floral Liberty print, fashion and beauty halls, a cafe, and multiple branded treatment rooms. Still, it’s the florist’s shop outside that seems to provide the main draw; as any passing tourist will attest, its colourful array of blooms is highly Instagrammable.

    Fifteen minutes from Avenue of the Giants is the home of Eel River, America’s first certified organic brewery. (Although Eel River moved its main brewing facility to nearby Scotia in 2007, the company continues to make small batches at its Fortuna brewpub.) Eel River’s beers are well-known regionally and have won numerous awards. The brewpub also serves food, much of it crafted from local ingredients; its menu ranges from salads to barbecue to an Oreo truffle. The pub is actually on the site of the historic Clay Brown Redwood lumber mill, and much of the bar was fashioned from reclaimed wood. You can still see parts of the old mill as you sit in the beer garden.

    Located just two miles north of Port Elizabeth, on an 18th-century sugar plantation and working sea salt farm that overlooks Spring Bay, Firefly Bequia has all the sophistication of its sister accommodations on tony Mustique. Scattered along the hillside to maximize ocean views, the four suites and one two-bedroom cottage are outfitted with king-size four-poster beds, indoor-outdoor showers, and rattan ceiling fans that recall the island’s colonial past. Though it’s a five-minute walk to the beach, you’ll spot the remnants of the plantation’s original sugar mill, a croquet lawn and swimming pool, and the hotel’s resident goats along the way. Upon your return, a cocktail in the stone bar, where green bananas hang like chandeliers, is just the thing to ease you into a star-filled night.
