    Inside the historic Glen Helen Homestead, an old cattle station set along the Finke River—possibly the oldest river in the world—is a restaurant dedicated to Albert Namatjira, the late Aboriginal landscape painter who grew up nearby. Namatjira Gallery Restaurant serves such outback fare as crocodile spring rolls, barramundi with apples and potatoes, and pepper steak in a dining room covered in Namatjira’s windswept masterpieces.

    Tropical North Queensland offers some incredible wildlife tours but there are also opportunities to experience local aboriginal culture. Enter Linc Walker, owner of the Kuku Yalanji Cultural Habitat Tours. Linc welcomed us to the wonderful world of Cooya Beach, leading us through the waters and mangroves of this magical place. Australia can make you feel like you’re nowhere else and Cooya Beach is indicative of this. Linc taught us how to throw a spear, hunt for coastal wildlife like crabs (and cooked it for us!) and told us about the ecosystem of the mangrove trees.Note: you’ll need to wear your shorts for this slightly swampy experience!. He then took us to his modest home after the tour where we were treated to relics of his ancestry from the Kuku Yalanji tribe featuring a performance on the didgeridoo and homemade muffins.     Hol Chan Marine Reserve, located just a few minutes’ boat ride from San Pedro, is the place to go for snorkeling in Northern Belize. This small, protected area (Hol Chan means “little channel” in Mayan) is home to part of Belize’s barrier reef, which is the second largest in the world (after Australia‘s reef), and the largest healthiest. There are many tour operators out of San Pedro that can take you out for a half-day of snorkeling the reef, and you’ll see colorful coral, rainbow fish, and manta rays, among other marine life. Make sure your guide brings you to Shark Alley, where nurse sharks come to feed on the fish scraps boats leave behind. There, you’ll be able to swim mere feet—or even inches, if you dare—from the creatures.

    Since opening in 1819, Australia’s first barracks has housed British convicts, female immigrants, destitute elderly women, courtrooms, and government offices until it was finally declared a museum in 1979. During a twice-daily tour, or with the help of an audio guide, visitors get a glimpse of how high-skill prisoners lived, worked, and slept (on hammocks) during the 19th century—often freely working in the city by day but sleeping alongside more than 1,000 thieves, conspirators, bank robbers, pirates, and bushrangers by night. Offered in the original convict bakehouse and store, a house-made pot pie, burger, or cake with a schooner of beer at Bakehouse is a welcome end to the experience. Outside, freedom has never felt so good.

    A longtime favorite among royalty, rock stars, actors, and visiting dignitaries, the Langham hotel completed a $30 million renovation in December 2014. London-based GA Designs was charged with retaining the hotel’s stately character—check out the original fireplace transplanted from the Sydney’s beloved Elizabeth Bay House—while creating a sun-drenched new look dressed in white, amber, and silver. The new design also maximizes the property’s Darling Harbour views, most notably in the opulent lobby, whose Calcutta marble floor and gold-leaf paneling are reminiscent of a high-end spa. What hasn’t changed is the Langham’s superlative customer service. Guests can request a chartered yacht or helicopter to get to their show or meeting, and arrange a private picnic, tennis match, sunset Harbour Bridge climb, or tour of the hotel’s display of Sidney Nolan paintings (Australia’s largest private collection of his work). There’s even a discreet entrance and in-room check-in for guests who want maximum privacy, as well as an unpacking service for travelers eager to feel at home right away.

    Up a dirt road that feels more like someone’s private driveway, past the village cemetery with its handmade crosses framed against a dusty hillside, the Penitente Morada in Abiquiu sits crouched on the earth, a wonderful secret, discreet against one of Georgia O’Keeffe’s signature vistas. A simple bell and three wooden crosses hint to the secret society that gave rise to this chapel, recently restored but dating back to the 1700s. New Mexico‘s depth of history always astounds at these northernmost reaches of the search for Cibola. I like to remember I was hardly trying for a perfect shot when I framed this picture after a two-hour private tour of O’Keeffe’s home; my senses were already on overload. Everything is just clearer and crisper in the high desert light.

    The main draw at this Australian-run spot is the convivial and bohemian atmosphere. Housed in a stunning 1920s colonial villa in a quiet part of the Old Quarter, the cafe has a rustic, warm vibe. While items from the simple menu can be hit or miss at other times of the day, the breakfast offerings are exemplary and the coffee is right on the money.

    The best drive in Northern Ireland, this is a dramatic 120-mile coastal route between the green Glens of Antrim on one side and the spectacular coastline with its cliffs, unusual rock formations such as the giant’s face (pictured, above) and Giant’s Causeway on the other. There are also mysterious ruins from the past, such as Dunluce Castle. The drive starts near Larne, north of Belfast, and goes right the way around the north coast, and can be done in one day or a few days – take your time and stop off at some of the scenic points, towns and villages along the way.

    Australia is world-renowned for scuba diving, but you don’t have to go all the way to the Great Barrier Reef or Ningaloo. Most people don’t know there is plenty of good diving in and around Sydney, too. One of the best sites is Magic Point off the tip of Malabar Headland National Park south of Maroubra. There’s an extensive reef system and large caves that are home to weedy sea dragons, stingrays, and a recovering colony of grey nurse sharks (which by most accounts are harmless to humans). Local outfitters such as Frog Dive Scuba Centres can lead you there.

    The cornerstone of the Kensington Street Precinct, at the heart of the funky Chippendale neighborhood, the Old Clare is the storied pub she used to be and so much more. Tonkin Zulaikha Greer Architects built a glass-and-steel walkway between the former Clare Hotel and the neighboring Carlton United Brewery building, both dating to the early 20th century, to create a 62-room boutique hotel that simultaneously feels historic and edgy. Original wood panels and brick walls blend seamlessly into spotted gum floors and nude-colored walls, exemplifying the creative reuse that pervades the Chippendale suburb, an inner-city district of galleries and cafés situated at the crossroads of Glebe, Redfern, Surry Hills, Chinatown, and the Central Business District. The design echoes other landmark Sydney restorations by Tonkin Zulaikha Greer such as the Paddington Reservoir Gardens and Carriageworks, an arts complex located just down the road. The Old Clare also brings two more standout restaurants to Chippendale, including the first Australian venture by Michelin-starred British chef Jason Atherton. Whether guests soak in the egg-shaped tub in their loft room, take a sunrise yoga class on the rooftop pool deck, or sip a “Ginny Hendricks,” a watermelon-dill concoction with bitters and Hendrick’s gin, at the midcentury-modern bar, they’ll have a story to tell. The Old Clare is a tale that keeps getting better.

    The Huon Valley, southwest of Hobart, has long been known for apple farming. More recently, cider has revived the industry, helping Tasmania live up to its moniker “the Apple Isle” once again. Four cideries—Willie Smith’s, Pagan, Frank’s, and Red Sails—are all based around the Huon Valley. Willie Smith’s Apple Shed is a tasting room–cum-museum that highlights Tasmania’s apple-farming and cider-producing heritage. A distillery specializing in apple brandy was added in 2016. But cider and spirits are not the only reason to take a spin through the valley. It’s also home to the Tahune AirWalk and Franklin’s Wooden Boat Centre as well as Cygneture and the Cat’s Tongue chocolatiers; farm-to-table restaurants such as Lotus Eaters Cafe; the Woodbridge Smokehouse; and the Cygnet Market, held on the first and third Sunday.

    Like many of the hippest bars in town, Mary’s is intentionally hard to find. As you make your way down King Street, hang a right on Mary Street and look for a bar on the left with no sign and a rocker crowd. Inside the two-story tavern, a chalkboard menu lists enough craft beers (including the house-brewed Slayer Juice), wines, spirits, and cocktails to require a second chalkboard for fried chicken and burgers (known as the best in town). Get your birds by the half, whole, or “Larry style”—two whole birds deep fried with mash and gravy—and your burger with “trashcan bacon.” Mary’s also does a bacon Bloody Mary with American cheese melted over the rim of the glass that’s more than worth a try.
